This recipe for chicken almond ding is a stir fry full of chicken, veggies and crunchy almonds, all tossed in a savory sauce. The perfect healthy dinner that's ready in a flash!

Number Of Ingredients 13

1 1/4 lbs boneless skinless chicken breast, cut into 1 inch pieces
1 tablespoon vegetable oil
salt and pepper to taste
2 cloves of garlic (minced)
3 cups of assorted mixed vegetables such as small broccoli florets (snow peas, bell peppers and sliced mushrooms)
1 8-ounce can of sliced water chestnuts (drained)
1/2 cup Blue Diamond Whole Natural Almonds (toasted)
3/4 cup chicken broth
1 tablespoon cornstarch
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sugar
2 tablespoons hoisin sauce

Steps:

  • In a small bowl, whisk together the chicken broth, cornstarch, soy sauce, rice vinegar, sugar and hoisin sauce; set aside.
  • In a large pan heat the oil over medium high heat. Season the chicken generously with salt and pepper and add it to the pan. Cook, stirring occasionally, until chicken is cooked through and browned, about 3-5 minutes per side.
  • Add the garlic to the pan and cook for 30 seconds.
  • Add the vegetables to the pan along with 2 teaspoons of water. Cook, stirring occasionally, until vegetables are crisp tender, approximately 4-5 minutes depending on the size of your vegetables. Season the vegetables with salt and pepper to taste.
  • Add the chicken broth mixture to the pan and turn the heat up to high and bring to a boil. Cook for 1 minute, or until sauce has thickened.
  • Stir in the almonds and serve immediately, over rice if desired.

This is my absolute favourite dish to order when eating out. I found this on the web, posted by Amelie in Quebec, and it sounds like the real deal. Posted for Zaar World Tour 2005, I have not tried to make this one yet! Hope you enjoy!

4 boneless skinless chicken breasts
8 tablespoons reduced sodium soy sauce
2 teaspoons ginger
2 teaspoons salt
4 teaspoons garlic salt
10 tablespoons peanut oil
1 cup blanched almond
1 bunch fresh parsley
1 bunch fresh parsley sprig
3 lemon slices
12 ounces low fat sweet and sour plum sauce
1/2 cup toasted almond
oil (for frying)
4 eggs
1/2 cup cold water
1 cup all-purpose flour
2 teaspoons salt
2 teaspoons cornstarch
1 teaspoon sugar

Steps:

  • Cut chicken breasts into thin strips.
  • Mix soy sauce, ginger, salt and garlic salt.
  • Marinate chicken strips in the soy mixture for 30 minutes.
  • In a frying pan or a wok, heat peanut oil to 375°F .
  • Fry first amount of (blanched) almonds until golden.
  • Drain well and reduce almonds to a powder.
  • Prepare frying dough:.
  • Using a fork, beat eggs.
  • Still using a fork, beat in cold water, flour, salt, cornstarch and sugar.
  • Dough will be a little lumpy.
  • Set aside for 10 minutes.
  • Add powdered almonds to dough mixture.
  • Dip marinated chicken strips into frying dough/almonds mixture.
  • Drain lightly and fry into very hot oil, until golden brown.
  • Arrange chicken strips onto a serving plate garnished with fresh parsley sprigs, lemon slices and toasted almonds.
  • Serve, coated with plum sauce.

Steps:

  • Prepare and dice all ingredients. Toast almonds in the oven. Reserve. Heat oil in the wok to smoking point, add chicken, onions, and all vegetables to it, except for the almonds, soy sauce, and cornstarch mixture. Stir everything well. Cover wok and cook ingredients 2 minutes. Lift cover up about 2 times to give ingredients a stir. At end of cooking time, uncover wok, add soy sauce and thoroughly mixed cornstarch-water mixture, cook until gravy forms. Place ingredients in serving platter. Sprinkle with almonds. NOTE: Chicken may be replaced by shrimps in above recipe.

1 cup diced chicken
3 tablespoons oil
1/2 cup roasted almonds
1 1/2 tablespoons soya sauce
1 cup chopped celery
1 cup chopped broccoli
salt
pepper
1/2 cup sliced water chestnuts
1 tablespoon cornstarch
1 large onion, chopped
1/2 cup hot water (dilute the corn starch in the water)

Steps:

  • Blanch almonds, then peel the skins off.
  • Roast in oven at 375 for about 10-15 min (or until you are finished cooking) Add oil to wok and heat until smoking.
  • Add onion and chicken, cook about 4 minute stirring occasionally.
  • Add the remainder of the ingredients (except the corn starch/water mixture and the almonds).
  • Cover wok and stir every two min for about 4-6 min.
  • Then add Corn starch mixture and allow to thicken in the wok.
  • Add almonds and serve.
