Special K Cereal Biscotti Food
SPECIAL K CEREAL BISCOTTI
fast and easy, crispy and crunchy, has a nice simple flavour...this has been our family favourite for 20 years....these are made with the regular first type of cereal. I have made these with all the other special K cereals with larger flakes and they just arent the same in texture or taste.

Steps:
- Combine the eggs and sugar in a mixer until fluffy.
- Add in the oil, beating well.
- Add in all the dry ingredients, combine well.
- Fold in all the cereal and nuts, combining with clean hands.
- Spread onto parchment lined cookie sheet into logs and flatten the tops slightly.
- Preheat oven to 350°F and bake 15 minutes.
- Turn oven off and leave in for another 15 minutes.
- Remove then from oven, onto a wire rack and cool 10 minutes.
- Reset oven to 325°F.
- Cut into slices with serrated knife and place back onto parchment lined sheets cut side down.
- Bake 7 minutes.
- Turn each slice over.
- Bake another 9 minutes.
- Until golden and toasty.

Steps:
- 1. Stir together 1 cup of the crushed KELLOGG'S SPECIAL K cereal, flour, baking powder and salt. Set aside.2. In large mixing bowl, beat margarine and sugar until light and fluffy. Add egg and vanilla. Beat well. Add flour mixture. Mix until well combined. Portion dough using rounded measuring teaspoon. Shape into balls. Roll in the remaining 1/2 cup crushed cereal. Place about 2 inches apart on ungreased baking sheets.3. Bake at 375°F for 10 minutes or until lightly browned. Remove immediately from baking sheets. Cool on wire racks.VARIATIONS:CHOCOLATE: Stir in 1/2 cup semi-sweet chocolate chips with the KELLOGG'S SPECIAL K cereal.COCONUT: Stir in 1/2 cup shredded coconut with the KELLOGG'S SPECIAL K cereal.DATE: Stir in 1/2 cup cut dates with the KELLOGG'S SPECIAL K cereal.

Steps:
- Blend syrup, sugar, vanilla and salt in a 2 quart microwave-safe dish. Cook on high 4 minutes, or until mixture boils and sugar dissolves.
- Stir in peanut butter, then add the cereal.
- Drop by teaspoonfuls onto waxed paper. Let cool before storing.
