From Epicurious.com, this muffin is described as the "Rolls Royce of Bran Muffins". They aren't kidding either. I would never have believed that you could have a light and fluffy bran muffin. This is the BEST recipe I've ever tried. No need to look any further.

1/2 cup margarine, softened
1/4 cup light brown sugar
1 large egg, beaten lightly
1 cup sour cream
1/4 cup molasses
1/2 cup raisins
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup natural bran (I used Quaker brand)

Steps:

  • Cream together butter and brown sugar until the mixture is light and fluffy.
  • Beat together egg, sour cream, and molasses. Stir in the raisins.
  • In a bowl whisk together the flour, baking soda, salt, and bran.
  • Add the dry ingredients to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.)
  • Spoon into 12 paper lined muffin tins.
  • Bake at 400°F oven for 15 to 20 minutes.
  • I baked mine 6 at a time in the toaster oven -- took 15 minutes.

1 cup sour cream
1/4 cup butter, melted
1 egg, beaten
1 cup bran flakes (I sometimes use raisin bran)
1 cup flour
1/3 cup sugar
1 teaspoon cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped apple

Steps:

  • preheat oven to 375. grease muffin tin.
  • Combine sour cream, butter and egg. Add bran flakes, let stand till softened.
  • Add combined dry ingredients, mixing till just moistened.
  • Fold in apples.
  • (As with most muffin recipes, you could fold in 1/2 cup chopped nuts here as well).
  • Spoon into greased muffin cups, filling cups 3/4 full.
  • Bake at 375 25 minutes.

2 cups sour cream
1/2 cup light olive oil
6 large eggs
1 1/2 cups packed brown sugar
2 Tbsp. vanilla extract
2 1/2 cups whole-wheat flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 cup golden raisins (optional)
1 cup walnuts (chopped (optional))

Steps:

  • 1. Preheat oven to 350 degrees F. Spray 30 muffin cups with nonstick spray.
  • 2. In a small bowl, mix together the bran flakes cereal and sour cream. Let stand for 10 minutes.
  • 3. In a medium bowl, whisk together the olive oil, eggs, sugar and vanilla.
  • 4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • 5. Stir the sour cream/bran mixture into the egg mixture. Add the flour mixture. Add in the raisins and chopped walnuts. Spoon the batter into the muffin cups.
  • 5. Bake 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Steps:

  • In a large bowl with an electric mixer cream together the butter and the brown sugar until the mixture is light and fluffy, beat in the egg, the sour cream, and the molasses, and stir in the raisins. In a bowl whisk together the flour, the baking soda, the salt, and the bran, add the mixture to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.) Spoon the batter into 12 well-buttered 1/3-cup muffin tins and bake the muffins in the middle of a preheated 400°F. oven for 15 to 20 minutes, or until they are golden brown and springy to the touch. Turn the muffins out onto a rack and let them cool.

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-muffin tin with paper liners and spray with cooking spray.
  • Whisk together the flour, bran flakes, 1/3 cup of the chopped walnuts, baking powder, cinnamon, 1/2 teaspoon salt, baking soda and nutmeg in a large bowl.
