Steps:
- Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.
CREAMY VEGAN GARLIC SAUCE
This creamy roasted garlic sauce is completely dairy-free! There are no cashews which means no cashew-soaking required! Just roast your garlic, blend the ingredients, and pour over pasta, pizza, or garlic bread!
Provided by Brittany Roche
Yield 5 servings of sauce
Number Of Ingredients 10
Steps:
- ROAST THE GARLIC: Heat your oven to 400F and add your garlic to a small oven-safe dish or baking sheet. Drizzle it with the oil lightly (or skip for oil-free). Sprinkle with a pinch of salt and cook for about 10-12 minutes, flipping once. You want it to be slightly browned but not burnt, so keep an eye on it. Usually, when you smell it, it's almost there!
- MAKE THE SAUCE: Next, throw all your ingredients in a blender and blend on high until everything is combined. If you're using the olive oil, blend it a little longer to emulsify everything. Taste and adjust seasonings as you see fit.
- TO USE: Pour this sauce over just-cooked pasta, use it on homemade pizzas, as a garlic bread spread, or to dip all the things!
- TO STORE: Store this sauce in an air-tight container in the fridge for 5-7 days. We do not recommend freezing the sauce.

- Combine all the ingredients in a medium-size bowl (or just add the seasonings directly to the can of tomatoes). Taste and adjust seasonings as needed, adding more salt if desired.
- Use as a sauce on raw pizza dough, then add your toppings of choice and bake. Learn how to make pizza dough and bake homemade pizza: sourdough pizza or active dry yeast recipe. This sauce also works well as a dipping sauce for pizza muffins or zucchini pizza dippers. You can warm the sauce if you want to serve as a dip.
- If you have leftover pizza sauce, store in the fridge for up to 5 days or in the freezer for up to a few months.

- Add all of the ingredients to a blender or food processor (starting with just 1/4 teaspoon salt), and blend until smooth. This is important so that the dried herbs are pureed throughout the sauce well for full flavor. Taste and add more salt if desired. If your tomato sauce has added salt, you may want more.
- If using as a pizza sauce, just add it to your pizza crust of choice, add the toppings, and bake. If serving over pasta (my favorite use) simply warm it on the stove first just until heated through. Since the sauce is oil-free and made from pureed tomatoes, it will thicken up a lot in the fridge, so be sure to reheat in the microwave or over low heat on the stove to bring it back to a sauce consistency.
- This sauce will keep for 2 weeks in the fridge or the freezer for 3 months. Thaw and reheat over low heat on the stove to use again.

- Cut the top off a head of garlic making sure the tip of each clove of garlic has been decapitated. Set the head of garlic on a piece of foil, drizzle the top with a smige of olive oil, and wrap it up tightly.
- Wash, core, and halve the tomatoes. Toss them with 1/2 cup olive oil, 2 teaspoons salt, and the black pepper. Divide the tomatoes between two large, sided baking sheets. Nestle the foil-wrapped head of garlic on one of the trays.
- Roast the tomatoes at 400 degrees for about an hour, rotating the trays as necessary. Some of the tomatoes will blister a bit—this is good.
- While the tomatoes are roasting, sauté the green pepper, onion, and jalapeno in 2 tablespoons olive oil until tender and translucent.

- If you used puree, slowly add water, using more or less if necessary until you reach desired consistency
- The sauce should be thick enough to coat the back of a wooden spoon but thin enough to spread easily on the pizza. Keep in mind that the sauce thickens a bit in the oven, so if it is too thick to begin with you will end up with paste.
