PEANUT BUTTER PANCAKES

Steps:
- In a large bowl, combine pancake mix and sugar. In a small bowl, beat egg and peanut butter; add milk and water. Stir into dry ingredients just until moistened., Pour batter by 1/4 cupfuls onto a lightly greased medium-hot griddle. Turn when bubbles form on top of pancakes; cook until second side is golden brown. In a small bowl, combine butter and honey until smooth. Serve with pancakes. If desired, top with chopped peanuts and maple syrup.

FLUFFY PEANUT BUTTER PANCAKES
Steps:
- Gather the ingredients.
- In a medium bowl, whisk flour, sugar, baking powder, baking soda, and salt.
- In a small bowl or measuring cup, combine buttermilk, egg, peanut butter, and melted butter.
- Pour buttermilk mixture over flour mixture, and stir until just mixed. It's OK if there are a few lumps (overmixing will cause your pancakes to be flat and dense).
- Heat a medium skillet over medium heat. Coat pan with a pat of batter, and drop 1/4 cupfuls of batter onto the hot skillet or griddle. Cook, turning once, until cooked through, 2 to 3 minutes per side.
- While pancakes are cooking, make the syrup. Combine the creamy peanut butter, maple syrup, and vanilla in a bowl. Stir until smooth.
- Serve pancakes topped with peanut butter syrup and add chocolate chips, honey-roasted peanuts, and whipped cream, if desired.

CREAMY CRUNCHY PEANUT BUTTER PANCAKES
I found this in 'Better Homes and Gardens' magazine this month (Jan 07). While I don't stray from my pancake recipe often, I had to try this one. It's a PB-lover's pancake and the crunchiness is the best part:).

Steps:
- In a large bowl, combine dry ingredients.
- In a medium bowl whisk eggs and peanut butter until combined; then gradually add milk until thin and smooth.
- Pour wet mixture into dry and stir just to combine. (will still be lumpy) **I added a bit more milk now, as I don't like my pancakes this thick**.
- Gently stir in the chopped peanuts.
- Place a greased griddle over medium heat.
- When hot, cook the pancakes until golden brown.
- 1/4cup-sized pancakes should take 1-2 minutes per side and will yield about 16.

- Add all ingredients to the container of an electric blender.
- Process until smooth.
- Heat a lightly greased griddle or large skillet.
- Pour 1/4 cup batter onto griddle for each pancake.

PEANUT BUTTER PANCAKES
These pancakes get their delicious difference from peanut butter. I found this recipe in Taste Of Home Quick Cooking magazine. My family liked these pancakes. When I made them I added a scoop of protein powder to bump up my protein. The batter was a bit stiff looking so I added 1/8-1/4 cup more evaporated milk to thin out the batter. Make sure your griddle is screaming hot or the pancakes will crumble when flipped. Also I found the pancakes are best cooked for 4 minutes each side. We served our pancakes plain, with the honey butter, and syrup.

Steps:
- Heat the peanut butter, butter and 4 tbsp maple syrup in the microwave, or a pan, for 2 mins, stirring every 30 seconds until smooth and combined. Set aside to cool slightly.
- Mix the flour, baking powder and sugar in a large bowl with a small pinch of salt. Crack in the eggs and whisk until smooth. Add the milk and ¾ of the peanut butter mixture and whisk to combine.
- Heat a splash of sunflower oil and a small knob of butter in a non-stick frying pan until foaming. Add 2 tbsp of batter to make small pancakes, making sure there's space between each. Cook until bubbles start to form on the surface, then flip and cook on the other side. Keep warm in a low oven whilst you make the next batch.
- Serve the pancakes with the remaining peanut butter sauce, maple syrup and fruit, if using. You may have to reheat the sauce to loosen the mixture slightly.
