CARAMELIZED VIDALIA ONION DIP

Steps:
- Heat the olive oil in a medium skillet over medium-high heat. Add the onion and saute until beginning to brown, 5 to 7 minutes. Stir in 1/4 cup water and scrape up any browned bits from the bottom of the pan. Turn the heat to low and cook until the onion is golden brown, 30 to 35 minutes, stirring occasionally. If the pan ever looks too dry, add a tablespoon of water. Let cool completely.
- Combine the cream cheese, mayonnaise, sour cream, Worcestershire sauce, garlic salt, onion powder and 1/2 teaspoon pepper in a medium bowl and beat with a mixer until smooth. Stir in the caramelized onion and the scallion. Chill until serving time. Top with more scallions and serve with vegetables for dipping.

- In a large skillet, heat the butter and olive oil over medium-low heat. Throw in the onions, garlic and thyme and cook, stirring occasionally, until the onions are golden brown and soft, 20 to 25 minutes. Stir in the brown sugar until melted. Continue cooking until very deep in color, 5 to 7 minutes more. Remove from the heat and let cool completely, about 20 minutes.
- In the bowl of a food processor, add the ricotta and sour cream and process until smooth. Season with salt and pepper, then add the chives, Worcestershire, 2 tablespoons of the parsley and three-quarters of the caramelized onions, reserving the rest for garnish. Pulse 5 or 6 times, until the onions are incorporated but still have some texture. Taste and adjust the seasoning as needed.
- Transfer the dip to a serving bowl. Top with the reserved caramelized onions and sprinkle over the remaining parsley. Serve with chips, carrots, radishes and sugar snap peas.

CARAMELIZED VIDALIA ONION AND BOURSIN CHEESE DIP
I created this dip for my daughter who loves both onion dip and boursin cheese. I use light ingredients but there is nothing very light about it. I figure cut the fat where you can. Also if Boursin cheese is not available or you would prefer a more economical choice, use the herb and garlic cream cheese for equally good results.

- Saute onion, salt and pepper in the butter on medium low heat until caramelized to a light brown. Do not scorch the onions. Stir often for about 30-40 minutes. Let cool.
- Meanwhile, mix the remaining ingredients in a medium bowl. Boursin cheese can be crumbly so often I will mix these ingredients in a small food processor then add to bowl.
- When onions are room temperature stir them into sour cream mixture and refrigerate for at least 4 hours for flavors to meld.

- Preheat oven to 350 degrees. Use 1 tbsp butter to lightly grease 4 ramekins.
- In a saute pan over medium flame, melt 4 tbsp butter. Add onions and saute until they caramelize and turn golden brown. Cool and transfer to a blender or food processor and puree.
- In a medium bowl, beat the eggs. Then add the cream, salt, baking powder, nutmeg, and flour and mix well.
- Mix the onion mixture into the cream mixture.
- Pour into individual ramekins (about half full). Place ramekins in a roasting pan. Cover the ramekins with foil. Fill the roasting pan with water until the water reaches about half way up the side of the ramekin. Place roasting pan in the oven and bake for about 25 minutes until the pudding is set.
- Remove ramekins from the roasting pan to remove from the oven and let the water in the roasting pan cool before trying to remove. I've made the mistake of trying to remove the ramekins IN the roasting pan-let's just say the water is very very hot.

PAULA DEEN'S CARAMELIZED VIDALIA ONION AND BLUE CHEESE HOT DIP
This is a quick and easy dip to make that everyone seems to love. I used panko bread crumbs because that is what I had in my pantry. I also found that you needed to cut the onion pieces into smaller strips (I took the onion and cut it in half and then half again). I also used Clemson Blue Cheese.

- Preheat oven to 350 degrees. Spray a 8 x 8 inch baking dish with cooking spray. In a large skillet, heat oil and butter. Add garlic and onions. Cook, stirring occasionally, until onions are caramel colored, about 20 minutes.
