EASY HOMEMADE STUFFING

Easy Homemade Stuffing image

If you make your own bread, then you will love this easy, versatile recipe. Cook time is for baking the bread and adding the liquids. The bread can be made in 1 hr flat from first ingredients to finish baking. You can also adjust spices and make croutons for salads too! You can vary the size of the cubes, etc.

Time 1h

Yield 4-12 serving(s)

Number Of Ingredients 14

2 (1/4 ounce) packages active dry yeast or 2 tablespoons active dry yeast
1 1/2 cups water
1/4 cup sugar
1/4 cup oil
1 teaspoon salt
5 cups flour
4 tablespoons instant minced onion
1 teaspoon garlic powder
3 tablespoons parsley flakes
1 1/2 teaspoons poultry seasoning
1/2 teaspoon pepper
1 cup water
1 -2 bouillon cube
1 -4 tablespoon margarine

Steps:

  • Heat water between 105-115°F.
  • I use water out of the tap, and let it run until I just can't keep my hand under any longer!
  • Dissolve yeast in water in a large mixing bowl.
  • Stir in sugar, oil and salt.
  • Stir in 2 cups flour until smooth.
  • Cover with a dish cloth and set in a warm place to rise for 15 min or until double in size.
  • Stir down and add spices; stir.
  • Add 2 1/2 cups flour, and stir to combine.
  • Place 1/2 cup flour on your clean dry kneading surface.
  • Turn dough onto surface and knead until most of the flour is worked in, or to a nice smooth consistency, 3-8 minutes.
  • Cut in half and form into 2 loaves.
  • Place in loaf pans sprayed with oil.
  • Allow to rise, covered, for 20 min or until doubled in size.
  • Bake at 425°F, or until it is lightly browned and sounds hollow when tapped on top.
  • Take out of pans immediately and allow to cool.
  • When cool, cut into slices, and cubes.
  • Put on a baking sheet.
  • Bake at 300°F for 1 hr or until lightly browned.
  • Stir occasionally.
  • Store in airtight container until you are ready to use.
  • To make stuffing: 4 cups croutons to 1 cup water, 1-2 bouillon cubes, and 1-4 T margarine.
  • This recipe makes 12 cups croutons, or there about, so if you are making the whole recipe, triple the liquids.
  • You may add extra water if it isn't moist enough.

"SIMPLE IS BEST" DRESSING

Categories     Thanksgiving     Bon Appétit     Side     Stuffing/Dressing     Herb     Onion     Bake     Celery     Peanut Free     Tree Nut Free     Soy Free     Vegetarian

Yield 8-10 servings

Number Of Ingredients 12

¾ cup (1½ sticks) unsalted butter plus more for baking dish
1 pound good-quality day-old white bread, torn into 1" pieces (about 10 cups)
2½ cups chopped yellow onions
1½ cups ¼" slices celery
½ cup chopped flat-leaf parsley
2 tablespoons chopped fresh sage
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2½ cups low-sodium chicken broth or vegetable broth, divided
2 large eggs

Steps:

  • Preheat oven to 250°F. Butter a 13x9x2" baking dish and set aside. Scatter bread in a single layer on a rimmed baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Let cool; transfer to a very large bowl.
  • Meanwhile, melt 3/4 cup butter in a large skillet over medium-high heat; add onions and celery. Stir often until just beginning to brown, about 10 minutes. Add to bowl with bread; stir in herbs, salt, and pepper. Drizzle in 1 1/4 cups broth and toss gently. Let cool.
  • Preheat oven to 350°F. Whisk 1 1/4 cups broth and eggs in a small bowl. Add to bread mixture; fold gently until thoroughly combined. Transfer to prepared dish, cover with foil, and bake until an instant-read thermometer inserted into the center of dressing registers 160°F, about 40 minutes. (Note: Dressing can be made one day ahead up to this point. Uncover the dressing, let cool, then cover again and chill. The next day, proceed with the final bake as described below.)
  • Bake dressing, uncovered, until set and top is browned and crisp, 40-45 minutes longer (if chilled, add 10-15 minutes).

  • Melt 8 tablespoons of the butter over medium heat in a large, high sided skillet or Dutch oven. Add the chopped onion and celery and cook, stirring occasionally, until soft, about 6-7 minutes. Season with the kosher salt and black pepper and remove from the heat.
  • Add the dried bread cubes to a large mixing bowl with the sautéed onion and celery. Sprinkle with the dried poultry seasoning and drizzle with the chicken broth. Gently toss until the ingredients until mixed.
  • To bake outside the bird, prepare a baking dish with the 1 tablespoon reserved butter and spoon the stuffing in the dish. Drizzle with an additional 1/4 cup of chicken broth and dot with and additional 2 tablespoons of butter to keep moist, cover with foil and bake at 400°F for 20-25 minutes. Remove the foil and bake for an additional 10-15 minutes or until golden brown.
  • To bake inside the bird, spoon 3-5 cups of the stuffing into the bird's cavity, stuffing it loosely but not overfilling, then follow your bird's cooking directions. Be sure the internal temperature of the stuffing comes to 165°F on an instant read meat or food thermometer before serving.
