JAPANESE STYLE CUCUMBER AND RADISH SALAD
Inspired by sunomono a Japanese salad often made with cukes and daikon radish. Posted for ZWT2. Cooking Light/June issue. Cooking time is time chilling!

Steps:
- Combine onion, radishes and cucumber in a medium bowl.
- Combine vinegar and next 4 ingredients in a small bowl; stir until well blended.
- Drizzle vinegar mixture over cucumber mixture, tossing to coat.
- Cover and chill 15 minutes.
- Sprinkle with sesame seeds before serving.
CUCUMBER, RED ONION, AND RADISH SALAD
From Bon Appetit Weekend Entertaining, this sounds really fresh and good. The oil sounds like it's a little on the heavy side to me, so think that I will cut back on that and give it a shot by taste and consistency.

Steps:
- Combine first 3 ingredients in large bowl. (Can be prepared 3 hours ahead. Cover; chill).
- Whisk oil, vinegar, sugar and red pepper to blend in small bowl.

Steps:
- Place cucumbers, radishes, onion, tomatoes, salt, pepper, garlic clove, 1-bay leaf in a salad bowl and toss salad.
- In a small saucepan add rice vinegar, bay leaf and bring boil. Wisk in sugar until completely disolved. Pour warm dressing over salad. Season salad with sea salt and black pepper. Toss salad until completely coated.
- Chill salad for 15-minutes before service.
- Remove garlic clove and bay leaves. Add 2 tablespoons chives. Season with salt and pepper to taste. Serve salad on a chilled plates.
- Garnish salads with fresh chopped chives.

ROCK {RADISH,ONION,CUCUMBER,KOHLRABI} SALAD
These vegetables seem to go together for taste and crunch, especially in the summer. I like to use my dressing but you could use any that might have a little sweetness to it.It is good with any dressing.

Steps:
- Take a fork and tine the cucumber peel of each cucumber down lengthways on all side of the cucumber. This will create a design of thin ridges down the peel. Slice in thin rounds.
- Put all of the cut and sliced vegetables in a large serving bowl.
- Sprinkle with salt or salt substitute. Let set.
- In a mixing bowl combine the mayonnaise, sour cream, sugar, celery seed and lemon juice. Stir until mixed.
- Note: cut the sugar in half if you use Miracle Whip Salad dressing.
- Pour out any water that has accumulated in the bottom of the vegetables. Drain well.
- Add your dressing or any dressing of your choice. Toss and serve.
- Wonderful to eat with mashed potatoes.
- Fix the potatoes the way you like them and this salad for a wonderful meatless meal.

Steps:
- Halve cucumber lengthwise; seed and thinly slice crosswise. Place in bowl.
- Peel and halve carrot; thinly slice crosswise and add to cucumber. Add radish and onion. (We used fresh mushrooms instead of onion).
- Whisk together oil, vinegar, sugar, soy sauce, sesame oil and hot pepper sauce; add to cucumber mixture and toss to coat. (We left out the sugar and used tahini as a substitute for the sesame oil).
