CHOCOLATE ALMOND HAND PIES

One 14.1-ounce box of 2 pie crusts
All-purpose flour, for dusting
3 ounces cream cheese (a little under half a block), at room temperature
1 cup semisweet chocolate chips
3 tablespoons unsalted butter, melted
One 2-ounce package sliced almonds
2 teaspoons turbinado sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Roll out one pie crust on a work surface lightly dusted with flour and cut into 4 equal wedges with a pizza cutter or knife. Spread 2 teaspoons of cream cheese over each piece, leaving about 1/2 inch bare around the edges. Sprinkle 2 tablespoons chocolate chips over the cream cheese and gently fold the crust over, creating a triangular hand pie. Using a fork, press the edges to seal, and place the pies on a large ungreased baking sheet. Repeat the process with the remaining crust.
  • Brush the butter over each hand pie and lightly press the sliced almonds into the tops of the hand pies in a single layer. Brush the almonds with a little bit of melted butter and lightly sprinkle the turbinado sugar over each hand pie.
  • Bake until the tops are golden brown, 25 to 35 minutes. Let rest a couple of minutes and serve warm or at room temperature

1 cup Cool Whip frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In 3-quart saucepan, heat milk, butter and chocolate over medium heat 5 to 7 minutes, stirring frequently, just until chocolate is melted; remove from heat.
  • In medium bowl, stir chocolate mixture and remaining ingredients except whipped topping with wire whisk or fork until smooth. Pour into pie plate.
  • Bake 40 to 45 minutes or knife inserted in center comes out clean. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. Garnish with whipped topping. Store in refrigerator.

1/2 cup sweetened shredded coconut
1/3 cup cold butter, cubed
1/4 teaspoon coconut extract
3 to 4 tablespoons 2% milk
FILLING:
4 ounces German sweet chocolate, chopped
1/4 cup butter, melted
1 can (14 ounces) sweetened condensed milk
1/2 cup 2% milk
2 large eggs
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup sweetened shredded coconut
1/2 cup chopped almonds
Whipped cream, optional

Steps:

  • Place flour and coconut in a food processor; process until coconut is finely chopped. Add butter; pulse until butter is the size of peas. While pulsing, add extract and just enough milk to form moist crumbs. Shape dough into a disk; wrap in plastic. Refrigerate 1 hour or overnight., Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge., Line unpricked pastry with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack 10-15 minutes or until edges are light golden brown. Remove foil and weights; bake 5-7 minutes longer or until bottom is golden brown. Cool on a wire rack. Reduce oven setting to 350°., For filling, in a large saucepan, melt chocolate and butter over medium heat; cool slightly. Whisk in milks, eggs, vanilla and salt. Pour into crust. Sprinkle with coconut and almonds., Cover edge loosely with foil. Bake 30-35 minutes or until center is set. Remove foil. Cool on a wire rack. If desired, serve with whipped cream.

2 (3.9 ounce) packages instant dark chocolate pudding mix
4 tablespoons shredded sweetened coconut, divided
3 tablespoons mini dark chocolate chips
1 chocolate sandwich cookie crumb crust (such as an OREO® crust)
1 tablespoon slivered almonds
2 cups frozen whipped topping, thawed
1 dark chocolate and coconut candy bar (such as Mounds®), chopped
¼ cup chocolate sauce, or to taste

Steps:

  • Whisk milk and pudding mixes together in a bowl for 2 minutes. Let sit for 5 minutes.
  • Stir in 3 tablespoons coconut and 2 tablespoons mini dark chocolate chips. Spoon mixture evenly into the pie crust. Place in a refrigerator until set, about 20 minutes.

Steps:

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

Steps:

  • Melt marshmallows and candy bars in milk in a double boiler.

  • For the chocolate shortbread crust: Pre-heat the oven to 350°F. Blend the all-purpose flour, cocoa powder, confectioners' sugar and salt in a medium bowl. Then cut in the butter with a pastry cutter or fork until the dough comes together. Press the dough into the bottom and up the sides of a 9-inch tart pan with a removable bottom*, make as even as a layer as possible. Prick the dough with a fork a few times and bake for 15-20 minutes, until the edges are set. If the shell has shrunk or puffed up, use a flat bottomed measuring cup or glass to lightly press the dough back up the sides when just out of the oven. Use caution as the crust will be hot. Allow the crust to cool completely before adding the almond coconut filling.
  • For the almond coconut filling: using a handheld mixer or a stand mixer with the whisk attachment, whip the whipping cream until stiff peaks, approximately 2-3 minutes. Set aside. In another bowl, whip the mascarpone cheese, confectioners' sugar, and coconut and almond extracts on medium until well combined, about 1-2 minutes. {start on low until the confectioners' sugar is blended it, then increase speed to medium}. Then add the shredded coconut and mix until it's evenly incorporated. Finally, using a spatula, fold in the whipped cream until fully combined. Evenly spread the filling into the cooled chocolate shortbread crust and add a layer of sliced almonds. Then chill in the refrigerator while you make the ganache.
  • For the milk chocolate ganache: Add the chopped milk chocolate to a heatproof glass or metal bowl. Heat the cream on the stovetop until just simmering around the edges. Pour the cream over the chocolate, making sure it is completely submerged. Let the cream sit for 2 minutes without disturbing it. Gently stir the cream until it is fully combined with the milk chocolate and the result is a smooth ganache. Let the ganache sit for a few minutes until it's mostly cool and starts to slightly thicken. Pour the ganache over the top of the almond coconut layer, using a spatula to lightly smooth the chocolate to the edges of the pie. Garnish the top of the ganache with toasted coconut**, if desired.

  • Using a food processor, almonds and almond flour together until almonds are coarsely chopped. Add the maple syrup and melted coconut oil. Pulse until the mixture is combined and crumbly. See photo above.
  • Using floured fingers or the bottom of a flat and lightly floured measuring cup, press the dough evenly into a 9-inch tart pan. You want it extremely tight in the pan. Set tart pan on a baking sheet and bake for 10-12 minutes or until lightly golden brown. (Pie weights are optional for pre-baking. I don’t use them with this crust, but you absolutely can!)
