Steps:
- Slice an orange in half, then slice one half into wedges.
- Slice 3-4 small cuts into the pork loin and add the wedges into the meat.
- Place pork in a Crock Pot and pour Coke over the pork. Move the pork around so some Coke gets on the bottom.
- Squeeze the other half of the orange over it all.
- Close the lid and slow cook for 5-6 hours on low.
- Cut and serve.

- 4. You may want to add about an ounce of water at this time.

- Preheat oven to 450.
- On a rimmed baking sheet, toss carrots, shallots adn 1 tablespoons rosemary with on tablespoons olive oil. Season with salt and pepper. Roast veggies 10-12 minutes.
- Meanwhile, season pork with salt and pepper. In large skillet, heat 1 tablespoons oil over medium heat. Add pork and cook turning occasionally until golden brown on all sides, about 10-12 minute Transfer to a plate, insert meat thermometer.
- Remove baking sheet from oven; push vegetables to sides. Place pork in center; return to oven. Roast, tossing veggies occasionally until meat thermometer reads 145 (takes about 30-40 min.) Loosely tent with foil. Rest 10 min.

- Place the pork loin in the slow cooker. pour half of the BBQ sauce on top. Lie the bacon slices on top, tucking the excess under if necessary. Pour more sauce on top of the bacon...enough to coat. Set the slow cooker on low and cook until the internal temperature of the pork id 145F. Mine took 4 hours
- Remove the roast from the slow cooker and place on a baking sheet. Pre-heat the broiler. Pour a little more sauce on top of the roast and put it under the broiler for about 5 minutes or until the sauce starts to caramelize.
- Slice and serve hot.

- Marinate pork loin in apple cider, garlic, and rosemary for at least 12 hours (or up to 3 days).
- Remove pork loin from marinade and pat dry with paper towels. Season liberally with salt and pepper.
- Discard marinade.
- Preheat oven to 400 degrees F.
- Heat about 2 tablespoons of olive oil in a 10- to 12-inch cast iron skillet or stainless steel skillet over medium-high heat until the oil is shimmering. Sear the pork on four sides (about 4-6 minutes per side), just until a nice golden-brown color develops and the meat releases easily from the pan. You don't need to cook the meat all of the way through, since it will finish in the oven.
- Transfer the pork to the oven and roast for 45-60 minutes, or until an instant-read thermometer inserted into the thickest part of the pork reads 145°F. Exact cooking time will vary depending on the size of your pork.
- Cover loosely with foil and allow the meat to rest for about 15-20 minutes.

- Take the roast out of the fridge and place the fat side up on a platter or parchment-lined work surface to come to room temperature.
- While the roast is coming to temperature, preheat the oven to 450°F.
- In a small bowl, add 1 tablespoon olive oil, minced garlic, rosemary, thyme, oregano, and paprika; mix to combine and set aside.
- When the roast has reached room temperature, score the skin and fat ¼-inch deep in a cross-hatch pattern at 1-inch intervals. This will allow the seasoning flavor to soak in while roasting.
- Generously season the pork with salt and pepper.
- Place your roast into a 5-quart or larger baking dish. Gently rub the herb mixture all over your pork loin. Cover the roast with a sheet of aluminum foil. Roast for an initial 20 minutes.
- In the meantime, prep and slice your carrots, celery, and potatoes, and place them in a bowl; toss with 1 tablespoon olive oil, salt, and pepper.
