ROOT BEER GLAZED CHICKEN
My husband made some tweaks from the original recipe to suit our tastes and it was fabulous. Our 18 month-old son even loves this chicken recipe! It's the perfect way for me to get out of cooking for a night. -Stacy Kolojay, Streator, Illinois

Steps:
- Flatten chicken breasts slightly. In a large skillet, cook chicken in oil for 4-6 minutes on each side or until a thermometer reads 170°. Remove and keep warm., Stir the root beer, brown sugar, ketchup, mustard and lemon zest into the skillet. Bring to a boil. Cook and stir for 6-8 minutes or until thickened. Return chicken to skillet; heat through.

- Your first step will be rinsing your meat. Remember to always wash your meat( with exception of ground meats) before cooking. Once your meat if rinsed, place it on a clean surface.
- Pour on your mustard all over your country style ribs, making sure you coat all surfaces. Once the meat if coated, sprinkle on your seasonings.
- Place your meat on your desired cookware, leaving approximately an 1/2 between each rib.
- Pour 1 cup of root beer into the pan. Make sure you do NOT pour the root beer directly over the meat, otherwise you will wash away some seasonings.
- Leave your meat uncovered and place your meat in the oven on 325 for 2 1/2 hours.

- Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Bake at 325° for 2 hours., In a large saucepan, combine the remaining ingredients. - Preheat oven to 350 degrees.
- Place the ham in a broiling pan and cut shallow gashes in a criss-cross pattern across the top half.
- Combine the brown sugar and the dry mustard and pat it all over the ham.
- Put the ham in the oven.
- Combine all the other ingredients in a saucepan.
- Bring the mixture to a boil, then lower to a simmer, and cook until the liquid volumne is reduced to about one cup.
- Strain.
- Spoon some of the glaze over the top of the ham.
- Spoon more glaze, at 15-minute intervals, until it is all gone.
- Continue baking until the ham reaches an internal temperature of 160-degrees on a meat thermometer.
- Remove from oven and allow to rest for about one hour before carving.

EASY ROOT BEER GLAZE

- In medium saucepan, whisk together ingredients.
- Bring to boil and reduce heat to medium.
- Cook uncovered until mixture reduces in half (about 15 to 20 minutes) stirring occasionally.
- Brush half of sauce on ham prior to baking.
- Brush remaining sauce over ham just as it comes out of the oven.
- For a lighter flavor, only brush ham with 1/4 of the glaze before going into the oven and 1/4 of the glaze coming out.
- Offer the rest of the glaze to guests at the table to flavor their own ham to their liking!

- Preheat the oven to 325 degrees F. Butter and flour a 12-cup Bundt pan; tap out the excess flour.
- Heat 2 cups root beer, the cocoa powder, chocolate and 1 stick butter in a large saucepan over medium heat until the butter melts. Add the granulated and brown sugars and whisk until dissolved. Remove from the heat and let cool.
- Combine 2 cups flour, the baking soda, allspice and 1 teaspoon salt in a bowl. Whisk the eggs into the root beer mixture, then gently fold in the dry ingredients (the batter will be slightly lumpy).
- Pour the batter into the prepared pan and bake until a toothpick inserted into the cake comes out clean, 55 minutes to 1 hour, rotating the pan halfway through. Transfer to a rack. Gently poke the cake all over with a skewer and pour 1/4 cup root beer over the cake; let cool in the pan for 20 minutes, then invert the cake onto a serving plate and let cool completely.
- Meanwhile, make the glaze: Whisk the remaining 1/4 cup root beer, a pinch of salt, the confectioners' sugar and vanilla in a bowl until smooth. Drizzle over the cake.

- To make the glaze, combine the root beer and stock in a medium heavy saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer until reduced to a thick syrup, about 1 cup, about 50 minutes to 1 hour. Remove from the heat.
- Preheat a grill to medium-high. Preheat the oven to 425 degrees F.
- Season each chop on both sides with 1 teaspoon of the Essence. Grill for 3 minutes. Turn each chop 1/4 turn to make grill marks and cook an additional 2 minutes. Turn and cook on the second side for 5 minutes.

ROOT BEER GLAZE FOR GREAT BURGERS
This was Created by Lafayette, LA resident, George Graham, for the Sutter Homes Build a Better Burger Contest. It was one of the finalists as a sauce to glaze the Bluesiana burger with zydeco sauce, Mardi Gras slaw and root beer glaze.
