- Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.

- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
- Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.

- Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
- Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
- In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
- Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
- Sauté all of the bell peppers, onion, and garlic for about 2 minutes.

- Simmer about 10 minutes.

My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. - Divide onto two half-sheet pans. Bake, uncovered, for about 1 hour, stirring every 30 minutes or so, or until everything is nicely browned, and the potatoes are fork tender. - Preheat oven to 350°F.
- Take a 13x9-inch baking dish coat with olive oil just a enough so sausage doesn't stick.
- Poke holes in all sides of the sausage and place in dish, bake for 1 hour until nice and brown, turning once.
- Peel potatoes and cut into chunks not to big, and place in a pot of water. when it comes to a boil, boil for 20 minutes or so until potatoes are soft but still firm.

- Place dish uncovered back in oven until peppers, onions and potato are brown, about 35 minutes. Stir occasionally.
- Serve with garlic bread or Italian bread!

- In a large skillet with a tight fitting lid, fill half full of water.
- Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
- Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
- Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.
- Add butter to pan and add seasoned salt, garlic powder, oregano and paprika. Place drained partially cooked potatoes in butter mixture and toss lightly to coat both sides then cook until potatoes are browned and cooked through, turning occasionally to brown both sides.
- Add the sausage, peppers and onions back with the potatoes and stir lightly without breaking up the potatoes and serve.

This is a variation of Cousin Frank's Family Heirloom Polish Sausage that I came up with when my daughter saw an article about tree-trimming parties in BH & G and insisted we had to have one. - Bring to a boil and simmer until no longer pink inside.
- While the sausage is cooking, seed the peppers and cut into one-inch chunks.
- Open the tomato sauce and stir in garlic and seasoning.

- Add the seasoned peppers and onions into 9x13 pan. Scatter. Add the seared sausages on top of vegetables. Take any excess veggies from the sides and tops of the dish and place them on top of the sausages. If you didn't add the minced garlic yet do so now. Add the minced garlic on top of the veggies. Cover and bake for one hour. *See notes for slow cooker. Remove the foil and bake for an additional 20 mins. Serve hot with the optional sliced fried potatoes.

- In the same pan, melt the butter and add more olive oil if needed. Add the onion and bell peppers to the pan. Cook for a couple of minutes until slightly soft but not completely done. Add the garlic, oregano, basil, salt, chicken broth or cooking wine, and diced tomatoes. Return the sausage back to the pan and cook until sausage is done, covering for a couple of minutes. Serve immediately.
