These chocolate chip banana oatmeal muffins are super easy to make. Filled with oats, whole wheat flour, and bananas - they're healthy enough for breakfast!

1 1/2 cups whole wheat flour
1 cup rolled oats
1/2 cup brown sugar, lightly packed
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/4 cup canola oil
1/4 cup milk
3 bananas, mashed
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
  • In another bowl whisk together the eggs, oil, milk, and mashed bananas.
  • Pour the wet ingredients into the dry and stir until just combined. Fold in the chocolate chips.
  • Divide the batter between the muffin cups, they will be quite full.
  • Bake for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

3 cups rolled oats or old fashioned oats
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking soda
2 large eggs
1/4 cup honey
1 cup bananas (mashed)
2 teaspoons vanilla extract
1 cup milk
1/4 cup coconut oil, melted
1 cup semi sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Grease a muffin pan with non stick cooking spray. In a large bowl combine the oats, sugar, cinnamon, salt and baking soda.
  • In a medium bowl combine eggs, honey, mashed bananas, vanilla, milk and coconut oil.
  • Add the wet ingredients into the dry ingredients. Stir until combined, do not overmix.
  • Fold in the chocolate chips.
  • Scoop batter evenly into prepared muffin tin. Bake for 30 minutes or until set and the tops are slightly brown.
  • Allow the muffins to cool in the pan for 10 minutes then remove to cool completely.

3 large frozen bananas (thawed and mashed)
1/2 cup brown sugar
2 tablespoons oil
1/3 cup applesauce
1 egg, beaten
1 1/2 cups whole wheat flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup oats
1/3 cup ground flax seed meal (optional)
1/2 cup chocolate chips (or other add-ons)

Steps:

  • Preheat oven to 350°.
  • Add the oil, brown sugar, apple sauce and egg to the mashed bananas and stir thoroughly.
  • In a second bowl sift the flour, baking soda and powder, and salt together. Fold these ingredients into the wet mix.
  • To the batter, add the oats, flax, and chocolate chips and fold evenly into the batter.
  • Put desired amount of batter into lined muffin tins and bake for 20-25 minutes.

1 ½ cups all-purpose flour
¾ cups old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
2 large eggs
½ cup sugar
½ cup brown sugar
½ cup canola oil, (or another flavorless oil, or even coconut oil)
2 teaspoons vanilla extract
1 cup mashed bananas, (about 2 large or 3 medium)
1 cup chocolate chips, ((milk, dark, a mix of both, whatever you like!))

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • Whisk together the flour, oats, baking soda, powder, salt and cinnamon in a bowl.
  • In a large bowl, whisk together the eggs and sugars until combined. Whisk in the oil and vanilla extract until combined. Whisk in the mashed bananas.
  • Stir in the dry ingredients with a spoon until just combined - do not overmix. Stir in the chocolate chips.
  • Fill the muffin tins about ¾ of the way full. Bake the muffins for 18 to 20 minutes, or until set in the center. Let cool before serving!

1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ cup semi-sweet chocolate chips
2 large eggs
½ cup unsweetened applesauce
¼ cup skim milk
1 cup mashed banana

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper liners.
  • Stir whole wheat flour, rolled oats, sugar, baking powder, baking soda, and chocolate chips together in a bowl. Make a well in the center. Whisk eggs in a separate bowl until frothy; mix applesauce, skim milk, and banana into eggs. Pour moist ingredients into well made in dry ingredients; stir just to moisten. Batter will be lumpy.
