Prawns and scallops in a ginger butter sauce with shredded carrot and leeks. Delicious served with plain basmati rice.

⅓ cup white wine
¾ cup vegetable stock
1 teaspoon chopped fresh ginger
1 clove garlic, minced
1 small carrot, chopped
½ leek, chopped
10 sea scallops, halved
⅓ pound tiger prawns, peeled and deveined
½ cup unsalted butter, cubed
chopped fresh chives for garnish
salt and pepper to taste

Steps:

  • Bring the wine, vegetable stock, ginger, and garlic to boil in a skillet. Mix in the carrot and leek, and reduce heat to low. Simmer 5 minutes. Mix in scallops and prawns. Stir in the butter cubes. Continue cooking until butter is melted and scallops and prawns are opaque. Sprinkle with chives, and season with salt and pepper to serve.

24 wonton wrappers
12 green shrimp, sheeled, deveined, cut in half and twisted into bundle
12 coriander leaves
2 1/2 cm fresh ginger, peeled and chopped
1 chili pepper, seeds removed and chopped
100 ml white wine
200 g unsalted butter
2 tablespoons light soy sauce
1 tablespoon lemon juice
salt and pepper
18 green shrimp, shelled and cleaned
4 shallots, finely diced
24 coriander leaves
salt and pepper

Steps:

  • To Make Ravioil:.
  • Spread 12 wonton wrapper on a flat surface.
  • Place prepared prawns in centre, coriander leaf on top.
  • PAint edge with water and place anotehr wonton wrapper on top.
  • Press edges together and cover with tea-towel. Set aside.
  • To make sauce:.
  • Put ginger, chilli in a saucepan and pout in wine.
  • Simmer mixture until reduced by half.
  • Turn heat low and gradually whisk in butter.
  • Add soy sauce, lemon juice, salt and pepper.
  • Set aside.
  • To cook prawns:.
  • Put whole prawns in steamer and sprinkle with ginger, shallots, coriander leaves, salt and pepper. Steam for 3 minutes.
  • To cook ravioli:.
  • Drop ravioli a few at a time into boiling salted water and cook 3 minutes. Drain.
  • To serve:.
  • Place 2 ravioli on plate, spoon over sauce and top with 3 prawns.

This dish is really quick, and easy to prepare, but its filled with terrific, rich flavor. I've made it with both the shrimp and the scallops, and both worked very well.

1 lb peeled and deveined shrimp or 1 lb sea scallops, your choice
3 tablespoons butter
1 small shallot, finely minced
3 cloves garlic, mashed into a paste (or finely minced)
2 tablespoons sherry wine
2 tablespoons fresh minced parsley, for garnish

Steps:

  • In a large skillet, heat butter over medium high heat.
  • When butter begins to foam, add the garlic paste and shallot and saute for a minute or two, to soften a bit.
  • Add the seafood of your choice: For the shrimp, saute for 2-3 minutes or until shrimp turn pink.
  • For the scallops, saute 3-5 minutes, or until scallops turn opaque.
  • Once the seafood is cooked through, remove to a plate and cover.
  • Add the sherry to the melted butter and warm through for about a minute or two.
  • Pour sauce over seafood, top with parsley, and serve.

1 lb large scallop
1 lb medium shrimp or 1 lb prawns
4 medium white mushrooms
1/3 cup diced onion
4 minced garlic cloves
4 tablespoons butter
1/2-3/4 cup sharp cheddar cheese (be sure it it SHARP)
2 tablespoons dry sherry
Accent seasoning
1 tablespoon salt
1/2 tablespoon pepper
paprika, for good color on top
6 tablespoons butter
6 -8 tablespoons flour
3 cups cream or 3 cups half-and-half

Steps:

  • Sauté onions and garlic in 1 T. butter over medium heat for 3 minutes. Salt to taste.
  • Add scallops, shrimp, mushrooms, Accent, salt & pepper, & 3 T. butter, stirring to mix well. Be sure to salt and pepper to your tastes. My amounts may be to heavy for some.
  • Start cream sauce by melting butter in medium sauce pan, mix in flour slowly; cook for 2 minutes.
  • Add half-and-half slowly and stir constantly til very thick, set aside.
  • Scallops and shrimp should be stirred occasionally and will be done by the time the cream sauce is done. Add sherry and grated sharp cheddar cheese to the scallops and shrimp and stir in, then add cream sauce and mix it well until cheese is melted.
  • Pour into large casserole dish or individual serving dishes, sprinkle with cracker crumbs (opitional) and paprika; bake at 350°F for 15 minutes or til golden.
