MOM'S POLISH STEWED CABBAGE

My mother often served a delicious Polish dish made with cabbage. We always topped ours with a dollop of sour cream and sometimes served this over mashed potatoes. You can make this just using the cabbage, but I add kielbasa or smoked turkey for additional flavour. Delicious.

2 tablespoons olive oil
2 onions, chopped
1 clove garlic, or more to taste, minced
1 medium head cabbage, cut into squares
1 teaspoon white vinegar
1 teaspoon caraway seeds
1 teaspoon white sugar
1 pound kielbasa sausage, cut into chunks
1 (14.5 ounce) can stewed tomatoes (with garlic and olive oil)
¼ cup salsa
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a Dutch oven over medium heat. Cook and stir onions and garlic in hot oil until onion is translucent, 3 to 5 minutes.
  • Stir cabbage, vinegar, caraway seeds, and sugar with the onion mixture; bring to a simmer and cook until the cabbage is softened, about 15 minutes.
  • Stir sausage, tomatoes, and salsa with the cabbage mixture; season with salt and pepper. Place a cover on the Dutch oven and cook until cabbage is completely tender, 45 to 60 minutes.

1 teaspoon salt
1 large head cabbage, cored and shredded
½ cup sour cream

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to cool.
  • Whisk the butter, flour, and salt into the drippings in the same pan. Stir in the cabbage, and cook, stirring occasionally, over medium heat until cabbage is tender, about 15 minutes. Crumble the bacon; stir the bacon pieces and sour cream into the cabbage mixture.

1/4 cup butter
1/2 cup yellow onion, peeled and chopped
4 cups cabbage, chopped
1 teaspoon caraway seed
1/2 teaspoon salt
1/8 teaspoon pepper (ground)
1 (8 ounce) package egg noodles
1/2 cup sour cream (optional)

Steps:

  • Melt butter in large skillet.
  • Add onion and sauté until transparent.
  • Add cabbage and sauté 5 minutes, or till tender but still crisp.
  • Stir in caraway seeds, salt and pepper.
  • Cook noodles in salted water as directed on package.
  • Don't overcook.
  • Drain well.
  • Stir noodles into cabbage and add sour cream.
  • Cook 5 minutes longer, stirring frequently.

¼ cup water

1 onion, chopped
2 teaspoons minced garlic

1 pound Polish kielbasa

Steps:

  • In a large skillet, fry bacon over medium high heat until browned, turning once. Remove bacon from pan, reserving drippings, and place on paper towels.
  • Stir water, sugar, onions, garlic, red pepper flakes, seasoned salt, and caraway seeds into drippings. Add cabbage, and gently stir. Cover, and cook over medium heat for 10 to 15 minutes.
  • Add kielbasa to the pan. Cook, covered, for an additional 10 to 15 minutes. Crumble bacon over top, and serve hot.

1 1/2 pounds pork spareribs
1 large onion, chopped
1 bay leaf
3 peppercorns
2 tablespoons white vinegar
5 medium beets
2 cups sour cream
2 cups milk
3 tablespoons flour
Salt and pepper

Steps:

  • In a large pot combine the spare ribs, onion, bay leaf and peppercorns, vinegar and cover with water. Bring to a simmer and cook until the meat is tender, about 1 to 1 1/2 hours. In another pot, cover the scrubbed beets with water and bring to a boil. Simmer the beets for 45 To 1 hour or until the beets are tender. Drain and rinse the beets under cold water until they are cool. Peel and grate the beets.
  • When the meat is tender, Remove the bones and strip off the meat in bite size pieces. Return the meat to the broth and stir in the grated beets. Season the soup with salt and pepper. In a large bowl stir together the sour cream, milk and flour. Add two cups of the hot stock to the sour cream mixture and stir to combine. Pour this mixture through a strainer into the soup. Heat the soup over medium heat at a gentle simmer, but do not allow it to boil. Boiling will cause the sour cream to curdle. Serve immediately with boiled potatoes and pumpernickel or rye bread

4 slices chopped bacon
1 large chopped onion
2 celery ribs cut into 1/4-inch slices
4 peeled carrots cut into 1/4-inch rounds
2 large potatoes, peeled and cut into 1/2-inch dice
2 cloves minced garlic
1 small head shredded cabbage
2 pounds unsmoked pork spareribs, cut into 2-rib pieces
1 meaty ham bone or ham hock
1 pound sauerkraut , drained, juice reserved
8 ounces tomato sauce
4 quarts beef stock
1 heaping teaspoon sweet Hungarian paprika
1 bay leaf
2 tablespoons sugar
Garnish: Chopped flat-leaf parsley
Garnish: Sour cream

Steps:

  • Gather the ingredients.
  • In a large Dutch oven or stockpot, sear pork ribs on both sides over medium-high heat. There should be enough fat on the ribs so additional fat should not be required. If the ribs are very lean, lightly spray the pot with cooking spray before searing. Remove browned ribs to a plate and reserve.
  • Add bacon to the pot and fry until most of the fat has rendered out. Add onions, celery, carrots, potatoes, and garlic to the pot and cook until onion is translucent. Add fresh cabbage and cook until it collapses. Return spareribs to the pot and add ham bone or hock, sauerkraut, tomato sauce, beef stock, paprika, bay leaf, and sugar. Mix well. Bring to a boil. Reduce heat to medium-low and cook about 2 hours or until meat falls from the bones.
  • Remove ribs and ham bone or hock from the soup, let cool slightly and remove all bones and cartilage from meat. Chop meat into bite-sized pieces, if necessary, and return to the pot. If you prefer a slightly more sour soup, add some of the reserved sauerkraut juice.
  • Cool the soup in an ice-water bath and then refrigerate. The next day, skim off the congealed fat and reheat. Adjust seasonings, if necessary. Serve in warmed bowls with a dollop of sour cream and sprinkle with chopped parsley , if desired.

1 cube of pork

  • Put cabbage to large pan pour 200ml of water,next put to inside mushrooms, bay leaves, salt , pepper and cube of pork. Stir and simmer for 20minutes.
