1 lb spinach, washed and stems removed
1 lb ground beef
3 garlic cloves, minced
1 medium onion, finely chopped
1/2 teaspoon chili-garlic sauce
1/4 cup beef broth
red pepper flakes, to taste
1/2 lb sliced mushrooms
1/2 cup sour cream
salt and pepper

Steps:

  • Sauté onion until cooked.
  • Minced garlic and spinach.
  • Add beef and cook until brown and minced garlic.
  • Add broth and spinach.
  • Cook until spinach is wilted.
  • Red pepper flakes, and sour cream.
  • Season with salt and pepper.
  • This can be served with rice or noodles and topped with Parmesan Cheese.

This Ground Beef and Potato Casserole (with spinach) is a complete meal in one pot. With sliced potatoes, frozen spinach, ground beef/hamburger and Swiss cheese, you get your entire dinner in one dish!

8 small - medium potatoes (* I use red because I think they look really nice, but you could use white as well)
5 tbsp butter, melted
2 small onions, chopped
2 clove garlic
1 1/2 lbs extra lean ground beef
2 -10 ounce pkgs of frozen spinach (Defrosted, drained with liquid squeezed out)
1 cup cottage cheese
2 cups grated Swiss cheese
2 large eggs
1 tsp salt
1/2 tsp Pepper
chopped chives (shown in photos) or green onions

Steps:

  • Preheat oven to 350 degrees F and Grease and 9" X 11" casserole dish
  • Cook ground beef in skillet with diced onion until browned and cooked through. Drain and set aside.
  • Slice potatoes into 1/4 inch thick rounds.
  • Place sliced potatoes on a plate and cover with saran wrap. Alternatively, you can simply cover it with a microwave safe cover if you don't want to use saran wrap.
  • Cook in the microwave for 8 minutes or until fork through easily. *I do this in 2 batches**BE CAREFUL when you take the saran wrap off ( if you use it) as lots of steam is released and it's HOT!
  • Melt butter in separate bowl in microwave safe bowl.
  • Arrange half of the potatoes in bottom of dish and drizzle with butter.
  • In a separate medium mixing bowl, mix 1/2 cup grated Swiss cheese, spinach, cottage cheese, garlic and egg. Then add ground beef. Mix well.
  • Spread the spinach and ground beef mixture over the first layer of potatoes and butter.
  • Cover with remaining potatoes, drizzle with remaining 2 1/2 tbsp butter.
  • Sprinkle with remaining 1 1/2 cups Swiss cheese.
  • Bake 40-50 minutes or until potatoes are soft. Cool for 5 minutes

1 cup finely chopped onion
1 tablespoon minced fresh garlic
2 (10 oz) boxes frozen chopped spinach, thawed and squeezed dry
4 ounces cream cheese, softened
1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
½ cup sour cream, at room temperature
½ cup milk, at room temperature
½ teaspoon kosher salt
2 cups shredded mozzarella cheese, divided
¾ cup French-fried onions

Steps:

  • Preheat oven to 350 degrees F. Spray a 2-quart baking dish with cooking spray and set aside.
  • In a large skillet, cook beef, onion and garlic over medium heat until no longer pink; drain.
  • Stir in the spinach, cream cheese, condensed soup, sour cream, milk, salt and 1 cup of the mozzarella cheese. Stir over low heat, just until combined.
  • Transfer to the prepared baking dish. Cover with foil. Bake for 20 minutes. Remove the foil; sprinkle with the remaining 1 cup of mozzarella cheese and the French-fried onions. Bake for 10 more minutes, or until the cheese is melted and the casserole is hot and bubbly.

2 -3 cups Baby Spinach, coarsely chopped
1 lb ground beef
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons rice
1 small tomatoes, chopped
1/2-1 teaspoon red pepper paste
3 tablespoons crushed canned tomatoes
salt
pepper
garlic, yogurt sauce
1/2 cup yogurt (I prefer Greek)
1 clove garlic minced. mashed with salt

Steps:

  • Saute the onion with olive oil and butter for about 2-3 minutes on medium heat in the medium sized pot.
  • Then add the ground beef, salt and pepper, then stir. Cook together until the colour of the ground beef turns to light brown.
  • Add the rice, tomato, red pepper paste and crushed tomato, stir again.
  • Place the spinach all over and close the lid.
  • Cook on medium heat until the rice is tender without adding water.
  • Place the dish in a service plate and put a couple of spoons of Garlic Yogurt Sauce over the top.

1 medium onion, chopped
2 jars (24 ounces each) spaghetti sauce
4 garlic cloves, minced

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 cups ricotta cheese
2 cups shredded part-skim mozzarella cheese, divided
9 no-cook lasagna noodles
Minced fresh basil, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble beef drain. Stir in the spaghetti sauce, garlic, basil and oregano. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. In a large bowl, mix together the spinach, ricotta and 1 cup mozzarella cheese., Spread 1-1/2 cups meat sauce into a greased 13x9-in. baking dish. Top with 3 noodles. Spread 1-1/2 cups sauce to edges of noodles. Top with half of the spinach mixture. Repeat layers. Top with the remaining noodles, sauce and 1 cup mozzarella cheese., Cover and bake for 30 minutes. 1 (25 ounce) jar emeril's kicked up pasta sauce (you can use any brand of sauce)

  • Brown ground meat in skillet and drain.
  • Combine spinach, ground meat, ricotta cheese, egg, parmesan cheese and garlic powder.

6 lasagna noodles, cooked (or oven-ready)
1 lb ground beef
1 (19 ounce) pasta sauce
1 teaspoon oregano
1 (10 ounce) package frozen chopped spinach, thawed, drained
1 (15 ounce) carton part-skim ricotta cheese
1/4 cup fresh parmesan cheese, grated
2 cups part-skim mozzarella cheese, grated

Steps:

  • Brown ground beef in pan over medium-high heat. Add tomato sauce (reserving a tablespoon) and oregano. Simmer until heated through. Remove from heat.
  • In a bowl, mix spinach, ricotta cheese and 1/8 cup Parmesan cheese together. Set aside.
  • Fresh lasagna noodles are preferred, but you can use oven-ready noodles too. In a 9x13 pan, spray lightly with vegetable oil. Add the remaining tomato sauce (mixed with a little water) to the 9x13 pan.
  • Start the first layer of lasagna noodles, topped by a sprinkling of mozzarella cheese. Follow with the meat mixture, then lasagna noodles. Another sprinkling of mozzarella cheese, topped by the spinach mixture and lasagna noodles. Finish the top layer with the remaining cheeses.
  • Bake covered at 375 F for 45 minutes, then uncover and broil until golden on top (about 10 to 15 minutes).
  • Let stand for 5 minutes before cutting and serving. Enjoy!

1 tablespoon extra-virgin olive oil
1 pound sweet Italian sausage, casings removed
1 medium onion, chopped
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 garlic cloves, minced
1/2 teaspoon red-pepper flakes, plus more to taste
2 tablespoons tomato paste
Two 28-ounce cans whole tomatoes
2 teaspoons dried oregano
For the filling:
Two 15-ounce containers part-skim ricotta cheese
1 1/2 cups packed basil leaves
1/2 cup grated Parmesan (about 2 ounces)
2 large egg yolks
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
For the assembly:
2 10-ounce packages frozen chopped spinach, thawed, or 1 1/2 pounds fresh spinach, steamed
Pinch kosher salt
Vegetable-oil cooking spray
9 no-boil lasagna noodles (such as Barilla)
1 pound fresh mozzarella, grated (about 4 cups)
Special equipment:
9 x 13 x 2-inch baking dish, preferably glass

Steps:

  • Preparation:
  • Position the rack in the upper third of the oven and preheat to 375°F.
  • Make the sauce:
  • In a large pot over medium-high heat, heat the oil. Add the sausage, onion and 3/4 teaspoon salt and 1/4 teaspoon pepper; cook, breaking up sausage with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Reduce heat to medium and add garlic, red-pepper flakes, and tomato paste; cook, stirring often, until fragrant, 1 to 2 minutes more. Add tomatoes (along with their juice) and oregano; bring to a simmer, and cook, breaking up the tomatoes with a wooden spoon until in small pieces, about 5 minutes. Taste and adjust seasoning, adding more red-pepper flakes if desired.
  • Make the filling:
  • In the bowl of a food processor, combine all of the filling ingredients and process until mostly smooth.
  • Assemble the lasagna:
  • Squeeze the spinach in a paper towel or clean dishcloth until very dry. Transfer to a bowl and season with a pinch of salt.
  • Coat baking dish with cooking spray and spread the bottom with 2 cups sauce. Top with a layer of three noodles, then a third of the ricotta mixture (about 1 1/3 cups), and a third of the spinach (about 2/3 cup). Sprinkle with 1 cup grated mozzarella.
  • Repeat twice more, skipping the mozzarella on the third layer. Top the lasagna with the remaining sauce. Sprinkle the remaining 2 cups mozzarella in clusters so some of the sauce peeks through.
  • Place the baking pan on a rimmed baking sheet. Lightly spray a piece of foil with cooking spray, cover the lasagna, and bake for 45 minutes. Remove the foil and continue baking until lightly browned and bubbly, about 20 minutes more. Let cool at least 10 minutes before serving.
  • DO AHEAD: The sauce can be prepared up to 2 days in advance and refrigerated. The filling can be prepared up to 1 day in advance and refrigerated.
