- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Heat butterscotch chips and butter together in a saucepan, stirring frequently, over low heat until melted, about 5 minutes. Remove saucepan from heat and stir graham cracker crumbs into butterscotch mixture. Measure 2/3 cup graham cracker-butterscotch mixture and set aside; press remaining mixture into the prepared baking dish to form a crust.
- Beat cream cheese in a bowl using an electric mixer until light and fluffy. Add sweetened condensed milk, egg, and vanilla extract; mix well. Pour cream cheese mixture over crust. Sprinkle reserved graham cracker-butterscotch mixture over cream cheese mixture layer.
- Bake in the preheated oven until a knife inserted in the center comes out clean, 25 to 30 minutes.

Steps:
- Melt the butterscotch chips and butter over low heat in medium pan.
- Remove from heat; stir in graham cracker crumbs& mix well.
- Set aside 2/3 cup of crumb mixture for topping.
- Press the remainder of mixture firmly into the bottom of greased 13x9 inch glass baking dish.
- In mixing bowl, beat the cream cheese until light and fluffy.
- Add condensed milk, vanilla, and egg; fold in the nuts.
- Pour over crust in prepared pan.
- Sprinkle reserved crumb mixture evenly over top.
- Bake at 325F for 25-30 minutes or until toothpick inserted in center comes out clean.
- Cool to room temperature, then chill.
- Serve chilled, cut into squares.

- Heat oven to 350°F. Place morsels and butter in medium microwave-safe bowl. Microwave on medium-high (70%) for 1 minute; stir. Continue microwaving, stirring every 10 to 20 seconds, until smooth (2 to 3 minutes). Stir in crumbs and walnuts by hand. Reserve 2 cups crumb mixture; press remaining mixture into ungreased 15x10x1-inch jelly-roll pan. Bake for 12 minutes.
- Meanwhile, combine cream cheese and sugar in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add eggs, one at a time, beating well after each addition. Add flour and lemon juice. Reduce speed to low; beat until well mixed (1 to 2 minutes).
- Pour cream cheese mixture over hot, partially baked crust; sprinkle with reserved crumb mixture. Continue baking for 20 to 25 minutes or until set. Cool completely. Cut into bars or diamonds. Cover; refrigerate until serving time.

- Preheat the oven to 350 degrees F. Drape a 9 by 13-inch pan with overlapping pieces of aluminum foil, creating handles for easy removal. Butter the paper, and reserve.
- In a food processor add the flour, oats and brown sugar and pulse to combine. Add the 2 sticks of butter, the cinnamon and the butterscotch chips. Pulse, pulse, pulse until the mixture forms clumps when pressed between your fingers. Transfer the mixture to a large bowl. Press half of the mixture into the bottom of the prepared pan in an even layer, reserve the other half. Bake in the preheated oven just until slightly golden and set, about 12 to 15 minutes. Remove from the oven and cool completely.
- Beat together the cream cheese, condensed milk, lemon zest and juice and vanilla in an electric stand mixer fitted with a paddle, or with an electric hand mixer until no lumps of cream cheese remain. Spread evenly over the baked and cooled oatmeal mixture. Sprinkle the remaining half of the oatmeal mixture over the cream cheese. Bake until the top is golden, about 40 minutes.
- Cool and chill before cutting. Run a knife around the edge of the pan, and using the foil handles, transfer the bars to a cutting board. Cut into 2-inch squares with a sharp knife and serve.

- 1. Preheat oven to 350 degrees.
- 2. Melt chips and butter together in microwave. Stir in crumbs and nuts.
- 3. Press 1/2 mixture firmly into the bottom of a greased 9x13 baking dish (glass works best).
- 4. In a large bowl, beat the cream cheese until fluffy; mix in sweetened condensed milk, vanilla and egg. Mix well.
- 5. Pour mixture over crust in the baking dish. Sprinkle remaining crumb mixture over the top.
- 6. Bake 20-25 minutes; cool and chill before serving. Refrigerate leftovers

- In a large bowl, cream the shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, oats and baking soda; gradually add to the creamed mixture. Stir in chips and pecans. Reserve 2 cups. Spread remaining dough into a greased 13x9-in. baking pan. , In a small bowl, combine filling ingredients; beat until smooth. Spread evenly over crust.
