3 cups shredded potatoes, well drained
1 pkg. (10 oz.) frozen chopped broccoli, thawed, well drained
1 pkg. (8 oz.) KRAFT Shredded Mild Cheddar Cheese, divided
4 eggs, lightly beaten
1/2 cup chopped onion
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried thyme leaves, crushed
1 or 2 drops hot pepper sauce
1/4 cup (1/2 stick) butter or margarine

Steps:

  • Preheat broiler. Mix potatoes, broccoli, 1 cup of the cheese, the eggs, onion and seasonings.
  • Melt 1 Tbsp. of the butter in large nonstick skillet on medium heat. Spoon 2 Tbsp. of the potato mixture into skillet; press lightly to flatten. Repeat with the remaining potato mixture, allowing about 1 inch between pancakes. (You should be able to cook 6 to 8 pancakes at a time.) Cook 2 to 3 min. on each side or until crisp and golden brown on both sides. Drain on paper towels; place on ungreased baking sheets. Repeat with remaining potato mixture, adding remaining butter as needed. Sprinkle evenly with cheese.
  • Broil pancakes, 4 to 6 inches from heat, 1 to 2 min. or until cheese is melted.

2 eggs
½ cup milk
1 cup all-purpose flour
½ cup grated Parmesan cheese
½ cup shredded Cheddar cheese
¼ cup real bacon bits
1 teaspoon onion salt

1 teaspoon salt
½ teaspoon ground black pepper
¼ cup corn oil
2 tablespoons butter

Steps:

  • Mix together potatoes, eggs, and milk in a large bowl.

2 Tbsp. PHILADELPHIA Garden Vegetable Cream Cheese Spread
2 oz. lox (smoked salmon)

Steps:

  • Grate potatoes using large holes of box grater; place in center of large clean kitchen towel. Bring up ends of towel and twist together to form pouch. Hold pouch over sink, then squeeze to remove as much moisture from potatoes as possible. Empty potatoes into large bowl. Add egg, flour and pepper; mix well.
  • Heat oil in large nonstick skillet on medium-high heat. Spoon potato mixture into 8 mounds, about 2 inches apart, in skillet, using about 1 Tbsp. potato mixture for each pancake. Press lightly with back of spoon to flatten. Cook 3 to 4 min. on each side or until pancakes are golden brown on both sides. Remove from skillet; drain on paper towels.

2 lb yukon gold potato, peeled
½ yellow onion
3 eggs
2 tablespoons garlic, minced
1 tablespoon cornstarch
1 teaspoon salt
½ teaspoon pepper
½ cup cheddar cheese, grated
½ cup monterey jack cheese, grated
⅓ cup breadcrumb meal
¼ cup olive oil, for frying
1 sour cream, to serve
1 green onion, chopped, to serve

Steps:

  • Using a box grater, shred the potatoes into a towel in a bowl and squeeze out as much liquid as possible.
  • Set aside and grate the onion.
  • Add the grated potatoes and grated onion onion to a large bowl. Add in the eggs, garlic, cornstarch, salt, pepper, cheddar cheese, monterey jack, and breadcrumbs and mix until combined.
  • Take ½ cup of the potato mixture and form into a thin patty, about ⅓-inch thick.
  • Heat cooking oil over medium-high heat and place potato patty into the skillet. Cook for 3-5 minutes on each side, or until golden brown and crispy on the outside. Repeat with remaining patties.
  • Serve with sour cream and green onions on top, and enjoy!

1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
1 pint cheddar Egg Beaters egg substitute
2 cups shredded sharp cheddar cheese
finely chopped onion
vegetable oil

Steps:

  • In a bowl, combine the simply potatoes, egg beaters 1 1/2 cups of the shredded cheddar and the chopped onions. Mix together with your hands and form into small patties. In a nonstick skillet put just enough oil in the pan just to cover the bottom about 1/4 inch deep, preheat the oil slightly. Place each patty in the skillet and brown thoroughly on 1 side then gently flip each patty over in order to brown the other side. While the second side is browning top the first browned side with a pinch of the cheddar left from the remaining 1/2 cup. When both sides are completely browned remove from the pan and place on a serving plate for your meal and enjoy.

1 cup chopped onion
2 garlic cloves, minced
1 1/2 teaspoons grated orange peel
1 teaspoon ground cumin
1/4 teaspoon dried crushed red pepper
12 ounces 1/2-inch cubes zucchini
1 28-ounce can diced tomatoes
1 15 1/2-ounce can garbanzo beans (chickpeas), rinsed, drained
12 Kalamata olives, pitted, chopped
2 pounds russet potatoes, peeled, coarsely grated, squeezed dry in towel
1/3 cup grated onion
2 tablespoons all purpose flour
Nonstick vegetable oil spray
4 teaspoons olive oil

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onion; sauté until tender, about 5 minutes. Add next 4 ingredients; stir 1 minute. Add zucchini and tomatoes with juices; bring to boil. Reduce heat and simmer until zucchini is tender, stirring occasionally, about 10 minutes. Add garbanzos and olives; simmer 3 minutes.
  • Preheat oven to 300°F. Mix first 3 ingredients in bowl. Season with salt and pepper. Working in batches, spray large nonstick skillet with nonstick spray; add 1 teaspoon oil. Heat over medium-high heat. Add potato mixture by 1/3 cupfuls, spreading each to 3-inch round. Cook until pancakes are brown, about 5 minutes per side. Transfer to baking sheet; keep warm in oven.
  • Place 3 pancakes on each of 4 plates. Spoon stew over and serve.

2/3 cup shredded Cheddar
2 tablespoons chopped scallions, green and white parts, plus more for garnish
1 large egg, lightly beaten
3 tablespoons plus 1/2 cup all-purpose flour
Vegetable oil, for pan-frying
Kosher salt
Sour cream, for serving

Steps:

  • Combine the mashed potatoes, cheese, scallions, egg and 3 tablespoons of the flour in a large bowl (see Cook's Note). With your hands, divide the mixture into 12 portions. Roll each portion into a compact ball, and then flatten it into a pancake about 1/2-inch thick.
  • Put the remaining 1/2 cup flour in a shallow dish and carefully coat each pancake in the flour.
  • Heat 3 to 4 tablespoons of oil in a large saute pan over medium heat. (Add enough oil to thoroughly coat the bottom of the pan.)
  • Fry the pancakes, in batches, until they're golden brown and crispy on both sides, 3 to 4 minutes. Add more oil to the pan as needed between batches. (Do not overcrowd the pan and do not flip the pancakes too soon or they won't develop a crisp crust.) Transfer the pancakes to a paper towel-lined plate and immediately sprinkle them with salt.
  • Serve the potato pancakes topped with sour cream and garnished with additional chopped scallions.
