TOFURKEY ITALIAN SAUSAGE AND PEPPERS



Tofurkey Italian Sausage and Peppers image

This is a family favorite and a go to dish in a pinch because it is simple to make and everyone loves it.

8 links hot or sweet tofurkey italian sausage
2 medium red bell peppers cut into strips
3-4 medium onions cut into strips
4-5 button mushrooms, sliced
1 bunch spinach, destemed
16 oz tomatoe sauce,jar
1 Tbsp oregano
2-3 tsp olive oil
2 Tbsp parsley
1 Tbsp italian seasoning
salt and pepper to taste
1/2 juiceof, lemon
8 italian sub-rolls

Steps:

  • 1. you can broil or pan fry them, Tofurkey style sausages are best cooked until well browned.Make sure not to over cook
  • 2. Place sliced peppers and onions into a saucepan over medium heat, top with oregano and parsley,and Italian seasoning sprinkle with salt and black pepper and then drizzle with your olive oil.
  • 3. Be sure to stir this mixture every few minutes and continue to cook until the peppers and onions and soft but not mushy. (Approximately 20 minutes) Add the mushrooms and cook for 5 more minutes. and then add the spinach and tomato sauce and just cook till warmed through and spinach is wilted. Squeeze 1/2 lemon over peppers and onions. and remove from heat.
  • 4. Slice your fresh Italian Sub-Rolls in half lengthwise and slice your sausage in half lengthwise too so it stays on the bun better place your sausages into the fold. Top with enough filling to fill the bun. Go ahead and make them messy, they're more fun that way!
  • 5. Serve and enjoy immediately.

This easy and flavorful skillet recipe is one you'll want to put in your regular rotation. It's healthier than using pork sausage and makes for a quick weeknight dinner, and works well for meal-prepping. I like to serve mine over steamed rice.

2 tablespoons olive oil, divided
4 sweet Italian turkey sausage links (such as Jennie-O®)
1 large red onion, chopped
1 red bell pepper, cut into 1 1/2-inch chunks
1 green bell pepper, cut into 1 1/2-inch chunks
3 cloves garlic, minced
½ teaspoon crushed red pepper, or more to taste
salt and ground black pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook turkey sausages until they begin to brown and firm up, 3 to 4 minutes per side. Remove to a cutting board and let cool slightly before cutting into 1/2-inch-thick diagonal slices; they will not be completely cooked at this point.
  • Heat remaining 1 tablespoon oil in the same skillet over high heat. Quickly stir-fry onion until it begins to brown, about 1 minute. Add peppers and continue cooking over high heat, stirring constantly, until peppers begin to brown, 2 to 3 minutes. Do not overcrowd the skillet in order to get a nice char on the vegetables. Mix in garlic and cook for 1 minute.
  • Return sausage, and any accumulated juices, to the skillet. Season with crushed red pepper, salt and pepper and reduce heat to medium. Stir to combine and continue cooking until sausage is no longer pink in the center, about 2 minutes more.

My family has been using this very simple and delicious recipe for sausage, peppers, and onions for years and years now. For an extra kick, try using half sweet sausage and half hot sausage!

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup white wine

Steps:

  • Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
  • Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  • Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

I just threw this together one night with ingredients I had on hand. We loved the flavor and it's now a favorite after work meal.

Number Of Ingredients 13

1/2 large onion, chopped
1 red pepper, sliced
1 green bell pepper, sliced
2 tablespoons olive oil
1/2 teaspoon red pepper flakes (optional or to taste)
2 garlic cloves, minced
salt and pepper
4 fresh basil leaves, torn
1/2 teaspoon dried oregano or 1 teaspoon fresh oregano
1 lb Italian turkey sausage link (about 6 links)
1 (14 1/2 ounce) can diced tomatoes
1/4 cup red wine vinegar
8 ounces bow tie pasta, cooked

Steps:

  • Saute onion, peppers and pepper flakes in olive oil until onions start to brown.
  • Add garlic, salt, pepper, basil and oregano. Set aside.
  • Prick sausage links with a fork.
  • Saute in skillet with a little olive oil over medium heat until brown.
  • Add wine vinegar and canned tomatoes (with liquid).
  • Add the sautéed vegetable mixture.
  • Cover and simmer for 20 minutes.
  • Meanwhile cook pasta al dente.
  • Add cooked pasta to sausage and pepper mixture.
  • Stir and serve.
