Steps:
- In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
- Preheat oven to 350 degrees F.
- In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
- In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
- Remove chops from oven and add to the apple mixture. Serve hot.

- Preheat the oven to 300 degrees F (150 degrees C).
- Combine brown sugar, garlic powder, 1 teaspoon sage, rosemary, salt, and pepper in a bowl. Dredge pork chops in seasoning mixture until coated thoroughly.

- Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.

There are some culinary combinations that cannot be improved upon, and apples and pork is surely one of them. This recipe calls for pan-frying boneless pork chops and serving them with butter-browned apples and a Normandy-style sauce made with cider and cream. It makes for a perfect cold weather meal.

- Make the spice salt: Put peppercorns, cloves, allspice and sage in a spice mill or mortar and grind to a powder. Remove to a bowl and stir in salt. Season pork chops on both sides with salt mixture. (There will be some salt mixture remaining; use it to season the sauce, Step 4.) Cover and leave chops at room temperature to absorb seasonings for at least 30 minutes.
- Peel, quarter and core apples, then cut each apple into 12 wedges. Melt 1 tablespoon butter in a wide skillet and raise heat to medium-high. Add apple wedges in one layer and brown gently on one side, about 2 minutes. Brown on the other side and cook for 2 minutes more, or until apples are cooked through but still firm. Remove apples from pan and keep warm.
- Add 1 tablespoon butter to pan and swirl to melt. Dust pork chops with flour, and place in pan and brown gently for about 4 minutes per side. Adjust heat if necessary to keep pork from cooking too quickly. Remove chops and keep warm on a platter in a low oven. Discard remaining butter.
- Add ½ cup cider to pan, raise heat to high and cook down to a syrup. Add mustard and chicken broth, and bring to a boil, then reduce heat to a simmer. Add potato starch and stir with a wire whisk as the sauce thickens. Stir in crème fraîche. Season to taste with remaining spiced salt. Add 2 tablespoons cider and the Calvados, if using. Cook for 1 minute more.
- Spoon sauce over the chops, then spoon the apples around the platter. Sprinkle with chives and parsley.

- Preheat the oven to 200C/400F/Gas 6.
- Season the chops well with salt and freshly ground black pepper. In a large shallow ovenproof pan, heat the olive oil and fry the rind of each chop for a good head start to getting them crisp. Then lightly fry each side for a minute or so to get the outside crusty and golden brown, and remove from the pan. Add the onion to the same pan with the pork juices, and brown a little before adding in the apple wedges and sage leaves (add only a few as sage can overpower the dish) with the juniper berries.
- Add the chops back into the pan, and nestle them among the apples and onions, along with the remaining whole apples. Pour over the cider, enough to just cover the ingredients, season to taste and place in the oven for about half an hour, or until the pork and apple are cooked.

- Sprinkle chops with seasoned salt on both sides and let rest for 3 or 4 minutes.
- Heat the oil in the bottom of the pressure cooker over medium heat. Brown chops on both sides and then remove a plate.
- Place basket in pressure cooker. Press one or two dried apple slices on each chop and sprinkle each with a bit of the Aspen spice mix.
- Fit the chops into the basket, standing on edge, sandwiching the apple slice between the chops.
- Pour the cider over the chops and secure the pressure cooker lid onto the pot.
- Bring to high pressure (15 lbs) over medium heat, adjusting the heat to maintain the pressure (according to the cooker's manufacturer's instructions) and cook at that pressure for 17 minutes.
- Remove cooker from heat and let pressure drop naturally, which should take about 10 minutes.
- Remove chops carefully to serving platter and cover with foil to keep warm.
- Meanwhile, melt better in a 1-cup glass measure in the microwave (30 seconds on high) Stir in flour with a whisk and microwave 40 more seconds, whisking at the end of the time.
- Add a bit of the pot liquid to the roux in the glass measure and whisk smooth. Then add the roux to the pot and heat to boil, whisking until slightly thickened.

- Heat oven to 325 degrees. In a large skillet, heat 3 tablespoons oil and add onions. Saute until soft, about 10 minutes. Transfer to a bowl. Add bacon to pan and saute until fat is rendered and bacon begins to brown, about 3 minutes. Using a slotted spoon, remove bacon, leaving behind as much fat as possible. Add bacon to onions and set aside.
- In a freezer bag, mix together flour and apple pie spice. Add 3 chops, seal and shake until chops are coated. Shake off excess flour and place chops on a plate. Flour remaining 3 chops and add to plate; reserve spiced flour. Return skillet to medium heat. Add chops 3 at a time, searing on both sides then transferring to a plate; reserve oily skillet.
- Peel, core and cut the apples in two. Slice each half into thin wedges. In an ovenproof pot (preferably glazed ceramic) 8 inches in diameter and 5 inches deep, layer ingredients compactly as follows: a layer of onions and bacon, 3 chops, a layer of apple slices, some more onions and bacon, the final 3 chops, a layer of apple slices, remaining onions and bacon, and a final layer of apples.
- Add spiced flour to oily skillet. If pan is dry, add a small amount of oil. Place pan over medium-low heat and whisk flour into oil to make a smooth paste. Slowly add apple cider, whisking until smooth. Bring mixture to a boil, then pour into pot, letting it filter slowly to bottom.
- Cover pot with a lid or waxed paper and foil. Place on a baking sheet. Bake until chops are tender and apples are very soft, about 3 hours. Serve hot.
