This recipe makes a large 1 1/2-pound buckwheat loaf.

¾ cup water
¼ cup vegetable oil
¼ cup sour cream
1 egg
1 egg yolk
2 ¼ teaspoons active dry yeast
2 ⅔ cups bread flour
¾ cup buckwheat flour
1 tablespoon white sugar
¾ teaspoon salt

Steps:

  • Combine water, vegetable oil, sour cream, egg, and egg yolk in the bread machine.
  • Combine yeast, bread flour, buckwheat flour, sugar, and salt in a bowl. Add to wet ingredients in bread machine all at once.
  • Run the Bread cycle. Remove bread from the machine after the cycle is done and cool bread on a wire rack.

1 piece egg
400 milliliters kefir
100 milliliters milk
1 tablespoon olive oil
1 cup buckwheat flour
1/2 cup spelt flour
1/2 cup corn flour
1 teaspoon baking soda
1 teaspoon sea salt
1 teaspoon chili powder
2 pinches Fresh herbs of your choice (basil, oregano, thyme, cilantro), chopped

Steps:

  • Whisk egg, kefir, milk and olive oil for 2-3 minutes until all ingredients are well combined
  • In a separate bowl mix and combine buckwheat, spelt and corn flour, baking soda, sea salt, chili powder and chopped fresh herbs.
  • Add flour mixture to the egg and kefir mixture, stir until all ingredients are combined. Let the dough rest for 10 minutes.
  • Meanwhile, heat a baking sheet in the oven at 250°C. When hot, remove from the oven and cover with parchment paper. With a wet spoon place small, round knobs of dough onto the baking sheet.
  • Bake in the oven at 220°C for 5-10 minutes. Take out from the oven, cover with a dish towel and leave to cool and soften slightly.

1 cup warm homemade kefir
2 tablespoons warm homemade kefir
3 cups bread flour
2 tablespoons white sugar
1 teaspoon salt
2 ½ teaspoons instant yeast

Steps:

  • Pour 1 cup plus 2 tablespoons warm kefir into the pan of your bread machine; add bread flour, sugar, salt, and yeast, respectively. Program the machine for the dough cycle; press Start.
  • Punch down dough and remove from the pan. Knead lightly on a floured work surface. Divide dough into 12 pieces; roll each into a small ball.
  • Grease a muffin tin. Place 1 ball of dough in each muffin cup. Cover loosely with plastic wrap. Let rise until dough is puffy, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until golden brown, about 20 minutes.

Bake these simple white bread rolls for sandwiches, burger buns or to dunk in soup. Using only a handful of ingredients, bread-making has never been so easy

Number Of Ingredients 5

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

  • Step 1Cut a piece of unbleached parchment paper that will fit inside or on your baking vessel of choice, set aside.
  • Step 2To a 2-cup measuring cup, add 1 cup of room temperature water with 1/4 cup of hot boiling water, let sit until ready to use. Prepare and measure or weigh all your dry ingredients. Place sifter inside (or on top) a large glass mixing bowl, sift and combine all dry ingredients; flours, psyllium husk, coconut palm sugar, salt. Remove the sifter and mix the dry ingredients well with a large spoon. Add 1 cup of starter and 1 cup of warm water (not hot) and mix well until the liquids are absorbed. Add the remaining 1/4 cup of water and mix it until all the water is incorporated. Make sure there are no dry bits at the bottom. The texture of the dough should be like a thick pancake mix. Let sit for 2-5 minutes. If, after a few minutes, your mixture looks too dry, add an extra 1/4 cup of water*** (for a total of 1-1/2 cups) and mix.
  • Step 3Transfer the dough into a large soup bowl (lined with a clean tea towel) and dusted with a little flour. A cloth-lined banneton basket is ok too. Reference video for guidance. Loosely cover (plastic wrap, tea towel, plate), let rise in a warm place for a minimum of 2 hours. Read Step 4 (below) about preheating.
