4 pork chops
¼ cup dark brown sugar
1 Tablespoon coarse kosher salt
2 teaspoons cracked black pepper
2 teaspoons smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground mustard
½ teaspoon cayenne pepper

Steps:

  • Make the rub. Combine all ingredients for the rub in a small bowl and set aside.
  • Preheat. Allow the grill to preheat to medium-high heat (around 400 degrees F) for two-zone cooking (one direct heat side and one indirect heat side).
  • Season. Season the pork chops with Sweet Rub on all sides and press the rub into the meat.
  • Sear. Place the chops on the hottest part of the grill and sear for 2-3 minutes on each side.
  • Finish grilling. Move the chops to the indirect heat side of the grill and continue cooking for an additional 5-6 minutes per side until the internal temperature of the pork chops reaches 145 degrees F.
  • Rest and serve. Remove the chops from the grill and allow them to rest for 5-6 minutes before slicing.

You might add a barbecue sauce on the side with these, but we relish their crispy surface unvarnished.

Pork Chop Willy's Grilling Rub
3 tablespoons sweet paprika, preferably Spanish
1 tablespoon freshly ground black pepper
1 tablespoon coarse salt, either kosher or sea salt
3/4 teaspoon sugar
3/4 teaspoon chili powder
3/4 teaspoon granulated garlic or garlic powder
3/4 teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne
Six to eight 10- to 11-ounce bone-in pork rib chops, 3/4 to 1 inch thick
Vegetable oil spray

Steps:

  • At least 1 and up to 8 hours before you plan to grill the pork chops, prepare the dry rub, combining the ingredients in a small bowl. Coat the chops with the spice mixture, place them in a large plastic bag, seal, and refrigerate.
  • Fire up the grill, bringing the heat to medium (4 to 5 seconds with the hand test).
  • Remove the chops from the refrigerator and let them sit covered at room temperature for about 20 minutes.
  • Spray the chops with oil and transfer them to the grill. Grill for 18 to 20 minutes total. Turn onto each side twice, rotating the chops a half turn each time to get criss-cross grill marks. The chops are done when just a hint of pink remains at the center. Serve hot.

4 bone-in ribeye (rib) pork chops, ¾-inch thick
Basil-Garlic Rub:
2 cloves garlic, peeled
1 cup fresh basil, packed
2 tablespoons lemon juice, fresh
2 tablespoons extra virgin olive oil
1 teaspoon coarse salt
½ teaspoon black pepper, freshly ground

Steps:

  • With machine running, drop garlic through feed tube of food processor to mince. Stop, add fresh basil, and process until chopped. Add lemon juice, oil, salt and pepper and process to make thin wet rub. Spread both sides of pork chops with basil mixture. Let stand 15 to 30 minutes.
  • Prepare a medium-hot fire in grill. Brush the grate clean and oil the grate. Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145°F, followed by a 3-minute rest time.

1/2 tablespoon allspice berry
1/2 tablespoon cumin seed
1/2 tablespoon coriander seed
1/2 tablespoon whole black peppercorn
2 bay leaves

1/4 cup brown sugar
2 tablespoons sea salt
1/4 teaspoon ground ginger
1/4 teaspoon smoked paprika
1/2 teaspoon paprika

1 -2 tablespoon of ground spices (first 6 ingredients)

Steps:

  • Heat a small skilled to medium-high. Add allspice, cumin, coriander, and peppercorns. Stir frequently and toast until seeds begin to pop and smoke a bit.
  • Add toasted spices, bay leaves, and thyme to spice grinder and grind into a fine powder.
  • Mix 1 tablespoon (or more, to taste) of ground spice mixture with remaining dry ingredients.
  • Rub healthy amount of rub onto meat and let rest in refrigerator for at least one hour, preferably more. Grill as desired.

Kosher salt and freshly ground pepper
1 teaspoon ground cumin
1/2 teaspoon allspice
Four 8-ounce boneless center-cut loin pork chops
2 tablespoons butter
1 shallot, minced
1 tablespoon all-purpose flour
1/2 cup pomegranate juice
1/4 cup low-sodium beef stock
1 tablespoon red wine vinegar
1 tablespoon raspberry preserves
Fresh pomegranate seeds, for garnish (optional)
Kosher salt and freshly ground black pepper
Rice, for serving

Steps:

  • Heat a grill to medium-high heat and brush the grill grates with olive oil.
  • Whisk together 1 1/2 teaspoons salt, 1 teaspoon pepper, cumin and allspice in a small bowl. Sprinkle the pork chops with the rub. Grill the pork chops on each side 6 to 7 minutes, for a total of 12 to 14 minutes. Remove the chops to a plate and tent with foil.
  • In a small saucepan, melt the butter. Once the butter starts to foam, add the shallot and saute until tender. Add the flour and stir until pasty. Stir in the pomegranate juice, beef stock, red wine vinegar and raspberry preserves. Bring to a simmer while stirring. The sauce will thicken when it begins to simmer. Taste and then season with salt and pepper.
  • Serve the pork chops over the rice with sauce ladled over top. Garnish with fresh pomegranate seeds.

3 1/2 cups water
1/4 cup kosher salt
1/4 cup dark brown sugar
1 tablespoon molasses
1 cup ice cube
4 bone in pork chops, about 3/4 to 1 inch thick (about 3 lbs. total)
1 tablespoon chopped garlic
1 tablespoon crushed fennel
1 tablespoon finely chopped fresh sage
1 tablespoon finely chopped fresh rosemary
2 teaspoons kosher salt
2 teaspoons fresh coarse ground black pepper

Steps:

  • To brine the chops: Heat the water, salt, sugar and molasses in a pan, stirring occasionally, until the sugar and salt dissolve.
  • Pour into a large zip-lock bag or a tupperware container and let cool down slightly, then add the ice cubes.
  • When the brine is cold, add the chops.
  • Refrigerate for at least 4 hours, but no more than 6.
  • Remove the chops from the brine, dry completely with paper towels.
  • Discard the brine.
  • In a small bowl, combine the rub ingredients and mix well.
  • Lightly rub the mixture into both sides of each pork chop.
  • If using a gas grill, set one side on low, the other medium high.
  • If using a charcoal grill, arrange the coals so that there are thicker and thinner layers of coals for varying degrees of heat.
  • When the thicker layers of coals are hot, set the chops directly over them, or over the hottest part of the gas grill.
  • Sear the chops over the hot area for about 1 1/2 minute.
  • per side, then move them to the less hot areas.
  • Cover the grill and continue to cook until the chops reach an internal temperature of 145 degrees F.

  • Transfer to a platter and let rest, uncovered for about 5 minutes before serving.
  • NOTE: You could cook this chops inside in a frying pan.

This is very simple easy, and you most likely will have all these ingredients in your kitchen. It gives a lot of flavor to the chops. The recipe is what you would put on one chop. Its very simple to double (which I do). My husband smelled it cooking, and said it made his mouth water. Be careful not to overcook the chops, as it will make them taste very dry. I left them in the oven (with the oven off) to keep warm, and they still got a little dry.

6 (5 ounce) boneless pork loin chops, cut 1-inch thick
avocado cooking oil spray
1 ½ tablespoons smoked paprika
1 ½ teaspoons kosher salt
¾ teaspoon freshly ground black pepper
½ teaspoon onion powder
½ teaspoon granulated garlic
⅛ teaspoon cayenne pepper, or to taste

Steps:

  • Combine smoked paprika, salt, pepper, onion powder, garlic, and cayenne in a small bowl.
  • Pat chops dry with a paper towel and evenly distribute dry ingredient mixture on front and back of each chop. With fingertips, lightly rub dry ingredient mixture into the chops on both sides.
  • Place chops on a plate and cover with plastic wrap. Refrigerate for at least 8 hours.
  • Remove rubbed chops from the refrigerator and allow to come to room temperature, about 20 minutes.
  • While chops are getting to room temperature, clean the grate of an outdoor gas grill and preheat to medium heat.
  • When the grill is ready, lightly spray chops with avocado oil spray.
  • Lightly oil the grill grates, place chops on the grill, and cook for about 3 minutes. Rotate chops 90 degrees to create a criss-cross grill pattern and continue grilling for 3 minutes. Turn chops and grill until pork chops are no longer pink inside, about 4 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Remove to a serving platter and allow to rest under a foil tent, for about 5 minutes. Serve warm.
