Steps:

  • Heat oven to 450ºF.
  • Spread fries into single layer on 2 rimmed baking sheets.
  • Bake 32 to 36 min. or until crisp and deep golden brown.
  • Microwave oil and garlic in small microwaveable bowl on HIGH 30 sec. Pour evenly over fries; toss until evenly coated. Add cheese and parsley; mix lightly.

1 teaspoon sweet paprika
1 teaspoon salt

2 -3 tablespoons finely chopped fresh parsley
1/3 cup shaved fresh parmesan cheese

Steps:

  • Scrub potatoes, cut in half, and into 8 wedges per half (16 wedges per potato total).
  • Preheat oven to 450°F.
  • Toss all ingredients together except parmesan and parsley, mixing until potatoes are evenly coated.
  • Spread potatoes in an even layer on a greased or nonstick-foil lined baking sheet.
  • Bake 35-45 minutes or until potates are cooked through and crisp up, stirring potatoes several times during cooking to ensure even browning.
  • Toss potatoes with parmesan and parsley when they come out of the oven, and adjust salt if necessary.

This is my go-to recipe when I want to make oven fries. It's full of flavor and the hardest thing about it is cutting up the potatoes, which you can leave unpeeled to make it even easier.

4 large russet potatoes, cut into 1/4 inch strips
1/4 cup olive oil
3 garlic cloves, minced
1/2 teaspoon thyme
1/4 teaspoon seasoning salt
1/2 cup grated parmesan cheese, divided
1/4 cup chopped fresh parsley

Steps:

  • Preheat oven to 425º.
  • In a large mixing bowl, place the cut potatoes and pour the olive oil over the top.
  • Sprinkle on the garlic, thyme and seasoned salt. Mix well until the potatoes are evenly coated.
  • Spread the potatoes on a baking sheet in a single layer.
  • DO NOT throw away the oil that is left in the bowl.
  • Bake 30 minutes, turning the fries over halfway through (I didn't do this because I forgot and I don't think it really matters if you do or you don't).
  • After 30 minutes of baking, return the fries to the bowl with excess oil and sprinkle with the Parmesan cheese and parsley.
  • Toss to coat and return to baking sheet and bake for another 10 minutes.
  • If desired, sprinkle fries again with a few shakes of Parmesan and a few shakes of seasoned salt.

5 russet potatoes
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
  • Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
  • When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

  • Preheat the oven to 450 degrees F.
  • Heat the garlic and oil in a small saucepan over medium heat for 2 minutes. Strain the garlic from the oil with a small mesh strainer. Set both garlic and oil aside.
  • Cut the potatoes into 1/4-inch sticks. In a large bowl, toss the oil, potatoes and 1/2 teaspoon of salt. Spray a baking sheet with cooking spray and spread the potatoes onto it in a single layer. Bake until golden and crisp, about 35 minutes.

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
