1 lb breakfast sausage
1/2 medium yellow onion, chopped
6 baby bella or button mushrooms, chopped
1/2 bell pepper, chopped
8 oz cream cheese
1 crescent roll sheet or crescent roll can
2 cups colby jack or cheddar cheese, shredded
Optional garnish - 3 green onions, chopped

Steps:

  • Preheat oven according to crescent sheet or crescent roll directions.
  • Brown sausage and veggies in pan on medium heat.
  • Spread and press crescent sheet into 13×9 pan. DO NOT grease or spray pan!
  • Bake crescent sheet for 10 minutes.
  • Once sausage mixture is finished cooking, add in the cream cheese.
  • Allow cream cheese to melt, and mix thoroughly.
  • Once crescent sheet is finished baking, add sausage mixture to crescent sheet.
  • Top sausage casserole with shredded cheese.
  • Place casserole back in oven, and bake for another 5-7 minutes. Or until cheese is melted, and crust is golden.
  • Allow the sausage breakfast casserole to rest for about 5 minutes.
  • Cut into 12 slices, and garnish with green onions.

  • Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.
  • Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. Top with slivered almonds. Cover tightly with aluminum foil and bake for 60 minutes. Let rest for 10 minutes before serving.

I LOVE this quick, easy recipe for breakfast or dinner. All package pancake mixes are a little different, I use a Buttermilk store brand that you just add water to. I use it for 18 or more pancakes (about two cups) and then add the water it indicates on the package. This recipe comes from my sister (she served it to hungry kids when they had sleepovers). If you like less sausage and want more of the "cake", just use 8 ounces of the sausage links. I've also added 1/2 cup of syrup to the batter for a little extra sweetness and flavor. This cake will not always become golden brown, just a little around the edges.

2 cups dry buttermilk pancake mix (prepared as directed on package for approximately 18+ pancakes)
16 ounces brown n serve sausage links (thawed and cut into pieces)
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees and spray a 9x13 glass dish very generously.
  • Cut thawed links into bite sized pieces (about 4 pieces per link). You can substitute other sausages, the Brown and Serve are just easy.
  • Prepare pancake mix as directed on your favorite brand. Just make sure you make it for about 18 pancakes or a little more. This is where I add the 1/2 cup of syrup option (see my "recipe description").
  • Mix prepared pancake batter and sausage pieces.
  • Pour into prepared pan and bake at 450 degrees for about 12 minutes or until toothpick inserted in center comes out clean.
  • Spread tablespoon of butter on top of baked casserole to melt down.
  • Cut into serving pieces and serve with syrup.

2 tablespoons butter
1 lb sage sausage, browned, broken into chunks and drained of grease (Weber brand was my Mom's favorite, but I prefer Jimmy Dean's)
1 (16 ounce) jar spaghetti sauce (Classico was the only brand Mom would use for this.)
1 (6 ounce) jar sliced button mushrooms, drained
1 (16 ounce) package shredded mozzarella cheese
1/2 cup romano cheese, grated (Kraft)

Steps:

  • In a 2 quart, ungreased casserole dish, layer twice: 1/2 cooked macaroni, 1/2 cooked sausage, then 1/2 sauce, 1/2 mushrooms, 1/2 shredded cheese. Do the same layering again.
  • Sprinkle Romano cheese on top.
  • Bake in a preheated 350 degree oven for 30-40 minutes, until cheese is slightly browned and casserole is bubbly.

1 onion, chopped
500 g sausages (I like the country style beef sausages)
410 g diced tomatoes, canned with juice
2 teaspoons paprika
2 tablespoons barbecue sauce
1/4 cup water
2 tablespoons flour (if needed, to thicken)

Steps:

  • Heat oil in a frypan and cook the onion. Add the onion to a saucepan or oven proof casserole dish.
  • Brown sausages in frypan. Slice the sausages and add to onion.
  • Add the can of tomatoes, paprika, barbeque sauce and water.
  • Simmer over medium heat until sausages are cooked through - about 5 - 10 minutes. If sauce does not thicken by itself, add the flour.
  • Alternatively after step 3 place into casserole dish and bake in oven until hot.
  • Serve with mashed potatoes, pasta or crusty bread.

4 large potatoes
4 carrots
8 good-quality sausages from outdoor-reared pigs
2 tbsp olive oil
1 onion, chopped
1 garlic clove, crushed
1 tsp paprika
400g can chopped tomatoes

Steps:

  • Turn the oven to 180°C/fan160°C/gas 4. Peel the potatoes and carefully cut them in half, then into quarters. Peel the carrots and cut each carrot into about 4 or 5 even pieces.
  • Prick the sausages all over with a fork - this helps the fat to run out of the sausages, so that they don't split open as they cook. Heat the olive oil in a heavy-based casserole and fry the sausages, turning often, until lightly golden all over - this should take about 10 minutes. Remove the sausages from the pan and put them on a plate.
  • Add the chopped onion to the casserole (there will still be some oil in the pan from the sausages) and continue to cook over a low heat for 5-10 minutes, until the onion is slightly soft. Add the garlic and paprika and cook for another minute.
  • Add the chopped potatoes and carrots and stir everything around in the casserole so that the vegetables are coated with the oil.
  • Add the tomatoes and stock (to measure the stock, you can use the empty tomato can - filled up, it will hold 400ml of stock) and the bay leaves. Bring to a simmer (so it's just bubbling gently). Return the sausages to the casserole.

ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan

8 good quality pork sausages
1 tablespoon olive oil
2 onions, sliced thinly
Two cloves garlic, crushed
1 red pepper, diced
250g mushrooms, sliced
2 tablespoons tomato puree
1 teaspoon dried mixed herbs
1 teaspoon smoked paprika
sea salt and freshly ground black pepper
200ml beef Stock (I use a stock pot)
One 400g can chopped tomatoes

Steps:

  • Preheat the oven to 180C/160Fan/Gas mark 4.
  • Drizzle a little of the oil in a large frying pan and gently fry the sausages. When they are brown, remove from the heat and set aside. Add the remaining oil and gently fry the onion on a low-medium heat for five to eight minutes or until softened. Add the crushed garlic and cook for a further two minutes.
  • Add the diced pepper and sliced mushrooms, tomato puree, mixed herbs and smoked paprika. Season with salt and pepper and cook for about 5 minutes or until the vegetables have softened. Pour in the beef sock and chopped tomatoes, turn up the heat slightly and allow to simmer for a couple of minutes. Transfer everything to a deep casserole dish and cook for 50-60 minutes, until bubbling and piping hot.
  • Check the casserole for seasoning and serve with buttery mash or baked potatoes.

3 tbsp vegetable, olive or rapeseed oil
8 sausages
500g bag frozen mixed Mediterranean veg
2 x 400g cartons tomatoes with garlic and onions
2 x 400g cans butter beans , drained
2 thick slices good, crusty bread

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat 2 tbsp oil in a flameproof casserole dish with a lid. Add the sausages and brown until golden all over, then transfer to a plate.
  • Put the frozen veg in the pan and cook for a few mins to thaw. Add the tomatoes, then half-fill one of the cans with water and pour into the dish. Add the beans, season well and bring the mixture to a simmer. Place the sausages on top of the veg, cover with a lid and cook in the oven for 40 mins.
  • Heat 1 tbsp oil in a frying pan. Tear the bread into small chunks or coarsley grate it, making chunky crumbs. Fry in the hot oil until crisp. Serve the casserole in bowls and top with the breadcrumbs.

A comforting and hearty one-pot sausage casserole recipe with spicy chorizo, smoked paprika and plenty of vegetables, perfect for a filling family meal

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

1tbsp olive oil
8 thick sausages
1 onion, peeled and cut into slices
2 garlic cloves, peeled and finely chopped
1 leek, washed and cut into thick slices
2 medium potatoes, peeled and cut into chunks (approx 450g)
2tsp smoked paprika
2 x 400g tins plum tomatoes
Splash of red wine
200ml beef stock
350g cannellini beans (drained weight)
Salt and pepper
Small handful of flat-leaf parsley or chives, chopped
Crusty bread, to serve

Steps:

  • Heat the oil in a large sauté pan and fry the sausages for 8-10 mins, turning frequently until browned all over. Remove from the pan, cut in half and set aside.
  • Drain any excess oil from the pan then add the onion and garlic and sauté for a few minutes to soften. Add in the leeks, potato and smoked paprika and cook for 4-5 mins.
  • Pour in the tomatoes, red wine and stock and bring to the boil. Reduce the heat and return the sausage pieces to the pan, along with the cannellini beans. Cover with a lid and cook for 20-25 mins over a low heat, stirring occasionally. Remove the lid and continue to cook for a further 5-10 mins.
  • Season to taste, and scatter with parsley or chives. Serve with crusty bread.

  • Heat oil and butter in a large pan and fry the sausages for 7 minutes on a low heat until browned, remove
  • Add onions to the pan and fry until soft. Cut sausages to required size (I usually cut into 4) and return to pan with onions.
  • Add tomatoes and stock and bring gently to the boil before adding the vegetables.
  • Cover and simmer for 30 minutes or until the vegetables are cooked

Cooking Spray
8 large eggs
3/4 cup half and half
1 tsp garlic powder
1/2 tsp salt
1 tsp black pepper
1 cup cheddar cheese, shredded
1 lb frozen tater tots

Steps:

  • Preheat your oven to 350 ℉ and allow it to heat while you prep the casserole.Cook the ground sausage over medium heat. Brown it thoroughly while you break it into small pieces.
  • Remove the sausage from the heat, and drain any grease. Set it aside while you make the rest of the dish.Spray a 9' x 13' casserole dish generously with cooking oil spray.Next, sprinkle the crumbled sausage evenly over the bottom of the dish.In a mixing bow, you'll want to whisk the eggs, and add the half and half, garlic powder, salt and pepper. Mix everything until it is well combined.
  • Then, pour the mixture over the top of the sausage that you placed in the casserole pan. Top with shredded cheese.Add a layer of frozen tater tots to the top of the baking pan. Make sure the layer is even, however do not submerge the tater tots. Bake the dish for approx. 50 minutes or until you can insert a knife in the middle and have it come out clean. Then remove your casserole from your oven. Let it cool for 5 minutes before serving to your family or guests.

340g jar tomato pasta sauce

  • Heat the oil in a large frying pan and fry the potatoes and sausages for 5 mins.
  • Add the onion and pepper and cook for a further 5 mins, turning the sausages occasionally until browned.

This brown rice lengthens the cooking time but does not significantly alter the taste (i.e, my children have never noticed the difference). Also, we prefer to use bulk sausage.
