Here's what you need: duck breast, salt, pepper, fingerling potato, fresh rosemary, red wine, chicken stock, orange, honey

2 lb duck breast, 1-pound
1 salt, to taste
1 pepper, to taste
1 lb fingerling potato
1 sprig fresh rosemary
1 cup red wine
1 cup chicken stock
½ orange
2 tablespoons honey

Steps:

  • Pat dry the duck breasts with a paper towel.
  • Score the duck skin with sharp knife, making sure to not cut into the flesh.
  • Season the duck breasts on both sides with salt and pepper.
  • Add the potatoes to a pot of water and bring to a boil over high heat. Cook for 15-20 minutes, until fork-tender. Drain the potatoes in a colander.
  • Using the bottom of a ramekin or your palm, gently smash the potatoes.
  • Preheat the oven to 400˚F (200˚C).
  • Starting with a cold and dry oven-safe skillet, place the duck breasts skin side down. Cook for 12-15 minutes over medium heat.
  • Flip the breasts over and sear the other side for 1 minute. Flip to the skin side down, and transfer the skillet to the oven.
  • Roast for 4 minutes for medium-rare, or 6 minutes for medium.
  • Rest the duck skin-side up for 10 minutes. Do not discard the fat in the pan.
  • In a small pot, combine the red wine, chicken stock, orange juice, and honey and reduce by half over medium heat.
  • Fry the potatoes with remaining duck fat in the pan, until golden brown, 5-6 minutes. Season with salt, pepper and rosemary.
  • Slice the duck ½-inch (1 cm) pieces.
  • Serve with the sauce and the potatoes.

2 large boneless duck breasts, with skin on (400 g each)
3 shallots, finely chopped
2 apples, peeled and sliced (spartan)
1 1/2 cups apple juice, raw tradition
1 teaspoon fresh rosemary, chopped
salt and pepper

Steps:

  • With the tip of a knife, do incisions like a checkerboard on the skin of the duck breasts, but DO NOT touch the flesh. In a large non-stick skillet, brown the breasts at high heat 4-5 minutes on each side, beginning with the skin side. Put the breasts in a not too deep ovenproof dish and keep cooking in a preheated oven of 350 F for about 8 minutes or until the flesh of the duck is slightly pink inside.
  • Meanwhile, deglaze the skillet by keeping 2 tablespoon of the grease. Add shallots and apples at medium heat, stirring from time to time, for about 3 minutes or until apples are golden. Pour apple juice in the skillet scraping the bottom with a wood spoon to remove the browned bits. Cook for 5 minutes or until liquid has reduced by half. Add rosemary and stir. Add salt and pepper.
  • When ready to serve, slice the duck breasts in bias ( / ) Distribute the slices in the plates and coat with the sauce.

3 duck breasts (i.e. 6 fillets with their skins)
3 tablespoons thyme honey
1 cup apple cider
1 tablespoon apple cider
1 cinnamon stick
1 teaspoon ginger, powdered
1 teaspoon coriander, powdered
salt
pepper, freshly ground
3 apples, washed and cut into 8 pieces, seeds removed
2 tablespoons butter or 1 tablespoon olive oil
1 tablespoon brown sugar
1/2 teaspoon cinnamon, powdered

Steps:

  • Heat the honey and cup of vinegar in a small saucepan for three to four minutes over a low heat.
  • Remove from the heat and add the cinnamon, ginger and coriander. Season.
  • Let the marinade cool.
  • Make diagonal cuts with a sharp knife in the duck breasts (to facilitate the absorption of the marinade).
  • Place the breasts side by side in a shallow baking tray and pour the marinade over them.
  • Cover the pan with plastic wrap and leave to marinate in the refrigerator for two to three hours.
  • Preheat the oven to 240°C.
  • Drain off the marinade into a small saucepan and heat until reduced to half.
  • Put the fillets in a baking tray and bake in the oven for 15 minutes.
  • Meanwhile heat the butter (or oil) in a nonstick pan and cook the apples for about 10 minutes until they acquire a golden color, turning them on all sides.
  • Season and dust with cinnamon and sugar, and allow to cook until the sugar has dissolved.
  • Add the rest of the apple cider and remove from heat.
  • When the fillets are done, cover the baking tray with aluminium foil or baking paper and allow to settle for 12-13 minutes before serving, to help soften them.
  • Serve with the apples and the sauce.

4 whole ducks
16 ounces brandy
8 ounces sugar
8 Jonagold apples
12 ounces cooked foie gras, diced
1 pound caul fat (fatty membrane from a pig, sheep, or cow, resembling fine netting)
Salt and freshly ground black pepper
8 ounces flour
4 eggs, beaten
12 ounces corn flakes
2 pounds baking potatoes, like russets, peeled and diced
4 ounces butter
4 ounces sour cream
Salt and pepper
8 ounces duck reduction, store bought or home made
6 fresh or canned black truffles, thinly sliced

Steps:

  • Preheat oven 150 degrees F.
  • Begin by removing the duck breasts with the skins on, and set aside in the refrigerator. Remove the thighs and legs from ducks. Debone the thighs, keeping legs and thighs attached, and lightly pound. With the loose meat, shape the legs into a drumstick.
  • In a large deep dish, marinate the duck legs in brandy and sugar for 1 1/2 hours. Save the brandy after marinating.
  • Peel all the apples, and core them, keeping the core and peels. Slice 4 apples thinly, place on a baking sheet, and bake for 2 hours. Once they have baked, remove from oven, and small dice. Reserve remaining apples in acidulated water.
  • Mix the fois gras with the diced apples, season with salt and pepper, and chill in the refrigerator.
  • Pull the skin of each duck breast 3/4 of the way down, and season with salt and pepper. Place foie gras and apple mixture on flesh, place skin over to seal, and form with your hands. Using the caul fat, wrap each breast tightly and freeze for 2 hours.
  • Preheat a deep fryer to 360 degrees F.
  • Lightly dust the duck legs with flour and dip in beaten eggs. Place legs in corn flakes and deep fry for 2 to 3 minutes, remove, and set aside.
  • Remove the duck breast from the freezer, sear on high heat for 1 to 2 minutes. Remove from heat and set aside in the refrigerator.
  • To make the mashed potatoes, simply boil the potatoes until fork tender or about 25 minutes. Add in the butter, sour cream, salt and pepper, and mash until desired consistency.
  • Preheat oven to 350 degrees F.
  • Slice 3 cored apples into rings and shape with a cookie cutter. Place a slice in each for 4 to 6 buttered ring molds. Using a piping bag, pipe a thin layer of mashed potatoes on the apple slices. Add a layer of thinly sliced black truffles, repeat until tower is 2 1/2 inches tall, and bake for 15 minutes. Raise the oven temperature to 400 degrees F.
  • Using the leftover peels and cores, add to the brandy in a saucepot and flambe. Once flame is gone, reduce the brandy to a light syrup and strain. Add this to the duck reduction (you may use store bought reduction if you do not have any), and reheat, but do not bring to a boil.
  • Julienne the remaining apple and deep fry until crispy. Drain excess oil on a paper towel and set aside.
  • Slice duck breasts and place it in a 400 degree F oven for 4 minutes. Place fried duck legs in oven and heat up for 4 minutes.
  • To serve, arrange apple tower on plate. Place duck leg, breast, and sauce on plate. Garnish tower with fried apples.

1 tablespoon grapeseed oil
2 duck breasts, skin on
1 teaspoon curry powder
Salt
3 tablespoons unsalted butter, at room temperature, divided
1/4 cup pomegranate juice
1 Pink Lady apple (or other crisp, firm apple) peeled, cored, and finely diced
1/4 onion, finely diced
Pinch sugar, if needed
Mashed Sweet Potatoes with Goat Cheese, for serving, recipe follows
Sauteed Julienned Vegetables, for serving, recipe follows
2 large sweet potatoes
Salt
2 tablespoons goat cheese
1 tablespoon honey
Pinch ground ginger
Pinch ground cinnamon
1 teaspoon unsalted butter
Grapeseed oil
2 carrots, peeled and julienned
1/4 pound snow peas, julienned
1 small daikon, julienned
Salt and freshly ground black pepper

Steps:

  • Heat a medium saute pan over medium-high heat and add the oil.
  • Cut a crosshatch pattern into the skin of the duck breasts. Be careful to not cut through to the flesh.
  • Season the skin side with the curry and the flesh side with salt. Place in the pan, skin side down. Cook on the skin side to render of some of the fat and crisp up the skin, 5 to 7 minutes. Once the skin is crisp, flip the breasts, reduce the heat to medium, and cook on the flesh side for about 4 minutes for medium-rare. Once cooked, remove from the pan and allow the meat to rest for 5 minutes.
  • Make the sauce in the same pan used for the duck. (Wipe out the pan if you have burned bits on the bottom, and add some butter.) Place the pan over medium-high heat and add 1 tablespoon butter. Deglaze the pan with the pomegranate juice. Allow the juice to simmer and reduce by half. Turn off the heat and stir in the remaining 2 tablespoons butter. Taste and season with a pinch of sugar if the sauce tastes too tart.
  • When plating, slice the duck breast thinly and spoon the warm sauce over the duck. Serve with Mashed Sweet Potatoes with Goat Cheese and Sauteed Julienned Vegetables.
  • Peel and slice the sweet potatoes into 1/2-inch pieces. Place the potatoes in a large saucepan, fill with water to cover the potatoes, and add some salt. Bring the water to a boil over medium-high heat. Cook the potatoes until fork tender, about 13 minutes. Stick a fork in a potato piece and if it goes in easily, it's done.
  • Drain the potatoes well. Transfer them to a food processor and blend until smooth. Add the goat cheese, honey, ginger, cinnamon, butter, and 1/2 teaspoon salt. Blend again until everything is well combined. Transfer to a bowl and let cool for 1 minute.
  • Spoon the potatoes into a zip-top plastic bag or a pastry bag with a tip for piping, or spoon directly onto plates. If piping, cut a hole in the tip and pipe onto the plate.
  • Heat a saute pan over medium heat and add some oil. Saute the julienned vegetables and season with salt and pepper. Cook until the vegetables are just softened, 3 to 5 minutes. Taste a bite and cook for another minute if the vegetables are still hard.

salt and pepper to taste
1 teaspoon poultry seasoning
½ tablespoon butter
3 tablespoons chopped onion
5 stalks celery, chopped
3 cups peeled, cored and chopped apple
3 cups cornbread crumbs
1 tablespoon olive oil

Steps:

  • Rinse duck and pat dry; rub with salt, pepper, and poultry seasoning.
  • Melt butter in a small skillet over medium heat. Saute onion and celery in butter until tender. In a medium bowl, combine with apple and cornbread crumbs. Mix together to make dressing (if necessary, add a little water to moisten).
  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill the duck's cavity with dressing, and sew shut with kitchen twine. Rub outside of bird lightly with olive oil, and place in a shallow roasting pan or 9x13 inch baking dish.
  • Bake in preheated oven for 60 to 80 minutes, or until internal temperature reaches 180 degrees F (80 degrees C.)

1 large duck weighing 1.5Kg/3lb 5oz

Steps:

  • Heat oven to 120C/fan 100C/gas ½. Pull any excess fat from the duck's cavity and use a roasting fork or skewer to prick the skin of the duck all over - do this lightly as you don't want to pierce the meat. Rub the duck generously inside and out with flaky sea salt, then lay, breast-side down, on a rack over a roasting tray. Roast the duck for 3 hrs, pricking again every now and then should you happen to pass by. While the duck is cooking, score a line gently around the middle of each apple and set aside (this stops them exploding when they cook).
  • After 3 hrs, remove duck from the oven and turn the heat to 180C/fan 160C/gas 4. Sit the duck on a plate and carefully pour away most of the fat from the tin. Return the duck to the rack, right way up, and continue to roast for 30 mins. Put the apples in under the duck or around the side and roast for a final 30 mins. By now you should have the crispiest duck and apples on the verge of collapse. Leave the duck to rest for 10 mins, then carve and serve with the apples.
