- Heat the olive oil in a large frying pan or wok. Add the onion and soften for 5 mins.
- Add the smoked paprika, thyme and paella rice, stir for 1 min, then splash in the sherry, if using. Once evaporated, stir in the chopped tomatoes and chicken stock.
- Season and cook, uncovered, for about 15 mins, stirring now and again until the rice is almost tender and still surrounded with some liquid.
- Stir in the seafood mix and cover with a lid. Simmer for 5 mins, or until the seafood is cooked through and the rice is tender. Squeeze over the lemon juice, scatter over the parsley and serve with the lemon wedges.

QUICK AND EASY PAELLA
Consider this a gateway paella and the first step to a serious, lifelong addiction. When I first do a version of a classic dish like paella, I try to use a minimum number of ingredients and steps to focus on technique. After learning the method, you'll ideally use a wider variety of ingredients, like clams, mussels, squid, and chicken, which will make your rice that much more interesting. Garnish with extra virgin olive oil, freshly chopped flat-leaf parsley, and lemon wedges.

- Cook and stir reserved shrimp shells and 2 teaspoons olive oil in a saucepan over medium heat until shells are pink and fragrant, 1 to 2 minutes. Stir saffron into shells; add chicken broth, bring to a simmer, and cook until broth is a rusty brown and fragrant, about 20 minutes.
- Strain saffron broth through a fine-mesh sieve; measure out 2 cups of broth, pour into a small saucepan, and place over low heat to keep broth hot.
- Preheat oven to 425 degrees F (220 degrees C).
- Heat 1 tablespoon olive oil in a large, oven-proof skillet over medium heat. Cook chorizo slices in hot oil until browned, about 2 minutes per side. Add onion to sausage; cook and stir until soft and slightly translucent, about 3 minutes. Reduce heat to medium-low.
- Stir garlic into chorizo mixture; cook and stir until fragrant, about 1 minute. Add rice to skillet and stir to coat rice completely in oil; stir in peas.
- Pat rice mixture evenly into the bottom of the skillet. Arrange shrimp in a single layer over the top of the rice. Lay pepper strips around and in between shrimp; season with salt, paprika, and cayenne pepper.
- Increase heat to high. When rice begins to sizzle in the skillet, pour reserved 2 cups hot saffron broth over the shrimp; gently shake the skillet to distribute liquid.
- Bake rice mixture in the preheated oven until rice is almost tender and still a bit wet, about 20 minutes.
- Place skillet over medium-high and cook until rice is tender, liquid is absorbed, and rice caramelizes and crusts slightly on the bottom of the skillet, 3 to 5 minutes.

- Stir the saffron into 1⁄4 cup hot water in a small bowl and let bloom for 15 minutes.
- In a 16″-18″ paella pan, heat the oil over medium-high heat. Add the chorizo and the chicken, skin side down. Add the the shrimp and cook, flipping occasionally, until browned, about 5 minutes, then transfer the shrimp to a plate, leaving the meats to sear in the pan.
- Add the onions, garlic, tomatoes, and paprika and cook, stirring often, until the onions soften, about 6 minutes. Add the saffron and 4 cups of chicken stock. Flip the chicken so it's skin side up and bring everything to a boil over high heat.
- Sprinkle in the rice, distributing evenly, then add the peppers on top. Cook, uncovered, without stirring, until rice has absorbed most of the liquid, about 12-15 minutes. If the pan is larger than the burner, rotate it every two minutes to evenly distribute the heat. Once the stock is low enough, add the remaining 2 cups chicken stock.
- Reduce heat to low, and top with the cooked shrimp. Nestle in the clams, hinge side down. Continue to cook, without covering or stirring, until the clams opened and the rice absorbs the liquid and is al dente, 5-10 minutes more. Turn heat to high for 1-2 minutes to create the socarrat. Remove pan from heat, cover with aluminum foil, and let sit for 5 minutes before enjoying.

- In a very wide pan or paella pan, preheated over medium high heat, add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, crushed garlic, red pepper flakes, add rice and saute 2 or 3 minutes. Add saffron threads, bay leaf, broth, and thyme and bring liquids to a boil over high heat. Cover the pan with lid or foil and reduce heat to simmer.
- In a separate nonstick skillet, over medium high heat brown chicken on both sides in 1 tablespoon extra-virgin olive oil, 1 turn of the pan. Season chicken with salt and pepper. Add peppers and onions to the pan and cook 3 minutes longer. Add chorizo to the pan and cook 2 minutes more. Remove pan from heat.
- After about 13 minutes, add shellfish to the rice pan, nesting them in cooking rice. Pour in peas, scatter lemon zest over the rice and seafood, then cover the pan again. After 5 minutes, remove cover or foil from the paella and discard any unopened mussel shells. Stir rice and seafood mixture and lift out bay and thyme stems, now bare of their leaves. Arrange cooked chicken and peppers, onions and chorizo around the pan. Top with parsley and scallions. Serve with wedges of lemon and warm bread.
EASY PAELLA
You may not think of paella as a weeknight dish, but this half-hour recipe might change your mind. The trick is to start it on the stove and finish it in a superhot oven so you get a nice, crisp crust on the bottom. The name "paella" refers not to a combination of rice, seafood, sausage and other meats, but rather to the paellera, a large pan that looks like a flat wok. - In a large pot, bring 3 cups of water to a rolling boil. Add the lobster tails and let boil very briefly (1-2 minutes) until pink. Turn the heat off. Remove the lobster tails with a pair of tongs. Do not discard the lobster cooking water. When the lobster is cool enough to handle, remove the shell and cut into large chunks.
- In a large deep pan or cast iron skillet, heat 3 tbsp olive oil. Turn the heat to medium-high and add the chopped onions. Saute the onions for 2 minutes then add the rice, and cook for 3 more minutes, stirring regularly. Now add the chopped garlic and the lobster cooking water. Stir in the saffron and it's soaking liquid, paprika, cayenne pepper, aleppo pepper, and salt. Stir in the chopped tomatoes and green beans. Bring to a boil and let the liquid slightly reduce, then cover (with lid or tightly with foil) and cook on low heat for 20 minutes.
- Uncover and spread the shrimp over the rice, pushing it into the rice slightly. Add a little water if needed. Cover and cook for another 10 minutes or until the shrimp turns pink. Finally, add the cooked lobster chunks. When the lobster is warmed through, turn heat off. Garnish with parsley.
- Serve the paella hot with your favorite white wine.

- Disjoint the chicken wings, discarding the wing tips or reserving them for making stock. Place the remaining wing pieces in a large bowl. Mix three tablespoons of the olive oil with the lemon juice and cumin. Season this mixture to taste with salt and pepper. Pour over the chicken wings, cover and allow to marinate one to four hours.
- Up to two hours before serving time, steam the mussels. Bring the wine to a simmer in a large pot, add the mussels, cover tightly and cook over medium heat until they open, about 10 minutes. Leave the mussels in the covered pan until shortly before serving time.
- Saute the chorizos over medium heat in a six-quart casserole until they are cooked through, 15 to 20 minutes. Remove them from the casserole, draining them well, and set them aside on a plate covered with a paper towel. Leave the fat in the casserole. Add the remaining olive oil to the casserole.
- Add the onions and peppers to the casserole and cook over low heat, stirring, until the vegetables are soft but not brown. Stir in the garlic, cook briefly, then add the oregano. Stir in the rice and cook for several minutes, stirring, until the rice is well coated with the other ingredients. Remove the casserole from the heat.
- Drain the canned tomatoes, pricking them to drain the liquid inside. Reserve all the tomato liquid and chop the tomatoes fine. Stir the chopped tomatoes in with the rice.
- Measure the reserved tomato liquid. You should have about a cup and a half. Add a little water if necessary to make this amount. Place the tomato liquid in a saucepan along with the chicken stock and bring to a simmer. Stir in the saffron, remove from the heat and allow to steep for 10 minutes. Meanwhile, slice the cooled chorizo into rounds a half-inch thick.
- Place the casserole over medium-low heat and bring to a simmer. Stir in the pieces of chorizo, then stir in the tomato and chicken stock seasoned with the saffron. Bring to a simmer and add salt and pepper, if necessary. Cover and cook over low heat until all of the liquid is absorbed and the rice is done, which should take about 20 minutes. Set aside, covered for at least 20 minutes.
- While the rice is cooking, remove the shrimps from the refrigerator so they can come to room temperature.
- Preheat a broiler. Place the marinated chicken wings on a broiling pan and broil until they are browned and cooked through, about 25 minutes. Turn them once during the cooking. Transfer them to a large platter or bowl, cover with foil and set aside.
- To serve, spoon the rice gently into one or more large mixing bowls to fluff it. Do not fill the bowls more than half full or you will have rice all over the floor. Taste the rice for seasoning and add more salt and pepper, if necessary, so that the seasoning will need no further adjusting.
- Gently fold the capers, parsley, shrimp and chicken wings in with the rice.

- Mince the onion. Mince the garlic. Finely chop the tomatoes, removing the cores but keeping the seeds with their juices. Slice the roasted red peppers into strips, and set aside.
- Measure out all the remaining ingredients before you start. The cooking process goes fast!
- In your largest skillet or a 4-serving paella pan, heat olive oil on medium heat. Saute the onion and garlic until just translucent, about 3 minutes, stirring frequently. Add the chopped tomatoes, the smoked paprika and red pepper flakes and 1/4 teaspoon of the salt, and cook until the tomatoes have broken down and most of the liquid is evaporated, about 5 minutes. Stir in the stock, chickpeas, saffron and the remaining 1 1/2 teaspoon kosher salt. Stir, then immediately sprinkle the rice evenly across the broth and tap the pan with a spoon to evenly spread the rice. Bring to a medium simmer and cook without stirring until liquid is absorbed, about 18 to 22 minutes (adjust the cook time as necessary if using a skillet). If your pan is large enough to span multiple burners on your stovetop, adjust the heat on each burner so you achieve a steady medium simmer. Rotate the pan every few minutes for an even cook.
- When the top of the rice is beginning to show through the liquid, about 10 minutes into the cook time, press the artichokes, peas, and red pepper strips lightly into the rice.
- In last few minutes, carefully watch the paella and rotate pan more frequently. As the paella finishes, you'll see the steam start to slow down as the water cooks out. If desired, peek at the bottom of a pan by using a knife to scrape back the rice - you shouldn't see any standing water. The sound will start to change from a simmer to a crackle. This indicates the crust is forming. Let the crackling continue for about 2 minutes before removing from the heat. If you smell any burning, remove immediately.
- When the paella is done, squeeze the lemon wedges onto the top of the pan. Sprinkle with a pinch or two of kosher salt and add the parsley, if using. Serve with additional lemon wedges.

- Peel and chop the onion and garlic.
- In a large pan, heat up the oil on a low heat, add the onion with a pinch of salt and fry until golden.
- Add the garlic and tomatoes, and cook for a further 2-3 minutes until the tomatoes are mushy.
- In go the paprika, turmeric and rice, salt and pepper.
- Give them a good stir, add the stock, and place the lid on.
- Cook on a low to medium heat without stirring at all until most liquid is evaporated.
- Throw in the seafood, and place the lid back again.
- Cook for 7 minutes until the seafood is cooked through, and rice is cooked, and all the liquid is absorbed.
- Garnish with fresh parsley.

- In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate for at least 30 minutes.
- In a 15-inch or 18-inch paella pan, heat olive oil and cook the chicken and chorizo over moderate heat. Break up chorizo with a spoon, until some of the fat is rendered and the chorizo is browned, 4 minutes.
- Move the chicken and chorizo to one side of the pan. Add 2 tbsp of olive oil, plus the red pepper, onion and garlic to the other side of the pan and stir together cook over low heat, stirring, until the garlic and onions are softened and just beginning to brown, 5-6 minutes.
- Stir in the tomatoes, rice, saffron and the 1 1/2 cups of chicken stock. Season with salt and pepper and bring to a boil. Cover and simmer over low heat, without stirring, until the rice is al dente and the liquid is absorbed, 15 minutes.
