These are great homemade onion rings that are batter fried rather than having a bread crumb coating. They are addictive...be careful :)

Steps:
- Cover onion slices with cold water and let stand 30 minutes.
- Remove to paper towels and press to dry.
- Separate into rings.
- Combine flour, sugar and salt.
- Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
- Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
- Remove and drain on paper towels.
- Serve immediately.

- Sift the flour into a large mixing bowl. Add a pinch of salt. Make a well in the center of the sifted flour.
- Tip the egg yolks and oil into the well. Use a large spoon or electric mixer to mix until smooth. Gradually add the milk while mixing, and beat well.
- Cover the batter. Let stand for 30 minutes in the refrigerator, to chill. While the batter is sitting, slice the onion rings to about 1/2 inch/1cm thickness.
- After 30 minutes, whisk the egg white until stiff. Fold into the batter.
- Dip the onion rings into the batter and fry until golden brown. This will take about 3-4 minutes.
- Remove from the oil using tongs or a slotted spoon. Place on kitchen paper to remove any excess grease, then serve immediately.

- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.

- Slice the onion as thinly as possible (a mandolin would be perfect, but I don't own one, so I used a sharp knife.).
- Soak the onion in the buttermilk for 15 minutes, or while the oil is heating.
- Toss the onion slices in a plastic bag with the baking mix until well coated.
- Drop the coated rings into the hot oil, fry for approximately 4 minutes, turning half way through so that both sides are the same color (should be light brown, and you will likely see the onion "peeking" through the coating.
- Drain on a plate lined with paper towel.
- Serve hot with your favorite dip- Ranch dressing or ketchup are both good with these.

- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up.
