FRIED CABBAGE AND KIELBASA
Fried Cabbage and Kielbasa is an easy and flavorful, budget-friendly meal, that is ready in just about 30 minutes.

Steps:
- Slice the cabbage in half, remove and discard the core and cut into thin strips.
- Place a cast iron or other heavy large pan over medium-high heat, and once hot add the olive oil.
- Add sliced onion and cook until soft, about 3-4 minutes, stir a few times.
- Add garlic, cook stirring another minute.
- Add cabbage, salt, pepper, and paprika to the pan and toss. Cook until cabbage reduces by half, for about 10 minutes, stirring occasionally.
- Add Worcestershire sauce. Stir and add sliced kielbasa or sausage.
- When the cabbage is tender and slightly translucent, and kielbasa has browned a bit, remove from heat.
- Garnish with parsley and serve.

GRILLED KIELBASA WITH CABBAGE AND BEAN SLAW

- Mix the vinegar, brown sugar, 2 tablespoons water and 1 1/4 teaspoons salt in a large bowl. Add the black-eyed peas and red onion, toss well and set aside to marinate.
- Meanwhile, preheat a grill to medium. Brush the cabbage wedges all over with 2 tablespoons olive oil and season with salt and pepper. Grill the kielbasa and cabbage, turning halfway through, until charred and the cabbage is crisp-tender, 8 to 10 minutes.
- Chop the cabbage into bite-size pieces and add to the black-eyed pea mixture. Stir in the parsley and remaining 1 tablespoon olive oil; season with salt and pepper and toss. Divide among plates. Slice the kielbasa and add to the plates. Serve with mustard.

- Swirl a small amount of olive oil into a large skillet.
- Slice or dice kielbasa into bite size pieces.
- Add kielbasa, onion, garlic and carrots to oil.
- When kielbasa starts to brown, add cabbage to skillet.
- When cabbage starts to caramelize, add red pepper flakes.
- If desired, top with a dollop of sour cream.
- Easy and can be adapted to your family's taste. Sometimes we add more kielbasa or carrots.

- If you haven't already, slice the sausage, core and chop the cabbage, chop the onion and mince the garlic.
- Place a deep large skillet or Dutch oven over medium high heat. Pour in half the oil and toss in the sausage. Saute for about 5-6 minutes to render fat and lightly brown the edges of kielbasa slices. Remove the sausage to a bowl, leaving the fat in the pan.
- Dump the onion and garlic in the pan along with the whole grain mustard, salt and pepper. Saute for about 2 minutes.

- Wash the cabbage under running water. Even though the inside is usually clean (the outer leaves protect the inside), you might want to clean it anyway. Remove the tough outer leaves and discard them. Separate the inner leaves and wash them under running water.
- Peel an onion and dice it finely. Finely chop the garlic with a knife. Cut kiełbasa sausage into chunks (rounds or cubes). Chop the bacon into pieces.
- Add bacon and kiełbasa pieces to the deep frying pan (or a cooking pot with a thick bottom). Cook over a low heat for a few minutes. There should be enough fat rendering, so there is no need to add any more. If you feel that it’s too dry, add a little bit of lard or oil.
