4 fresh Tilapia fillets
Kosher Salt and Black Pepper
2 Tbsp. Butter
2 Tbsp. plus 2 tsp. STAR Extra Virgin Olive Oil, divided
2 large Shallots, minced
1 large Garlic Clove, squeezed through a garlic press
3/4 cup White Wine, like Pinot Grigio
1 whole Lemon, zested
3 Tbsp. Lemon Juice, or more to taste
1 tTbsp. STAR Capers, rinsed
1 Tbsp. minced fresh Parsley
Sliced Lemon, for garnish

Steps:

  • Season both sides of the fish with kosher salt and black pepper.
  • Preheat a large non-stick skillet over medium heat. Melt 2 Tbsp. of butter and add 2 Tbsp. of STAR Extra Virgin Olive Oil.
  • Work in batches of two and carefully place the tilapia into the hot pan. Cook the tilapia for 4 minutes before flipping and cooking for an additional 2 to 3 minutes. Remove and repeat with the second batch. Keep the tilapia warm by covering loosely with foil.
  • Add the minced shallots and garlic to the same pan and cook for 2 to 3 minutes or until fragrant and soft. Add in the wine and lemon juice, bring to a boil over medium-high heat until it thickens, about 3 to 4 minutes. Stir in the capers, parsley and lemon zest, then taste and season with more salt and pepper if desired.
  • Place the fish back into the skillet and spoon sauce over top before serving with a few slices of fresh lemon and a drizzle of Extra Virgin Olive Oil.

1/2 cup cornmeal
1 tablespoon Old Bay Seasoning
2 tilapia fillets
2 tablespoons Miracle Whip
1 tablespoon sweet relish
1 teaspoon lemon juice

Steps:

  • Warm up olive oil in a 10" or 12" skillet.
  • Mix the corn meal and Old Bay seasoning thoroughly, then spread out on a platter.
  • Coat tilapia fillets lightly, but thoroughly with corn meal and Old Bay mixture.
  • Lay coated fillets in hot olive oil (medium-medium high heat) and cook until golden on the bottom, then turn fillets over and repeat.
  • Do not overcook the fish--it's easy to do.
  • While fillets are cooking, combine Miracle Whip, sweet relish, and lemon juice and stir until well blended, then serve with the fish.

When you fry them in olive oil, the oil intensifies their saltiness and turns their outer leaves into a crisp shell, creating delicious crunchy bits that can be used as both seasoning and texture. Here, they stud fillets of pan-roasted striped bass, but you could use any meaty white fish like cod or halibut. It's a bright and flavorful alternative to the usual weeknight fish dish, and it can be on the table in about a half hour.

2 tablespoons salt-packed or brined capers
2 tablespoons olive oil, plus more for frying
1 clove garlic, crushed
4 fillets striped bass, or other meaty white fish like cod or halibut (about 2 pounds)

Steps:

  • Preheat the oven to 400 degrees. Soak the salt-packed capers in water for 10 minutes, drain, rinse, then thoroughly pat dry. (If using brined capers, drain them and pat dry.) Pour 1/2 inch olive oil into a small saucepan and place over medium-high heat. When the oil is hot enough to toast a bread crumb in 30 seconds, add the capers. Be careful, the oil may sputter. Fry until the capers fluff up and begin to brown on the edges, 30 to 60 seconds. Drain the capers on a paper towel.

1 teaspoon butter

Steps:

  • Whisk together chicken stock, lemon juice and capers. Lightly crush the capers.
