EASY HOMEMADE SALSA FOR CANNING



Easy Homemade Salsa for Canning image

This is a nice recipe to use if you are new to canning. I received this recipe at my bridal shower. I've tried lots of salsa recipes and this one is the one I always return to. I also like the fact that it uses basic ingredients... nothing too hard-to-find. You can use your favorite canning method for this. Following the instructions on the box of jars is always a good place to start. It looks like a lot of instructions below, but it really isnt- I just want to make it as easy as possible for a beginner.

Number Of Ingredients 11

4 quarts tomatoes, thickly chopped
1 cup onion, chopped
1 cup green pepper, seeded and chopped
1 cup banana pepper, seeded and chopped (or you can double the green peppers, or use any other kind of sweet pepper)
1 cup jalapeno pepper, chopped (use 2 cups for hot)
1 cup vinegar
3 tablespoons canning salt (I use Morton brand canning and pickling salt)
1/4 cup sugar (use up to 1/2 cup if you like very sweet salsa)
2 tablespoons dried oregano
8 tablespoons cornstarch
8 tablespoons warm water

Steps:

  • A note about peppers: Remember to use caution and always use gloves while handling. I always remove the seeds from mine before chopping but if you like hotter salsa feel free to leave them inches.
  • A note about tomatoes: you do not have to peel them, but most people prefer doing so. To quickly and easily peel them: give them a quick rinse to wash them off. Then drop them into a pot of boiling water for about a minute or until you see them crack and peeling. Remove with a slotted spoon into a large bowl of very cold ice water. Now you can easily remove the peel and the core. I usually put the chopped tomatoes into my 2 quart pitcher to measure the tomatoes.
  • To make salsa: Put all ingredients EXCEPT cornstarch and water into a large stock pot. Bring to a boil, stirring occasionally. Boil over low heat for 10 minutes.
  • Mix together the cornstarch and warm water in a small bowl. Make sure the mixture is very smooth- you dont want any corn starch chunks in your salsa.
  • Add the corn starch liquid to the big pot of salsa, stirring while pouring.
  • Boil on low for 10 minutes, watching carefully so that nothing sticks to the bottom of the pot.
  • Pour into prepared canning jars, leaving about 1" for head space. Seal according to your favorite method.

SIMPLE SALSA

There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

2 medium tomatoes, diced
1/2 small onion, diced
2 garlic cloves, minced
1 -2 tablespoon cilantro
salt & pepper (I use garlic pepper salt as well as salt to taste, but you can use salt, pepper, and garlic powder i)

Steps:

  • Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
  • In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
  • Enjoy with chips or add to entrees for flavor/side dip!

QUICK EASY SALSA

1 tbsp jalapeño pepper (, seeds removed, roughly chopped (fresh best, canned ok))
400g / 14 oz canned crushed tomato (, best quality)

1/4 cup (packed) cilantro/coriander (, roughly chopped)
1/2 tbsp+ lime juice

  • Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
  • Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
  • Taste test with corn chip for salt and lime. Adjust if necessary.
  • Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

4 small jalapeño peppers* ((leave the seeds in for an extra kick))
1/2 onion, chopped
3 garlic cloves
1/4-1/2 cup fresh cilantro
6 tomatoes of varying sizes, chopped
1 1/2 to 2 teaspoons ground cumin
1 teaspoon sea salt + more to taste
2 tablespoons lemon or lime juice ((about 1/2 lemon, juiced))

Steps:

  • Add all ingredients to the bowl of a food processor. I like to add in the jalapeños, onion and garlic first and then the cilantro and tomatoes, so the tomatoes do not get too liquid-y. Pulse about 10 or so times and until all ingredients are combined and diced, but be sure to stop before the salsa becomes too watery. However, you can pulse longer if you do like your salsa with more liquid.
  • Taste the salsa and add more ingredients as desired. I would advise stirring in the extra ingredients, not pulsing in the food processor. The salsa will become too watery, quickly.
  • Transfer to a bowl and enjoy!
  • I prefer to refrigerate salsa for 1 day prior to serving to allow the flavors to intensify. Salsa will keep for about 1 week in an airtight container or jar in the fridge; however, it's never lasted that long in this household.

1 (10 oz can) diced tomatoes with green chiles
3 cloves garlic (crushed)

1 jalapeno (deseeded and membranes removed)
½ tbsp honey
½ cup cilantro
¼ tsp salt
Juice from 1/2 lime

Steps:

  • Prepare Ingredients: Add the onion, jalapeno, and garlic to the food processor and pulse until chopped up.
  • Pulse: Add in the tomatoes and continue to pulse until the tomatoes break down and release juices.
  • Season: Add in honey, salt, 1/2 cup cilantro leaves, and juice of 1/2 lime (start slow with the lime as it can overpower, you can taste and add more if desired)
  • Blend: Pulse in the processor to desired consistency. Chunky or smooth. Taste and adjust salt, honey, or lime juice as needed.

5 cups chopped cored peeled tomatoes
2½ cups chopped (seeded green peppers (I used red bell peppers))
2½ cups chopped onions
1¼ cups chopped chilli peppers (remove the seeds if you want the salsa to be less spicy)
¾ cup cider vinegar
2 cloves fresh garlic (finely chopped)
1 tablespoon finely chopped coriander
1½ teaspoons salt
2 teaspoons sugar (optional)
½ teaspoon hot sauce (I used Tobasco)

Steps:

  • Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
  • Combine tomatoes, green peppers, onions, chili peppers, vinegar, garlic, cilantro, salt and hot pepper sauce, if using, in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring constantly.
  • Reduce heat and boil gently, stirring frequently, until slightly thickened for approximately 10 minutes.
  • Ladle the hot salsa into the hot jars, leaving ½ inch (1.25cm) headspace. Remove air bubbles and adjust headspace by adding more hot salsa, if necessary. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process both pint and half pint jars in a boiling water canner for 15 minutes. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

1 1/4 lbs ripe Roma tomatoes* ((about 5 - 6))
1 (14.5 oz) can petite diced tomatoes**
2 green onions,*** (ends trimmed, chopped into thirds)
1/3 cup chopped red onion ((about 1/4 of a medium))
1 jalapeno pepper,**** (seeded and roughly chopped)
1/3 cup fresh cilantro ((about a handful))
1 large clove garlic, (roughly chopped)
2 Tbsp fresh lime juice

1/4 tsp ground cumin
1/2 tsp granulated sugar ((optional))

Steps:

  • Combine all ingredients in a food processor and pulse in 1 second bursts until all ingredients are finely chopped.
  • Serve with tortilla chips. Note that salsa always tastes best after it's been refrigerated for a few hours, so if time allows let the flavors marinate together before serving.

1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

6 medium fresh tomatoes , 1/4-inch diced
1 medium sweet onion , chopped
3 green onions, sliced thin with green tops included
1 serrano chile or jalapeño, seeds removed, diced
2 tablespoons fresh cilantro , loosely packed, finely chopped
8 ounces tomato sauce (canned)
4 ounces mild green chiles (canned, chopped)
2 tablespoons red wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/4 teaspoon cumin powder
1/4 teaspoon garlic powder
Salt , to taste
Pepper, to taste
Tortilla chips, for serving

Steps:

  • Gather the ingredients.
  • In a large bowl, combine all of the ingredients and mix well.
  • Taste for seasoning. Place in an airtight container in the fridge for at least 2 hours to let the flavors blend.
  • Serve in a medium-size bowl alongside chips.

My favorite restaurant salsas tend to be less chunky so I pulse a few times to break things up, then process for 10-15 seconds until there aren't any large chunks but stopping before turning everything into a soup.
  • Taste the salsa and adjust as necessary. You may prefer more lime juice or a bit more salt (different brands of tomatoes have different salt content so depending on which brand you are using, you might even need to add another 1/2 teaspoon of salt, which might seem like a lot - that's why it's important to taste and adjust and I always start on the lower end and work my way up).
  • If you want more heat, add in some of the seeds from your jalapenos (I always start with one jalapeno and then add in the second jalapeno, then some of the seeds if needed to get the heat where I like it since most of the spiciness in the jalapenos is in the seeds themselves).
  • Chill in the fridge for at least 1 hour before serving so the flavors have a chance to really combine. Serve with fresh tortilla chips! Can be stored in the fridge for up to 1 week.
