This is a low calorie, no crust strawberry pie. It is made with sugar-free strawberry flavored gelatin and sugar-free vanilla pudding. It is very good! I've had the recipe for years, and to be honest, I don't remember where I got it. Garnish with light whipped topping if you like.

24 ounces fresh strawberries
1 (2.1 ounce) package sugar-free cook and serve vanilla pudding mix
1 (.6 ounce) package sugar-free strawberry flavored Jell-O®
2 cups water

Steps:

  • Rinse and hull strawberries. Distribute evenly in a 10 inch pie pan.
  • In a medium saucepan combine pudding mix, gelatin mix, and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light frozen whipped topping prior to serving, if desired.

1 sheet refrigerated pie crust
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
1 package (3 ounces) strawberry gelatin
4 cups sliced fresh strawberries
Whipped cream, optional

Steps:

  • Preheat oven to 450°. Unroll crust into a 9-in. pie plate. Trim edge. Line unpricked crust with a double thickness of heavy-duty foil or parchment. Bake 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in gelatin until dissolved. Refrigerate until slightly cooled, 15-20 minutes., Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set. If desired, serve with whipped cream.

1 (8 ounce) container thawed Cool Whip Free
1 reduced fat graham cracker crust (Keebler makes one)

ice cube

Steps:

  • Boil 2/3 c water.
  • In mixing bowl, mix boiling water and Jello for about 2 minutes until dissolved.
  • In a measuring cup, combine ice cubes and water to measure 1 cup.
  • Stir into Jello mixture til ice is melted.
  • Add Cool Whip and whisk until smooth.
  • Put mixing bowl in the refrigerator for 20 minutes to allow mixture to thicken.
  • Spoon filling into crust.
  • Refrigerate overnight.

1 1/3 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/4 cup canola oil
3 to 4 tablespoons cold water
1 package (8 oz) fat-free cream cheese or 1/3-less-fat cream cheese (Neufchâtel), softened
2 tablespoons sugar
1 container (6 oz) Yoplait® Original yogurt French vanilla
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 cup frozen (thawed) fat-free whipped topping
4 cups fresh whole strawberries
2 tablespoons semisweet chocolate chips
1/2 teaspoon canola oil

Steps:

  • Heat oven to 425°F. In medium bowl, mix flour, salt and 1/4 cup oil with fork until mixture is consistency of coarse crumbs. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all water is absorbed and dough sticks together.
  • Gather dough into a ball; flatten to 4-inch round. Place between sheets of waxed paper. With rolling pin, roll dough into 12-inch round. Remove top sheet of waxed paper. Carefully transfer dough round to 9-inch glass pie plate; remove waxed paper. Gently press in bottom and up side of plate, being careful not to stretch dough.
  • Fold and roll edge under, even with plate; flute edge. Prick bottom and side of dough thoroughly with fork. Bake 15 to 18 minutes or until light golden brown. Cool completely, about 30 minutes.
  • In large bowl, beat cream cheese with electric mixer on high speed 30 to 60 seconds or until fluffy. Beat in sugar until blended. Add yogurt, vanilla and almond extract; beat on low speed 30 to 60 seconds until well blended and smooth. Fold in whipped topping just until blended. Spoon into cooled crust; spread gently to edge. Refrigerate at least 4 hours or until chilled.
  • Cut pie into 8 servings. Top each serving with strawberries, pointed ends up. In small microwavable bowl, microwave chocolate chips and 1/2 teaspoon oil on High 30 to 45 seconds or until chips can be stirred smooth. Drizzle chocolate over strawberries. Store pie in refrigerator.

1 (1/3 ounce) package sugar-free strawberry gelatin
2 cups chopped fresh up strawberries
2 cups water
1 reduced fat graham cracker crust

Steps:

  • Arrange strawberries in crust pan in single layer (if you are not mixing in with pudding/jello mixture).
  • Cook and stir over medium heat until mixture comes to a full boil.
  • Take off heat and pour in box of dry Jello. Mix until smooth with wire whisk. Pour over strawberries (or mix berries in).
  • Pour into pie crust and chill until set.
