NOODLE STIR-FRY WITH CRUNCHY PEANUTS



Noodle stir-fry with crunchy peanuts image

Need a speedy supper or an easy dinner to feed the kids? This noodle stir-fry with peanuts is ideal. You can always leave out the chilli sauce

2 tbsp crunchy peanut butter
1 tbsp soy sauce
1 tbsp roasted unsalted peanuts , chopped, plus extra to serve
300g pack ready to eat egg noodles
1 tbsp oil
2 eggs , lightly beaten
300g pack stir-fry vegetables
sweet chilli sauce , to serve (optional)

Steps:

  • Mix the peanut butter with the soy sauce and 50ml water, then add the peanuts. Put the noodles in a bowl and cover them with boiling water. Stir them gently so they separate, then drain.
  • Heat ½ tbsp oil in a wok or large frying pan, and pour in the egg. Leave the egg to set, then chop it up with your spatula and tip it onto a plate. Heat the remaining oil in the wok. Stir-fry the veg until starting to wilt, then add the noodles and keep cooking. Return the egg to the wok, then spoon in the peanut mixture and toss. Divide between bowls, then sprinkle over more peanuts. Serve with sweet chilli sauce, if you like.

1 cup packed brown sugar
1 cup cider vinegar
1 cup apricot nectar
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1 cup cubed green pepper
3 tablespoons all-purpose flour
4 tablespoons water, divided
1 tablespoon soy sauce
salt
pepper
1 1/2 lbs halibut steaks, cut into 1 inch pieces
1 tablespoon cornstarch
2 medium tomatoes, seeded and cubed
2 cups pineapple chunks
hot cooked rice

Steps:

  • In a large saucepan, combine the first five ingredients; bring to a boil.
  • Reduce heat; simmer uncovered for 30 minutes.
  • Add the green pepper, cook 5 minutes longer; set aside.
  • In a bowl combine the flour, 3 tablespoons water, soy sauce, salt and pepper.
  • Add halibut; toss gently to coat.
  • Transfer to a broiler pan.
  • Broil 4 inches from the heat for 5-6 minutes or until fish flakes easily with a fork.
  • Set aside and keep warm.
  • Combine cornstarch and remaining water until smooth; stir into green pepper mixture.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Reduce heat to medium; add tomatoes and pineapple.
  • Cook and stir for 4 minutes or until heated through.
  • Serve with halibut over rice.

1/2 lb rice noodles
1 cup chicken stock
1/4 cup orange juice
3 tablespoons granulated sugar
2 tablespoons red wine vinegar
2 tablespoons tomato paste
2 teaspoons cornstarch
2 teaspoons soy sauce
1 teaspoon ground ginger
2 garlic cloves, minced
2 teaspoons vegetable oil
4 halibut fillets (1 1/2 lb total)
1 sweet red pepper, diced
2 cups mushrooms, quartered
1 zucchini, diced

Steps:

  • Soak noodles in bowl of boiling water until tender (about 6 minutes); drain and set aside to chill in cold water.
  • Meanwhile, in separate bowl, combine stock, orange juice, sugar, vinegar, tomato paste, cornstarch, soy sauce, ginger and garlic. Set aside.
  • In large nonstick skillet, heat 2 tsp of the oil over medium high heat.
  • Fry halibut, turning once, until golden and flaky (about 6 minutes).
  • Add stock mixture. Boil until thickened, about 2 minutes.
  • Meanwhile, in separate skillet, heat remaining vegetable oil over high heat. Stir-fry red pepper, mushrooms, and zucchini until tender (about 2 minutes).
  • Add noodles and stir-fry until hot.
  • Put the noodle mixture in a bowl and top with fish and sauce.

Lots of veggies and thick Chinese noodles soak up the delicious sauce I was lucky enough to try out in a food demo. Feel free to use your favourite, the Blue Dragon Sweet and Sour variety is similar to thick plum sauce with a touch more heat.

1 tablespoon olives or 1 tablespoon canola oil
1/2 white onion, sliced thinly
2 carrots, julienned
1 celery rib, sliced
1 head broccoli, chopped
8 shiitake mushrooms, stemmed and sliced
1 red bell pepper, sliced into thin strips
1 zucchini, sliced into half-moons
1 garlic clove, minced
1 pinch red pepper flakes
400 g hokkien noodles (such as Ka-Me brand) or 8 ounces whole wheat spaghetti, cooked and drained
1 (140 ml) envelope blue dragon sweet and sour stir-fry sauce
1/4 cup water or 1/4 cup low sodium vegetable broth

Steps:

  • Heat oil in a large non-stick sauté pan over medium heat and add the onion, carrots, celery, broccoli and mushrooms.
  • Cook for 6-7 minutes, until the vegetables begin to soften and the mushrooms begin to brown.
  • Raise the heat and add the pepper strips, zucchini, garlic and pepper flakes and cook 3-4 minutes.
  • Stir in the noodles, Blue Dragon Sweet and Sour Stir Fry Sauce and water or broth. Toss well and simmer 2 minutes. Serve hot.

8 ounces rib eye steaks, thinly sliced and most fat removed
1 bunch spinach
2 carrots, peeled and julienned
5 shiitake mushrooms, stems removed and sliced thinly
3 garlic cloves, minced
1 onion, sliced
6 green onions, thinly sliced
3 tablespoons soy sauce, divided
1 1/2 tablespoons sesame oil, divided
1 tablespoon sugar, divided
16 ounces vermicelli rice noodles
2 tablespoons seasoned rice vinegar

Steps:

  • Bring a pot of water to a boil and add rice noodles. Cook for about 3-5 minutes, then drain and place in large bowl.
  • Add 1 tablespoon of soy sauce and 1 teaspoon of sesame oil. Mix well.
  • Wash the spinach and blanch for about 1-2 minutes. Drain well and mix in with noodles.
  • In a large skillet under medium high heat, add about 1/2 tablespoon of sesame oil and stir-fry the carrots, onions, and garlic. Add that mixture to the noodles.
  • Add beef and mushrooms to same skillet and cook until beef is done. Add 1 tablespoon soy sauce, and 1/2 tablespoon sugar. Stir in the green onions and add mixture to noodles.
  • Finally, add in remaining soy sauce and sugar, 2 teaspoons sesame oil, and rice vinegar. Mix well and serve!

1/4 cup olive oil (extra light)
450 g hokkien noodles (fresh)
3 teaspoons ginger (grated)
2 garlic cloves (minced)
1 carrot (large cut into matchstick strips)
500 g prawns (green or raw peeled deveined)
200 g snow peas (trimmed)
2 tablespoons lime juice (or lemon juice)
1 1/2 tablespoons fish sauce
1 teaspoon sugar
1/2 cup coriander leaves (fresh)

Steps:

  • Steep hokkien noodles in boiling water for 2 minutes, separate and drain.
  • Heat extra light olive oil in a wok or large non-stick frypan and stir fry ginger, garlic and carrot strips for 1 minute and then add prawns and stir fry until just starting to turn pink and then add snowpeas, juice, fish sauce and sugar and stir fry until snow peas are tender and then add noodles and stir fry until heated through and then stir in coriander and serve immediately.

1/2 lb udon noodles or 1/2 lb soba noodles
1 -2 head broccoli
3 carrots, diced
1 tablespoon grapeseed oil
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 cup snow peas, trimmed and strings removed
1 cup pineapple chunk
2 tablespoons rice vinegar
2 tablespoons mirin
2 tablespoons soy sauce, low sodium
2 tablespoons toasted sesame oil
1/4 cup toasted sesame seeds

Steps:

  • Cook noodles according to directions on package.
  • Drain in colander and rinse thoroughly under cold water.
  • Place colander on a plate and refrigerate.
  • Bring 2-3 cups water to boil.
  • Cut broccoli florets into bite-size pieces.
  • Peel and discard tough outer stems and cut remaining stems into chunks.
  • Place prepared carrots and broccoli in bowl, cover with boiling water and let sit 2 minutes.
  • Drain, rinse with cold water and set aside.
  • Heat wok or skillet over medium-high.
  • Add grapeseed oil, garlic and ginger and cook 1 minute.
  • If anything starts to stick, add 1 tablespoon water.
  • Add broccoli, carrots and snow peas, stir and cook 2-3 minutes.
  • Add pineapple, 1 tablespoon vinegar, 1 tablespoon mirin, 1 tablespoon soy sauce and cook 1 minute longer.
  • Remove vegetables from wok and set aside.
  • Pour remaining tablespoon of vinegar, mirin and soy sauce into empty wok.
  • Fold in chilled noodles until evenly coated and heated through.
  • Drizzle with 1 tablespoon sesame oil.
  • Transfer noodles to serving dish.
  • Toss vegetables briefly in hot wok to reheat, drizzle with remaining tablespoon toasted sesame oil and spoon vegetables over noodles.
  • Top with sesame seeds and serve.
