Linguine with Seafood (Linguine ai Frutti di Mare) image

A favorite of seafood lovers, our version of this classic pasta dish combines shrimp, scallops, squid, tilapia, clams and mussels with a simple marinara sauce served over linguine.

1/2 lb medium shrimp
1/2 lb sea scallops
1/2 lb squid (tubes and/or tentacles)
1/2 lb tilapia fillets (or other firm white fish)
1-1/2 lbs fresh mussels
2 dozen cherrystone clams
1 cup dry white wine
1-1/2 lbs linguine
3 tablespoons extra virgin olive oil
8 cloves garlic (very finely chopped)
1/2 cup onion (very finely chopped)
1 can (28-ounce San Marzano plum tomatoes, undrained)
Salt and freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
2 tablespoons chiffonade of fresh basil

Steps:

  • Peel and devein the shrimp, leaving the tails on and arrange on a large platter. Cut the scallops into quarters and add to the platter with the shrimp.
  • Clean the squid if necessary, then slice the tubes into rings. Trim any tough parts from the top of the tentacles and add to the platter.
  • Cut the tilapia fillets in half lengthwise, then into bite-sized pieces. Add to the platter, cover it with plastic wrap and refrigerate until ready to use.
  • Rinse the clams and mussels under cool running water. Trim any "beards" protruding from the mussels with a sharp knife or kitchen shears.
  • Add 1/2 cup of the wine to a deep, 6 to 7 quart pan. Cover and heat to boiling. Add the clams, cover and cook until all the shells have opened. Using tongs, transfer to a bowl and set aside. Be sure to discard any clams that don't open.
  • Add the remaining wine to the pan and return to boiling. Add the mussels and cook until all the shells open. Transfer 24 of the mussels to the bowl with the clams and set aside. Be sure to discard any mussels that don't open.
  • Remove the meat from any remaining mussels, place in a small bowl, set aside and discard the empty shells. Strain the broth from the pan into a separate bowl and set aside.
  • Put a large pot of salted water on to boil for the linguine.
  • Heat the olive oil in the pan you cooked the mussels in over medium heat. Add the garlic and onion and cook, stirring frequently, until soft and lightly golden - do not brown. Add 1/2 cup of the reserved mussel liquid along with the tomatoes and their liquid.
  • Using a wooden spoon, break the tomatoes into small pieces. Bring the mixture to a simmer, season to taste with salt and freshly ground black pepper and add the crushed red pepper. Simmer until the sauce has thickened slightly, 10 to 12 minutes.
  • Begin cooking the pasta according to package directions.
  • Keep the sauce simmering and add the squid and shrimp. Stir to coat them with sauce and cook just until you see the shrimp start to turn pink, about 1-1/2 minutes.
  • Add the tilapia and shelled mussel meat, coat with sauce again, and continue cooking until the fish begins to turn opaque, 1-1/2 minutes longer.
  • Gently mix in the scallops and place the clams and reserved mussels in their shells on top. Cover the pan and cook for an additional 1 to 2 minutes. Remove from the heat and stir in the basil.
  • Drain the pasta, toss with a little olive oil and arrange on a very large serving platter or divide amongst individual dinner plates.
  • Using tongs arrange the clams and mussels around the edges of the plates or serving platter. Spoon the seafood-sauce mixture over the pasta and serve immediately.

12 Manila or littleneck clams
10 ounces linguine
3/4 cup tomato sauce
12 black mussels
8 shrimp, shelled (tail intact) and deveined
4 sea scallops, quartered
5 ounces calamari, cut into thin rings
1/4 cup fresh flat-leaf parsley, coarsely chopped

Steps:

  • Boil water in a large pot. Heat oil in a large sauté pan over medium heat. Cook garlic until it sizzles. Add red pepper flakes to taste; cook 1 minute. Add wine and clams; cover. Raise heat to medium-high; cook 5 minutes. Add linguine to boiling water. Cook until al dente. Uncover sauté pan; simmer 1 minute more. Add tomato sauce. Season with salt and pepper. Add rest of seafood. Cook, stirring, until clams and mussels open, about 3 minutes. Toss with linguine. Add parsley; toss. Divide among 4 bowls.

½ pound medium shrimp - peeled and deveined
½ pound scallops
2 tablespoons butter
1 onion, chopped
1 clove garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
2 tablespoons all-purpose flour
½ pound imitation crabmeat
2 cups milk
salt and pepper to taste
1 pinch dried marjoram
1 pinch dried basil leaves
1 pinch dried tarragon
10 ounces dry fettuccini noodles

Steps:

  • Bring a large pot of lightly salted water to a boil. Drop in shrimp and scallops and simmer for 10 minutes; remove the seafood and reserve the seafood water or broth in another bowl.
  • In the same saucepan, melt the butter and add onion, garlic, red bell pepper and green bell pepper; saute and stir until transparent, but do not brown.
  • Add flour and mix well until all the vegetables are coated; add some seafood broth slowly, but stirring constantly. Add the imitation crabmeat and mix; add the milk and salt and pepper to taste and mix.
  • Add the marjoram, basil and tarragon and simmer very gently; stir constantly until the wanted thickness is obtained. Take off of heat and reserve.
  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 6 to 8 minutes or until al dente; drain and cover with the seafood sauce. Serve.

This is possibly my most favorite food. It is spicy, succulent, and comforting - down to the very last linguine noodle! I've had many versions of this, and sometimes leave out the mussels, since I don't always like their taste/texture. You can also find canned clams, but you should really wash them thoroughly, as they will be very salty!

1 tablespoon olive oil
2 garlic cloves, sliced, to taste
1 tablespoon crushed red pepper flakes, to taste
1/2 cup dry white wine
12 littleneck clams
10 ounces linguine
3/4 cup tomato sauce
12 black mussels (optional)
8 shrimp, shelled (tail intact)
4 sea scallops, quartered
5 ounces calamari, cut into thin rings
1/4 cup fresh flat-leaf parsley, coarsely chopped

Steps:

  • Boil water in a large pot.
  • Heat oil in a large pan over medium heat, and sauté garlic until it sizzles.
  • Add red pepper flakes to taste; cook 1 minute.
  • Add wine and clams (in shell or from can, after rinsing); cover. Increase heat to med-high; cook 5 minutes.
  • Now it's time to boil the linguine! Cook until al dente. Uncover sauté pan; simmer 1 minute more.
  • Add tomato sauce. Season with salt and pepper.
  • Add shrimp, calamari, scallops, and mussels (if using). Cook, stirring, until clams and mussels open, about 3 minutes. Toss with linguine. Add parsley; toss.
  • Serve very hot!

EASY LINGUINE DEL MAR



Easy Linguine Del Mar image

This meal is inspired by the traditional Linguine Del Mar of any Italian restaurant, the twist is that it won't cost fancy restaurant prices to make!

1/2 lb linguine (or any other fav pasta)
2 (6 ounce) cans tuna fish (the albacore in water is the best, but the dark tuna is okay too)
1/2 red onion (chopped)
3 tablespoons olive oil
1 1/2 cups spaghetti sauce (I enjoy either Paul Newman's or Classico's marinera or tomato and basil sauces)
2 garlic cloves (chopped)
1/2 cup parmigiano

Steps:

  • Cook pasta as directed on the box but don't drain until the sauce is done and your ready to serve!
  • Drain the water from the two cans of tuna and set aside.
  • Warm a large skillet over med-low with olive oil.
  • Once the oil is hot (sizzles when you flick water on it) add your chopped garlic and onions and saute (approx 4 min or until onions caramelize).
  • Add both cans of tuna to the skillet, and allow to brown stirring occasionally with a wooden spoon or similar tool (approx 2 min).
  • Add your spaghetti sauce to the skillet and fold the onions and tuna into the sauce so that it is evenly coated.
  • Once the sauce begins to bubble turn your flame down to low and cover, let simmer for 2min.
  • Drain pasta and return to pot, add the sauce from the skillet and the parmigiana cheese.
  • Bon Apetite!

1 pound linguine
2 tablespoons salt, plus 1 1/2 teaspoons
6 tablespoons extra-virgin olive oil
1 cup finely chopped yellow onion
2 tablespoons thinly sliced garlic
1/2 teaspoon Italian Essence
1 teaspoon crushed red pepper flakes
1 cup dry white wine
2 tablespoons tomato paste
1 (28-ounce) can crushed tomatoes
1 pound rock shrimp, peeled and deveined
1 pound small clams, such as littlenecks, or cockles, scrubbed and purged in salted water, any open or broken clams discarded
1 pound mussels, scrubbed and debearded
1/4 cup chopped fresh basil leaves
2 tablespoons chopped fresh parsley leaves
1/3 cup grated Parmesan

Steps:

  • Set a large, 1-gallon stockpot filled with water to a boil and season with 2 tablespoons of the salt. Add the linguine to the pot and stir until the water returns to a boil.
  • Once the pasta is cooked, but still slightly firm, or al dente, remove from the heat and drain, reserving 1/2 cup of the pasta cooking water separately. Place the linguine in a large, warmed bowl and drizzle with 2 tablespoons of the olive oil. Wrap with plastic and set aside as you finish the sauce.
  • While the linguine cooks, make the sauce. Set a large, 14-inch saute pan over medium-high heat. Add the remaining 4 tablespoons olive oil and the onions. Saute the onions until lightly caramelized, about 3 to 4 minutes. Add the garlic, Essence and red pepper flakes to the pan. Toast the garlic until browned, about 30 to 45 seconds. Add the white wine to the pan and cook until nearly completely reduced, about 2 minutes. Add the tomato paste, crushed tomatoes, reserved pasta cooking water, and remaining 1 1/2 teaspoons salt to the pan. Bring to a boil, cover, and cook until the sauce is slightly thickened, about 4 to 5 minutes. Add the shrimp, clams, mussels and basil to the pan, cover, and cook until the clams and mussels open, about 4 to 5 minutes. Toss to combine, and remove the sauce from the stove. Add the pasta sauce and parsley to the cooked pasta and toss to combine. Serve with Parmesan for garnishing.

3 teaspoons garlic powder
¼ cup olive oil

½ cup broccoli florets
½ cup thinly sliced carrots
1 cup sliced fresh mushrooms
1 cup canned shrimp
1 cup crab meat, drained

salt to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 6 to 8 minutes, or until al dente. Drain.
  • Meanwhile, in an electric frying pan, or large skillet saute the red onion and garlic in olive oil. When onion is translucent, add the milk. Cook until bubbles form around the edges of the pan. Add the parsley, chopped green and red bell pepper, broccoli, carrots, mushrooms, shrimp, crab, and scallops and stir until well incorporated.
  • Remove 1/2 cup of milk from the mixture and place in a small bowl with the flour. Stir until smooth. Add back to skillet with seafood and vegetables. Allow mixture to thicken. Season with salt and pepper to taste.
  • Pour seafood sauce over drained and cooked linguini noodles. Serve warm.

1 red bell pepper, diced
1 small onion, diced
1 teaspoon minced garlic
1 (15 ounce) can diced tomatoes with their liquid

1 lb cod fish fillet

8 taco shells (hard or soft, regular or whole wheat)

Steps:

  • In a large skillet, heat the oil over medium heat; add the peppers, onions, and garlic; saute them until they are tender and just starting to brown, 5-8 minutes.
  • Stir in the tomatoes with their liquid and the cumin and bring the mixture to a low boil.
  • Place the fish on top of the mixture, sprinkle it with the lime juice, and season it with salt and pepper.
  • Cover, reducing the heat enough to keep the sauce simmering, and cook it for 15 minutes, until the fish is opaque and flakes very easily.
  • Pull the fish apart into chunks and serve, using a slotted spoon, so the tacos don't get too drippy.
  • Serve fish in taco shells, with your favorite taco add-ins such as guacamole, shredded Cheddar, sour cream, chopped lettuce, etc.

2 good size lobster tails
1 pkg 8 oz.favorite pasta
1/3 c butter
2 Tbsp flour
3/4 c whipping cream
1/3-1/2 c parmesan cheese

  • 1. cook the pasta according to package instructions; saute the seafood in order; lobster, shelled and devained shrimp, fish scallops, and crab

2/3 lb large shrimp, peeled and cleaned
2/3 lb scallops, quartered
2/3 lb salmon, skinned and pin-boned
1 tomatoes, chopped
1 mango, peeled and cubed
1/4 red onion, chopped
1 jalapeno, seeded and finely chopped
1 cup lime juice
2/3 cup orange juice
1/2 cup loosely packed coriander leaves, chopped
1 tablespoon powdered sugar
1 large oranges or 1 large pink grapefruit, peeled and segmented
popcorn, seasoned with chilli, cumin and salt

Steps:

  • 1. Boil water. Blanch prawns for 30 seconds then transfer to ice water immediately. Drain.
  • 2. Combine all seafood with tomato, mango, onion and chilli in a large bowl and cover with lime and orange juice. Toss gently and ensure all seafood is submerged in juices.
  • 3. Cover and refrigerate for 3 hours.
  • 4. Drain seafood and discard marinate.
  • 5. Add coriander, sugar and orange/grapefruit, season to taste.
  • 6. Spoon into serving bowls and top with coriander. Pass popcorn separately.
  • Note: I used Moreton Bay bugs instead of the salmon.

3 tablespoons olive oil
2 cloves garlic, minced
½ teaspoon Italian seasoning
¼ teaspoon dried thyme
¼ teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can black olives, drained
1 (10 ounce) can (10 ounce) can whole baby clams
1 (6.5 ounce) can minced clams, with juice
¼ pound small salad shrimp
¼ pound scallops
2 ½ teaspoons lemon zest
salt to taste
ground black pepper to taste

Steps:

  • In a large pot of boiling salted water cook linguini until al dente. Drain.
  • Meanwhile, in a heavy saucepan over medium heat saute garlic in olive oil until garlic softens. Add Italian seasoning, thyme, crushed red pepper flakes, crushed tomatoes, black olives, and the juice from both cans of clams. Simmer for 15 minutes. Mix in canned clams, shrimp, scallops, lemon zest, and salt and pepper to taste. Simmer for an additional 15 minutes or until shrimp and clams are cooked.
  • Toss cooked and drained linguine pasta over seafood sauce. Serve warm.
