- In a large bowl, combine the first six ingredients. Crumble beef and sausage over mixture; mix well. Shape into eight patties. , Grill, covered, over medium heat for 5 minutes on each side or until a thermometer reads 160° and juices run clear. Top each burger with a cheese slice. , Grill 1-2 minutes longer or until cheese begins to melt. Serve on buns with the lettuce, tomato, avocado and mayonnaise or mustard if desired.

MOM'S LEGENDARY STUFFED HAMBURGERS
These are enormous, stick-to-your-ribs kind of burgers with a surprise in the center. A real family favorite. I like to serve them on a bun topped with sauteed mushrooms and Swiss cheese. Use extra lean or lean ground beef instead of medium because the bacon adds to the fat content of the meat.

- Prepare a grill for medium heat. When hot, lightly oil the grate.
- Fry the bacon in a skillet over medium heat for about 5 minutes, stirring frequently. Add onions to the pan; cook and stir until bacon is browned, but not crisp and onion is soft. Remove from the pan and drain on a paper towel-lined plate. Season to taste with black pepper.
- In a large bowl, mix together the ground beef and onion soup mix. Divide into 8 balls and then flatten into thin patties. Place a quarter of the bacon mixture onto each of four patties. Top with the remaining patties and press the edges together to seal.
- Grill the burgers for about 15 minutes, turning once, until well done. Serve on buns with your favorite condiments.

- Combine beef, onion, seasoning mix and egg in a large bowl.
- Add rice and mix well.
- Cut peppers in half lengthwise; remove seeds and membrane.
- Spread tomatoes on the bottom of an ovenproof 12 X 9 inch baking dish. The liquid from the tomatoes will reduce during cooking so if (like me) you like lots of sauce, add about a cup of water. This also helps make the peppers softer.
- Place peppers, cut side up, on top of the tomatoes.
- Spoon beef mixture into peppers, mounding as necessary.
- Top each pepper with salsa.
- Bake in preheated 375°F oven for 40-45 minutes or until beef is cooked thoroughly and peppers are soft.
- Cover each pepper with cheese and return to oven, under the broiler, until the cheese melts- less than a minute, so watch carefully!
- Serve with sour cream and additional salsa.

- Create flat bases on each sweet potato by cutting off a small piece on opposite sides. Pierce each sweet potato thoroughly with a fork.Place the potatoes in the Deep Covered Baker. Microwave, covered, on HIGH for 5 minutes.Remove lid and turn the potatoes over. Microwave for an additional 5 minutes, or until the potatoes are very soft when pierced with a fork.Grate the cheese with the Microplane® Adjustable Coarse Grater; set aside.Remove the baker from the microwave. Carefully move the potatoes to a cutting board.On a Flexible Cutting Mat, season both sides of the chicken with the rub. - Chop your garlic and veggies.
- Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
- While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
- Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.

- Preheat oven to 350 degrees and lightly grease a large baking sheet. Arrange halved poblano peppers in a single layer on the baking sheet so that they aren't overlapping. Bake for 10-15 minutes while you move on to the next step.

- Preheat your grill to high. Mix beef, seasoning and salt together, in a medium bowl. Form mixture into ¼" patties. Set aside one cup of cheese for topping. Scoop 2 ounces of the remaining cheese in the center of one patty place a second patty on top. Press the two together and crimp the edges with your fingertips sealing it so the cheese does not leak out. Repeat until all burgers are prepared. Make a slight indentation in the center of the burgers to prevent it from doming up in the center. The indentation will rise as your burger cooks. Grill until golden brown and slightly charred (about 5 minutes), turning once (cook for 4 minutes on the other side for medium). Avoid pressing with a spatula, you don't want the juice or cheese to escape! Carefully add 1 tablespoon of cheese to the top of each burger for the last minute of cooking. Set burger aside and allow to rest for 5 minutes before cutting. Place buns on grill (inside down) for about 1 minute, until they are golden. Remove buns and 1 tablespoon remaining cheese on top of bottom bun, then add burger, ¼ cup salsa and top bun. Serve and enjoy!

- Boil dried chickpeas in a pot of water for 5 minutes, then remove from heat and cover. Let chickpeas sit for an hour. Drain the water, rinse, and add them back to the pot with 2 litres of water and boil for 2 hours until tender. You can do this a day in advance of making the southwest stuffed sweet potato to save time.
- This is optional, but you can roll the cooked chickpeas between paper towel with your hands to remove the outer skins. I didn't and it gets so mushy and cooked down that it doesn't totally matter.
- Preheat oven to 350°F. Wash your sweet potatoes and poke them around the surface with a fork. Cover each sweet potato with 1/2 a teaspoon of olive oil and a pinch of sea salt and ground black pepper using your hands. Bake on tin foil for approximately 60 minutes or until cooked through. You could also do these in the microwave for 5 to 7 minutes, but make sure you don't put in the tinfoil.
- Meanwhile in a pan heated to medium, sauté onion in 1 tablespoon of olive oil for 1 to 2 minutes. Then add vegan bacon bits and cook for another 2 minutes. If you're using the actual magic vegan bacon grease, cook onions in 1 tablespoon of it for 4 minutes until soft and fragrant.
