1 cup butter
2 cups brown sugar
½ cup corn syrup
1 teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
5 quarts popped popcorn

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  • Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

24 cups popped corn (1 cup unpopped)
1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!

This recipe is sure to be a hit with friends and family. It's super easy and there's not much of a mess to clean up afterwards. My kids love watching the mixture foam after adding the baking soda. We all start eating it right away but I do prefer it after it has had time to cool. It's a real treasure to create! P.S. You might want to break it up with your hands as it starts to cool.

2 (3 1/2 ounce) bags microwave popcorn or 2 (3 1/2 ounce) bags approx 1 cup corn
1/2 cup margarine
1/4 cup light corn syrup
1 cup brown sugar
1 teaspoon baking soda
1 brown paper bag

Steps:

  • Place popped corn in brown bag.
  • Melt margarine, brown sugar and syrup in microwave on high for 5 min stirring once every 1/2 minute
  • Stir in baking soda, mixture will foam!
  • Pour over popcorn in bag and shake well.
  • Place in microwave on high for 1 inches Shake again, heat for one more minute.
  • Shake, pour into bowl to cool and then enjoy!

2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon vanilla
24 cups popped popcorn (makes a big roaster full)

Steps:

  • Melt butter, stir in syrup, brown sugar and salt.*.
  • Bring to a boil over medium heat, stirring.
  • constantly, important to dissolve sugar.
  • Boil without stirring for 5 minutes.
  • Remove from heat and stir in vanilla and soda.
  • Pour over popcorn in roaster and stir to coat evenly.
  • Bake in 200° oven for 1 hour stirring every 15 minutes.

1 cup brown sugar
⅔ cup sweetened condensed milk
½ cup corn syrup
¼ cup butter
½ teaspoon vanilla extract

Steps:

  • Pour popcorn into a large bowl.

1 -2 gallon prepared popcorn
2 cups brown sugar
1 cup butter
1/2 cup corn syrup or 1/2 cup maple syrup
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup peanuts (Optional)

Steps:

  • Preheat oven to 250.
  • Prepare popcorn and set aside.
  • In a sauce pan bring to a boil brown sugar, butter and syrup.
  • Boil at a slow boil for 5 minutes without stirring.
  • Remove and add baking soda, salt, vanilla and peanuts.
  • Pour over popcorn and toss.

1 cup salted peanuts, could also use honey roasted instead
1/2 cup butter
3/4 cup brown sugar
1/4 cup molasses

  • Preheat oven to 350.
  • Pop the popcorn and distribute it evenly between 2 large baking sheets with rims.
  • Divide the peanuts in half and sprinkle on top of the popcorn.
  • In a heavy saucepan melt butter over medium heat. Stir in brown sugar and molasses.
  • Bring to a boil and boil for 5 minutes.
  • Remove from heat and drizzle over the 2 sheets of popcorn, distributing it as evenly as possible.

6 quarts popped popcorn (cooled & unsalted)
2 cups light brown sugar (packed)
1/2 cup light Karo syrup
1/2 cup margarine or 1/2 cup butter
1/4 teaspoon cream of tartar
1 teaspoon salt
1 teaspoon baking soda

Steps:

  • In a small pot add sugar, syrup, margarine or butter, cream of tarter and salt. Mix and boil until the bubbly stage (about 5 minutes).
  • Test a drop in water until (like soft caramel) forms a ball.
  • Remove from heat and add baking soda. It will SUDDENLY fluff up. QUICKLY add this to the tall large pot (gumbo or soup size) of prepared popcorn.
  • SPEEDILY mix well to coat the popcorn with the syrup mixture. It will be very sticky.
  • Pour and spread into a margarine greased 9x12 pan or larger pan. Bake 1 hour at 200 degrees.
  • Remove and place cooked caramel popcorn onto a wax paper to cool.
  • Once cooled, then crumble (like Cracker Jacks) and place into air tight containers to keep crunchy.
