This bacon-studded 'cheese corn' is a popular bar snack in Korea, made of pure bacon-y, creamy, cheesy, corny decadence. The original recipe uses a combination of mayonnaise and sweetened condensed milk, but we're going with heavy cream here for a lighter approach. This may be the first time in my career that I've 'lightened up' a recipe by adding a cup of heavy cream. Garnished with green onions, this would be amazing with a cold beer!

1 (8 ounce) package bacon, chopped
2 (16 ounce) packages frozen sweet corn, thawed
4 cloves garlic, minced
1 bunch green onions, sliced
2 jalapeno peppers, diced, or more to taste
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 cup heavy cream
2 ounces shredded mozzarella cheese
4 ounces shredded Monterey Jack cheese

Steps:

  • Cook bacon in a 10-inch cast iron skillet over medium-high heat, stirring occasionally, until almost crisp and fat is rendered, 7 to 8 minutes.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Drain frozen corn thoroughly in a colander. Add 1/2 of the corn to the skillet with the bacon. Cook and stir until kernels just start to turn golden brown, 3 to 5 minutes. Add garlic, green onions, and jalapenos; cook until vegetables start to soften and sweeten up, 3 to 4 minutes. Tilt pan to drain off some of the fat, using a paper towel to soak it up.
  • Season with salt, pepper, and cayenne. Pour in cream; stir and bring to a boil. Stir in the remaining corn until heated through. Turn off the heat and add about 2/3 of the mozzarella and Monterey Jack cheese. Stir to combine. Top corn with remaining cheese and a sprinkle of cayenne.
  • Broil until heated through and top is browned, 5 to 10 minutes. Serve immediately.

½ cup powdered sugar
12 oz. wonton wraps ((packages usually in refrigerated produce section, near tofu))
1 egg (whisked with a splash of water)
48 oz. canola oil (enough to fill a dutch oven or fryer with about 3 inches of oil.)
Nonstick Cooking Spray

Steps:

  • Mix the powdered sugar and cream cheese together until well combined. (You can use a hand mixer or a silicone spatula for this.)
  • Lay out about 4 wontons at a time and cover the remaining with a dish towel (they dry out quickly).
  • Fill a small bowl with water and set near the wontons.
  • Place about a ½ teaspoon of cream cheese mixture in the middle of each wonton.
  • Dip your fingers into the whisked egg/water mixture (i.e. egg wash), and fold the wontons diagonally to form a triangle. Seal and ensure that there are no air bubbles.
  • Dip your fingers back into the water. With the longest side of the triangle facing you, fold the left side to the right, and then fold the left side over it, to the right.
  • Repeat until all wontons are filled and wrapped!

4 ounces cream cheese, Cubed
1 teaspoon white sugar
1/4 cup milk

Steps:

  • Heat oven to 350.
  • Open three cans of corn, and put on the bottom of a 2 quart pan.
  • Cube up the cream cheese and place on top of the corn.
  • Sprinkle the sugar over the top.
  • Open the last three cans of corn and cover the cream cheese.
  • Cover pan with foil, and bake for 25 minutes.
  • Stir after 25 minutes, and add milk.

1 yellow onion, finely diced
1 1/4 cup heavy cream

Steps:

  • Preheat the oven to 325° and have ready a greased, 2-quart casserole dish or baker.
  • Place half of the strained corn into a blender or food processor. Pulse until the corn kernels are broken up. Set aside until ready to use.
  • Add 4 tablespoons of the butter to a large saucepan over medium heat. Do not allow the butter to burn. Add the onion and sauté, stirring often, just until softened -- about 5 minutes.
  • Add the heavy cream and softened cream cheese to the saucepan, and stir until the ingredients have melded and remove from the heat.
  • Add the egg, sugar, salt, pepper, and all of the corn to the saucepan and stir to combine. Transfer contents of the saucepan to the prepared dish.
  • In a microwave-safe bowl, melt the remaining 2 tablespoons of butter. Add the crushed crackers, and stir to combine.
  • Sprinkle the cheese evenly over the corn mixture and top with the crushed crackers. Cover with aluminum foil and bake for 30 minutes. Uncover, and bake for an additional 15 minutes. Allow to cool slightly, serve, and enjoy.

This stupid easy Creamed Corn Casserole recipe is made with a store bought Jiffy cornbread mix, and that's not an apology. It is SO good! If you grew up with this Thanksgiving side dish you know what I'm talking about. It is creamy, corny, custardy, and sweet. It's the perfect compliment to a holiday meal, but I also love serving it with a bowl of chili!

1/2 cup butter ((1 stick))
1 (15-oz) can whole kernel corn (drained)
1 (15-oz) can creamed corn (not drained)
1 cup sour cream
3 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 (8-oz) box Jiffy cornbread mix

Steps:

  • Preheat your oven to 350 degrees F.
  • In a 8x8 or 9x9 inch glass pan, add 1/2 cup butter. Put it in the microwave and melt it right in the pan. (If you only have a metal pan, melt it in a bowl and then transfer to the pan.*) Use a spatula or pastry brush to spread the butter up the sides of the pan, so that it doesn't stick while baking.
  • Open the can of whole corn kernels and drain. I usually just press the lid down on the corn holding it upside down over the sink. Add the drained corn to the butter in the pan.
  • Open the can of creamed corn and dump the whole thing into the pan.
  • Add 1 cup sour cream.
  • Add 3 tablespoons sugar and 1/2 teaspoon kosher salt (add 1/4 teaspoon if using table salt).
  • Add an 8 ounce box of Jiffy cornbread mix.
  • Use a spatula to stir it all together until well combined. Scrape down the edges.
  • Bake at 350 for about 35-40 minutes. The edges should be turning golden brown and pulling away from the sides. When you shake the pan, the center should not be jiggling more than the edges. You can also use the toothpick test, when a toothpick inserted in the center comes out with no wet batter, it's done.
  • Let cool on a wire rack for a couple minutes before serving warm!

2 ears Fresh sweet corn, shucked and removed from the cob
3 tablespoons Red bell pepper, minced
3 tablespoons sweet onion, diced
10 each Fresh basil leaves, chiffonade
Freshly cracked pepper
5 tablespoons unsalted butter
1 1/2 cups heavy cream
1 pinch nutmeg, ground
6 ounces ricotta cheese, room temp
6 ounces cream cheese, room temp
1 package wonton wrappers
2 egg yolks, beaten
3 tablespoons Parmesan, grated

Steps:

  • Special equipment: cookie cutter (3-inch)
  • Melt butter in saute pan, add in corn, red bell pepper and onion. Let saute until onion is translucent and corn has released some of it's sugars. Add in 1/2 of the basil leaves and a couple of twists of black pepper. Add in 1/4 cup heavy cream and reduce by half. Set aside to cool.
  • When cool, smash up a bit with a fork, stir in ricotta and cream cheese. Place wonton wrappers down (three at a time works) and in the center of each, place 1 1/2 t filling. Brush exposed wrapper with egg yolk, carefully place a second wrapper on top and carefully seal edges, making sure to get out any air bubbles. Cut with star cutter, work fingers around edges to make sure seal is tight. Set aside on floured baking sheet and continue to assemble.
  • When finished, boil water and gently add raviolis a few at a time, cooking for 2 minutes or until they float. Carefully remove and drain.
  • For Sauce: In clean saute pan, melt remaining 4 tablespoons butter, when melted, add in remaining basil, saute until crisp and butter is just very lightly browning. Add in remaining cream and reduce to thickened. Salt and pepper to taste, serve over raviolis immediately.
  • Garnish with Parmesan.

  • 1. Preliminaries. About an hour before serving, place the ears of corn in a deep bowl, cover with cold water and weight with a plate to keep them submerged. Light your charcoal fire and let it burn until the bed of coals is medium-hot; adjust the grill 4 inches above the fire.
  • 2. Grilling the corn. Lay the corn on the grill and roast for 15 to 20 minutes, turning frequently, until the outer leaves are blackened. Remove, let cool several minutes, then remove the husks and silk. About 10 minutes before serving brush the corn with melted butter, return to the grill and turn frequently until nicely browned.   • Dump the softened cream cheese, sour cream and mayo into a large mixing bowl.
  • Add the salt, pepper, garlic powder, onion powder, smoked paprika and granulated sugar to the bowl.
  • Use an electric mixer to whip all of the ingredients together until smooth.
  • Add the corn and Rotel to the bowl.
  • Stir well.
  • Add the shredded cheese, chopped green onions and grated yellow onion to the bowl.
  • Stir well again.
  • Cover the bowl and place it in the refrigerator for at least 2 hours before serving.
  • Serve with chips and/or crackers for dipping.
