4 cups cut fresh green beans (2-inch pieces)
1/2 cup sliced fresh mushrooms
2 tablespoons chopped onion, optional
1 garlic clove, minced
2 tablespoons olive oil
1/3 cup sliced water chestnuts
1/4 teaspoon Italian seasoning
1/4 teaspoon salt, optional
1/8 teaspoon pepper
2 tablespoons shredded Parmesan cheese

Steps:

  • Place beans in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer until crisp-tender. , Meanwhile, in a skillet, saute mushrooms, onion if desired and garlic in oil until tender. Stir in water chestnuts and seasonings; heat through. Drain beans and stir into skillet. Sprinkle with Parmesan cheese. Serve immediately.

This is a flavorful, simple way to dress up plain steamed green beans for an easy side dish that practically cooks itself while you are getting the rest of the meal together.

1 pound fresh green beans, trimmed
3 tablespoons olive oil
3 cloves garlic, sliced
1 pinch salt
1 pinch ground black pepper
2 tablespoons white wine vinegar
3 tablespoons freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Set a steamer basket insert into a large saucepan and fill with water to a level just below the steamer. Bring to a boil. Add green beans, and steam to your desired degree of tenderness, or about 5 minutes.
  • Once the beans have cooked, transfer them to a serving bowl. Toss with olive oil, garlic, salt, pepper, white wine vinegar, and Parmesan cheese. Let stand for 10 minutes. Remove garlic slices and garnish with parsley before serving.

These are so yummy--and oh so easy! I like to use frozen whole green beans versus the cut ones. If you can find the slender whole beans, that's even better! These can be made with fresh beans too, but you have to adjust the cooking time. Being that fresh bean season is so short, I usually use the frozen. For the sliced almonds, I really love "Roasted Garlic Caesar" Almond Accents made by Sunkist. These can usually be found in the produce or salad dressing section of your grocery store.

1 (16 ounce) bag frozen green beans
1 tablespoon olive oil
1/2 cup water
1 tablespoon powdered chicken base
1 tablespoon instant minced onion
garlic pepper seasoning
2 tablespoons toasted sliced almonds
1 tablespoon bacon bits

Steps:

  • Heat oil in skillet. Add beans and stir fry for 2 minutes.
  • Add water, chicken base, and dried minced onion.
  • Bring to boil, then turn down heat to simmer covered for about 5 minutes.
  • Uncover, stir in bacon bits, and cook for another minute or until water is almost evaporated from pan.
  • Season to taste with garlic pepper seasoning.
  • Stir in almonds.

1/4 cup unsalted butter, cubed
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon italian seasoning
1/2 teaspoon fresh lemon juice
1/2 teaspoon lemon zest, minced

Steps:

  • Put beans in a steamer & bring water to a boil, then steam 8 to 10 minutes or until just crisp tender.
  • Meanwhile, in a small saucepan, heat the rest of the ingredients until butter is melted.
  • Put beans in a serving bowl & drizzle them with the butter mixture, tossing to coat.

Place a large colander over the water, then place the green beans inside, and cover the pot with a lid.
  • Once the green beans are soft, melt the butter in a skillet over medium heat. Once melted, add the minced garlic and transfer the beans to the hot skillet. The garlic will become fragrant thanks to the heat and can easily burn, so work quickly. I use tongs to do this. I also gently shake off any excess water before adding the beans to the skillet.
