BASIL LEMONADE
In my quest to find recipes to take advantage of the bumper crop of basil I have right now, I came across this one found in the May 2003 issue of Sunset magazine. This is very refreshing! It's especially fun if you have lots of different varieties of basil available to you.

Steps:
- In a 1 1/2 to 2 Qt glass bowl, combine basil leaves and sugar.
- With a wooden spoon, crush leaves with sugar until thoroughly bruised;
- add water and lemon juice,
- Stir until sugar is dissolved, about 2 minutes;
- Taste and add more sugar if desired.
- Pour through a strainer into ice-filled glasses.
- Garnish with sprigs of fresh basil.
- *Note:The type of basil you use will contribute to the'personality' of this drink.
- Dark purple basil tints the lemonade pink and has a milder flavor than green varieties.
- Lemon basil adds a lemon-drop essence.
- Cinnamon and Thai basils make this more spicy.

FROZEN BASIL LEMONADE
Steps:
- To make the simple syrup, place the sugar and 1 cup water in a small saucepan set over medium heat. Bring to a simmer and cook until the sugar dissolves, 2 to 3 minutes, then cool.
- Pour the simple syrup in the pitcher of a blender with the ice, lemon juice and basil, and puree until smooth. Serve cold.
BASIL LEMONADE

- Combine one 12-ounce can thawed frozen pink lemonade concentrate, 1/2 cup water and 12 torn basil leaves in a medium skillet; cook over medium-high heat until syrupy, about 10 minutes. Stir in 8 more torn basil leaves; let cool, then strain. Add seltzer.
- For each drink, combine 2 to 4 tablespoons flavored syrup with 1 cup cold seltzer in an ice-filled glass.
RHUBERRY-BASIL PINK LEMONADE
Steps:
- For the rhubarb simple syrup: Add the rhubarb and 2 cups water to a small pot and bring to a boil. Reduce to a simmer and add the sugar. Stir until dissolved, then take off the heat. Let steep until cooled, about 2 hours. Stain into a resealable container and refrigerate until chilled.
- For the strawberry-basil puree: Combine the strawberries, basil and 1/4 cup of the chilled rhubarb simple syrup in a blender and puree until smooth. Transfer to a pitcher.
- For the lemonade: Add the lemon juice and 1 1/4 cups of the chilled rhubarb simple syrup to the pitcher with the strawberry-basil puree and give it a good stir. Add the seltzer and stir lightly. Pour into 4 glasses filled with ice, garnish each with a lemon wedge and basil leaf and serve.
FROSTY BASIL LEMONADE
Steps:
- 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
- 2. Select Variable 1.
- 3. Turn machine on and slowly increase speed to Variable 10, then to High.
- 4. Blend for 1 minute or until desired consistency is reached.

Steps:
- In a small saucepan, combine 2 cups water, the basil leaves, and sugar; bring to a gentle boil over medium heat, stirring until sugar is dissolved.
- Decrease heat to medium-low, cover, and simmer for 5 minutes.
- Remove from heat and let cool for 30 minutes.
- Strain through a fine-mesh strainer into a 1 ½ quart container.
- Add in the lemon juice, remaining 1½ cups water, and lime juice; stir until blended.
- Chill until very cold; serve over ice; garnish with basil sprig.

BASIL LEMONADE
Simple Basil Lemonade. The herb gives the lemonade a pleasant aftertaste without being overwhelming.

- In a medium pot, stir together 1 cup water and 1 3/4 cups sugar. Bring to a boil over high heat. Boil until the sugar is completely dissolved, it shouldn't take more than a minute or two. Turn off the heat.
- Meanwhile, in a heat-proof bowl, add the 1/4 cup packed basil. Use your hands to tear up the pieces. Use a wooden spoon to bruise the leaves against the bowl. Keep going until they are nice and dark. You want to get all that flavor.
- Pour the sugar syrup over the basil leaves. Put it in the fridge for about 2-3 hours or until completely chilled. The longer it sits the more basilicious it will be.
- Juice the lemons. Strain it through a colander to remove the seeds, but so that most of the pulp remains.
- Add the lemon juice, 7 cups of water, and ice to a pitcher. Strain the refrigerated syrup through the colander into the pitcher. Discard basil. Stir well.
- Serve with ice, fresh basil, and lemon wedges.

- Mix lemon juice, Basil Simple Syrup, and water together in a pitcher. Store in the refrigerator until ready to serve. Pour over ice filled glasses and garnish with a lemon twist.
- In a saucepan combine basil, sugar, and water and simmer until the sugar is dissolved, 5 minutes. Cool, strain the simple syrup, and store in the refrigerator.
PURPLE BASIL LEMONADE
From Cooking Light Magazine's July 2009 edition: "In this recipe, basil is crushed with sugar to release the oils. If you don't have a mortar and pestle, process the basil, sugar and about 1/4 cup of water in a food processor or blender." I am eager to serve this at my next party. The recipe doesn't indicate this, but I would personally place the strained lemonade into a pitcher and refrigerate until ready to serve. When having a party, it's always best to prepare ahead if possible!

Whenever my roommates and I go out to dinner, we usually end up at Houlihan's and ordering at least two basil lemonades each. I absolutely love the crisp, fruity, and tangy taste, and these drinks definitely get us pumped for a night out on the town! NECTARINE-BASIL LEMONADE

- In a small saucepan stir together 2 cups of the water, 1 cup of the basil, 1 of the nectarines, chopped course, and the sugar, bring the mixture to a boil, stirring until the sugar is dissolved, and simmer it for 5 minutes. Stir in the remaining 1 1/2 cups water, the remaining nectarine, sliced thin, and the lemon juice. I tweaked this recipe it to make a refreshing drink. I love basil and this recipe has a wonderful basil-infused flavor. Delicious on a warm day or with grilled chicken. Serve over ice and garnish with fresh basil and lemon slices.
