4 eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt. Spread the batter into the prepared pan. Decorate with walnut halves, if desired.
  • Bake in preheated oven for 20 to 30 minutes or until a toothpick inserted in the center comes out with crumbs, not wet. Cool on wire rack.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

Steps:

  • Set oven to 375 degrees (second-lowest rack).
  • Grease an 11x7 or a 13x9-inch baking pan (the brownies baked in a 13x9 pan will not be as high).
  • In a large bowl using an electric mixer beat all ingredients except walnuts or chocolate chips until smooth (the batter will be thick).
  • Add in walnuts of chocolate chips mix to combine.
  • Spread into the prepared baking dish (the batter will be very thick so have patience!).
  • Bake for about 25-30 minutes (do not overbake).

200g / 14 tbsp unsalted butter ((1 3/4 US sticks))
200 g / 1 1/4 cups dark chocolate chips ((7 oz) (Note 1))
1 cup (175g) brown sugar (, loosely packed )
3 eggs (, lightly beaten)
1 tsp vanilla extract
1/2 cup (75g) plain flour
1/4 cup (30g) cocoa powder
Pinch of salt
180g/6oz dark chocolate block/bar (optional)
1.5 cups roughly chopped walnuts (or other nuts)

Steps:

  • Preheat oven to 180°C/350°F (160°C fan forced).
  • Spray a 20cm/8" square tin with oil and line with baking/parchment paper with overhang (Note 2).
  • Place butter and chocolate chips in a heatproof bowl, microwave in 30 second bursts (takes me 1m 30 sec) until melted. Stir until smooth.
  • Add sugar and vanilla, mix, then add eggs and mix well until smooth and molten.
  • Add flour, cocoa and salt and stir until smooth. Stir in chopped chocolate, pour into pan.
  • Bake 24 minutes for really gooey in the centre, 28 minutes for fudgey but still very moist (my favourie, shown in video & photos), 32 minutes for moist fudge-cake-like. (See in post for toothpick testphotos).
  • If you didn't use the extra chocolate for stirring in, reduce cook time by 2 minutes.
  • Rest for 10 minutes before lifting out of the pan. Allow to cool for at least 20 minutes before cutting. Store in an airtight container for 4 days (bet they don't last that long!) or freeze for 3 months.

6 medium eggs
225g plain flour
140g good quality dark chocolate
50g butter, cut into pieces

  • Butter and line a 30cm x 21cm tin. Preheat the oven to 180C/160C fan/gas 4. Break up the chocolate with the butter and melt in the microwave on medium for about 5 minutes, stirring halfway through.
  • Beat the sugar and eggs in a bowl. Stir in the melted chocolate, add the flour and beat well. Pour into the tin and bake for 40-45 minutes, or until the top looks papery and feels slightly wobbly. Leave to cool in the tin.
  • If you're making the topping, break up the chocolate with the butter and melt in the microwave on medium for about 1 minute. Stir until smooth then spread over the cake. Dust with icing sugar and cut into squares.

Say hello to our favorite brownies recipe from scratch. You only need one bowl, a saucepan, and a spoon. Melting the butter into the sugar and cocoa powder ensures that shiny, crinkly top that we all love. These brownies are bittersweet. If you are like us and find yourself reaching for darker chocolate over milk chocolate, these are certainly for you. Use natural or Dutch-process cocoa powder (cacao powder works, too). For brownies that are less bittersweet and that have chewy edges, try this chewy brownie recipe instead.

10 tablespoons (145 grams) unsalted butter
1 ¼ cups (250 grams) granulated sugar
3/4 cup plus 2 tablespoons (80 grams) unsweetened cocoa powder, natural or Dutch-process
1/4 rounded teaspoon kosher salt, use slightly less if using fine sea or table salt
1 teaspoon vanilla extract
2 large cold eggs
1/2 cup (65 grams) all-purpose flour
2/3 cup (75 grams) chopped walnuts or pecans, optional

Steps:

  • Position an oven rack in the middle of the oven and heat to 325 degrees F. Line the bottom and sides of an 8-inch x 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on opposite sides to help remove the baked brownies from the pan.
  • Prepare a double-boiler by filling a medium saucepan with water about 2 inches deep. Heat the water until barely simmering. See the notes section below for tips on making these without a double-boiler and instead using a microwave or making them directly in a saucepan.
  • Combine the butter, sugar, cocoa powder, and salt in a medium heat-safe bowl. Rest the bowl over the simmering water. If the bottom of the bowl touches the water, remove a little water from the saucepan.
  • Stir the mixture occasionally until the butter has melted and the mixture is quite warm. Don't worry if it looks gritty; it will become smooth once you add the eggs and flour.
  • Remove the bowl from the saucepan, and set aside for 5 minutes or until it is only warm, not hot.
  • Stir in the vanilla.
  • Add the eggs, one at a time, stirring vigorously after each one.
  • When the batter looks thick and well blended, add the flour. Use a spoon to beat the flour into the batter until it is very thick and pulls away from the sides of the bowl. We use a wooden spoon or spatula and beat for 40 to 50 strokes (see video for reference).
  • Stir in nuts if using.
  • Spread the batter evenly in the prepared pan.
  • Bake the brownies until the edges look dry and the middle looks slightly underbaked; 20 to 30 minutes. You can test doneness by inserting a toothpick into the center. The brownies are finished baking if it comes out with a few moist crumbs attached.
  • Cool completely before removing from the pan - this step is essential and helps the brownies set. Cut into 16 squares.

70 grams (⅔ cup) cocoa powder (natural or dutch processed)

226 grams (1 cup, 2 sticks) unsalted butter, melted and still warm
4 large eggs

Steps:

  • Preheat the oven to 350ºF/175ºC and position an oven rack to the center position.
  • Measure out all the ingredients.
  • Prepare a 9-inch (23 cm) square baking pan with parchment paper or non-stick spray and set aside.
  • In a large bowl, whisk together the flour (120 grams, 1 cup), sugar (400 grams, 2 cups), cocoa powder (70 grams, ⅔ cup), and salt (½ teaspoon) until well combined.
  • Add the warm melted butter (226 grams, 1 cup) and eggs (4 large) into the bowl with the dry ingredients. Whisk the ingredients together until well combined. The batter will be quite thick. You can also fold in chocolate chips at this point if you want to make them extra chocolatey.
  • Pour the batter into the prepared pan and use a rubber spatula to smooth out. Bake for 30-45 minutes until a tester comes out with moist crumbs. Slightly under baking them will keep them extra moist and chewy.
  • Let cool for at least 10 minutes before slicing, they will be gooey straight out of the oven. You can eat them like this if you like, but they need to cool to completely solidify.

  • Preheat oven to 325 degrees. Line an 8x8-inch square baking dish with parchment paper, leaving a 1-inch overhang, or grease well and coat with flour. Set aside.
  • Melt butter in a large microwave-safe bowl or measuring cup. (Alternatively, melt butter in a large saucepan on the stove, then turn off heat and proceed.) Add cocoa powder and stir with a wooden spoon until smooth. Stir in sugar, salt, eggs and vanilla extract. Add flour and stir until well combined.

These Beet Brownies are amazingly moist and delicious. If you have a chocolate craving, these brownies are a great fix for it!

Yield 12 servings

Number Of Ingredients 11

2 medium beets (or 3 small beets)
1 1/8 cup all purpose flour (or whole-grain flour (1 cup + 2 tbsp))
1/2 cup cocoa powder
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup maple syrup (can substitute agave may increase to 1 cup if desired)
1/2 cup unsweetened almond milk (or 1/2 cup reserved beet water)
1 tbsp pure vanilla extract
chocolate chips (1/2 cup, optional)

Steps:

  • Boil beets until fork tender, about 45 minutes.
  • Let beets cool for 15 minutes.
  • Peel and puree the beets in a food processor or blender. You may need to add a small amount of water-anywhere from 1/2 tbsp to 2 tbsp. You can save the beet water and to use in this recipe in place of milk.
  • Preheat oven to 350 degrees.
  • Assemble your ingredients.
  • Add the dry ingredients to a large mixing bowl: flour, cocoa powder, baking powder, baking soda, cinnamon and salt.
  • Stir to combine and mix well.
  • Add the maple syrup, milk and vanilla. Mix thoroughly to combine.
  • Add beet puree to the mixing bowl.
  • Stir to combine. The batter will have a purple/pink color. If you want your brownies extra chocolatey stir in 1/2 cup chocolate chips.
  • Pour the batter in a non-stick baking pan or a baking dish that's lightly coated with non-stick cooking spray. Level with a spatula to smooth out the batter. We use a 9"x13" baking dish.
  • Bake for approximately 25 minutes or until a knife inserted in the center comes out clean.
  • Let cool for a few minutes, then serve and enjoy the moist chocolatey goodness.

Quick to make and devour, this easy brownie recipe made with cocoa powder will be your new go-to. Perfect warm as a dessert with cream or ice cream.

175g/6oz unsalted butter, diced
100g/3½oz cocoa powder
3 free-range eggs
125g/4½oz caster sugar
125g/4½oz soft light brown sugar
1 tsp vanilla bean paste or extract
pinch salt
85g/3oz plain flour

Steps:

  • Preheat the oven to 170C/150C Fan/Gas 3½ and line a 20cm/8in square brownie tin.
  • Put the butter and cocoa into a saucepan over a low heat, stirring frequently until the butter has melted. Remove from the heat and leave to cool for 2 minutes.
  • Meanwhile, whisk the eggs, both sugars, vanilla and salt for about 2 minutes until pale. Add the cocoa and butter mixture and stir to combine.
  • Sift the flour over the mixture and use a rubber spatula to mix thoroughly. Pour the mixture into the prepared tin, spread level and bake for 18-20 minutes until just firm to the touch. Leave to cool in the tin before cutting into squares.
