CHICKEN WITH GOAT'S CHEESE & TARRAGON

8 skinless chicken breasts fillets
20g pack fresh tarragon
2 x 150g tubs soft goat's cheese (we used Charvoux)
5 vine-ripened tomatoes
3 tbsp olive oil

Steps:

  • Preheat the oven to fan 180C/conventional 200C/gas 6. Make a slit down the centre of each chicken breast with a sharp knife (taking care not to cut right through) then open up the slit with your fingers to make a pocket. Arrange the chicken in a single layer in a large, lightly oiled ovenproof dish.
  • Reserve 8 sprigs of tarragon, chop the rest of the leaves and beat into the cheese with plenty of ground black pepper. Spoon into the pockets in the chicken. Slice the tomatoes and place 2 slices over each cheese-filled pocket. Put a sprig of tarragon on top and drizzle with oil.
  • Season and bake for 25-30 minutes until the chicken is cooked, but still moist. If serving cold, pour off the juices otherwise they will set to a jelly once cold.
  • Transport in the dish covered with cling film. You can prepare up to step 3 and serve cold, or cook when you get there.

2 skinless, boneless chicken breasts
100g firm goat's cheese , such as Crottin de Chavignol
1 tsp fresh thyme leaves, plus 2-3 sprigs
4 rashers streaky bacon , thinly sliced
2 courgettes , thinly sliced
1-2 tbsp olive oil , plus extra for drizzling
250g vine tomato , thinly sliced

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Split the chicken breasts almost in half from one long side and open them out like a book. Bat them out a little with a rolling pin to flatten them. Season on all sides. Put half the goat's cheese on each piece of chicken and sprinkle with the thyme leaves. Fold the chicken over to enclose the cheese, then wrap each one in two slices of the bacon.
  • Lightly oil a shallow gratin dish, then arrange overlapping rows of courgettes and tomatoes over the base. Drizzle with olive oil and sprinkle with salt, pepper and thyme sprigs. Sit the chicken on top.
  • Bake for 40-45 mins until the bacon is crisp and golden and the courgettes are tender. Serve straight from the dish with new potatoes or good bread.

1/3 cup julienned soft sun-dried tomatoes (not packed in oil), chopped

2 boneless skinless chicken breasts (6 ounces each)
1 tablespoon olive oil, divided
1/2 pound fresh asparagus, trimmed
Aged balsamic vinegar or balsamic glaze, optional

Steps:

  • Preheat oven to 400°. In small bowl, combine the spinach, sun-dried tomatoes, goat cheese, garlic, 1/4 teaspoon pepper and 1/8 teaspoon salt., Cut a pocket horizontally in the thickest part of each chicken breast. Fill with spinach mixture; secure with toothpicks., In an 8-in. cast-iron or ovenproof skillet, heat 1-1/2 teaspoons oil over medium heat. Brown chicken on each side. Place in oven; bake 10 minutes., Toss asparagus with remaining 1-1/2 teaspoons oil, 1/4 teaspoon pepper, and 1/8 teaspoon salt; add to skillet. 4 skin-on boneless chicken breasts
Kosher salt and freshly ground black pepper
1 large egg white
8 ounces goat cheese, crumbled
2 tablespoons finely minced fresh parsley
2 tablespoons chopped fresh tarragon
1 tablespoon finely minced shallots
1 tablespoon Dijon mustard
Zest of 2 lemons
2 tablespoons canola oil
2 tablespoons butter
2 cloves garlic, smashed
2 sprigs fresh thyme

Steps:

  • Preheat the oven to 375 degrees F.
  • Using a paring knife, make an incision in the side of each chicken breast, passing the knife though horizontally to make a slit but not cutting through the other side of the breast. With the paring knife inserted, rotate the knife to carve out a bit more space and create a pocket. Season the outside and inside of the chicken with salt and pepper.
  • Lightly beat the egg white in a bowl to break it up, then add the goat cheese, parsley, tarragon, shallots, mustard and lemon zest and mix until incorporated. Transfer the mixture to a resealable plastic bag (or piping bag). Snip off a corner of the plastic bag and pipe the mixture into each chicken breast until filled.
  • Heat the oil in a large ovenproof saute pan over medium-high heat until hot and glistening. Add the chicken breasts skin-side down and cook until the skin turns a dark golden brown, 8 to 10 minutes. Add the butter, garlic and thyme, then flip and transfer the pan to the oven; cook the chicken until the internal temperature reaches 160 degrees F, about 10 minutes. Allow the chicken to rest for 5 minutes before slicing and serving.

140g soft goat's cheese (we used Pant-Ysgawn Farm Organic)
zest ½ lemon
½ long red chilli (deseeded if you don't like it too hot), finely chopped
1 tbsp finely chopped tarragon
4 skinless chicken breasts
8 slices prosciutto

Steps:

  • Heat oven to 190C/170C fan/gas 5. Beat together the goat's cheese, lemon zest, chilli, tarragon and some seasoning. Cut a slit in the side of each chicken breast, ensuring that you don't pierce through the other side. Using your fingers, make a pocket and stuff the cheese mix inside. Season the chicken breasts, then wrap 2 slices of prosciutto around each, covering the pocket tightly.
  • Put on a baking tray, drizzle with olive oil and cook for 18-20 mins until cooked through but still moist, and the juices run clear.

3 whole (6 split) chicken breasts, bone-in, skin-on
12 ounces Montrachet goat cheese, with garlic and herbs
Fresh basil leaves
Good olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

2 tablespoons butter
1/2 cup diced onion
1/2 cup diced red bell pepper
10 ounces frozen spinach, thawed
1/2 teaspoon salt

1 dash nutmeg
8 boneless skinless chicken breast halves
1/2 cup grated swiss cheese
1/3 cup dry white wine

2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon dried tarragon, crumbled
1 cup chicken broth
1/4 cup grated swiss cheese
2 tablespoons dry white wine

Steps:

  • To make chicken:.
  • Melt butter in a skillet over medium heat. Add onion and red pepper and saute about 5 minutes.
  • Drain spinach and squeeze dry. Finely chop and add to pan.
  • Add salt, pepper, tarragon and nutmeg. Mix well and remove from heat.
  • Preheat oven to 375 degrees.
  • Rinse and dry chicken breast halves. Place a breast half between 2 pieces of waxed paper or saran wrap. Pound chicken breast until 1/4 inch thick. Repeat with remaining breast halves.
  • Lay each breast half out on the cutting board. Divide spinach mixture between all 8 breasts and sprinkle with the cheese.
  • Lift edges over the filling and secure with toothpicks.
  • Place seam side down in a 13 x 9 inch baking dish that has been sprayed with cooking spray.
  • Pour wine over the chicken and sprinkle with paprika.
  • Bake for about 35 minutes or until filling is heated through and chicken is tender.
  • To make sauce:.
  • In a saucepan, melt butter over medium heat.
  • Add flour, salt, pepper and tarragon and stir and cook for about 1 minute.
  • Add broth slowly and cook until bubbly and thickened. Stir constantly. This takes about 3 minutes.
  • Reduce heat to low and stir in wine, cheese and juices that accumulated in the baking pan when you cooked the chicken.
  • Stir and cook until cheese is melted, about 1 minute.
  • Remove toothpicks from chicken breast halves.
  • Place them on a platter and top each one with about 1 Tablespoon of the cheese sauce.
  • Pass the remaining sauce at the table.

1 teaspoon olive oil
1 shallot, finely diced
1 cup balsamic vinegar
2 skinless, boneless chicken breast halves
2 ounces goat cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a skillet over medium heat; cook and stir shallot until translucent, about 5 minutes. Pour balsamic vinegar into skillet and bring to a boil. Reduce heat to low and simmer until balsamic vinegar mixture is reduced by half, about 10 minutes. Stir often.
  • Cut chicken breasts from one side through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book.
  • Spread half the goat cheese onto one half of each chicken breast and drizzle 1/3 of the reduced balsamic vinegar mixture over the goat cheese. Close the chicken breasts over the goat cheese and secure with toothpicks. Arrange chicken into a baking dish. Drizzle with remaining 1/3 of the balsamic reduction.
  • Bake in the preheated oven until the chicken is no longer pink inside, the filling is hot, and the juices run clear, 30 to 35 minutes. An instant-read meat thermometer inserted into the center of a filled breast should read at least 160 degrees F (70 degrees C).

Perk up a roast chicken with a unique stuffing

2 medium leeks , trimmed and washed
1 Spanish onion , trimmed and washed
85g unsalted butter , softened
2-3 sprigs of fresh mint
3-4 bushy sprigs of fresh tarragon
2-3 sprigs of fresh thyme
about 100g/4oz soft fresh goat's cheese (rindless) or ricotta
4 heaped tbsp finely grated Parmesan
50g fresh white breadcrumbs
a large chicken , about 2.5kg/5lb 8oz
1 tbsp olive oil

Steps:

  • Chop the leeks and onion fairly finely: use the pulse button if chopping them in a food processor, so they don't turn to mush. Melt 25g/1oz butter in a large frying pan placed over a lowish heat and fry the vegetables gently for about 10 minutes, stirring frequently, until soft. Set the pan aside to cool.
  • Strip off all the herb leaves and put them in a food processor with the remaining butter, the cheeses, breadcrumbs and the cooled vegetables. Season, then pulse until the mixture is a rough, sticky, dough-like mass.
  • Preheat the oven to 200C/gas 6/fan 180C. Place the chicken with the large cavity facing towards you. Remove and discard any fat remaining inside the opening. Now gently separate the skin over the breast area from the flesh beneath: use the tip of a small knife to get going, then gently ease your fingers in between and work them to the far end on both sides of the breast bone.
  • Without tearing the skin, push in dollops of stuffing, massaging them right down and over the flesh. (Put any leftover stuffing into the small neck cavity.) Pull the skin back into place and seal in the stuffing by stitching 2-3 wooden toothpicks through the edges of the opening, like a needle in a tapestry. You can make the stuffing up to 24 hours ahead, keeping it cling-filmed in the fridge.
  • Put the chicken in a snug-fitting roasting tin, smear the skin with oil and season. Roast the chicken, breast-side up, for 30 minutes. Turn the chicken on its side, basting with any juices, and roast for a further 30 minutes, then roast for an equal period on the other side. Now turn the chicken breast-side up again, and continue to roast for 10-30 minutes, or until the juices run clear when a skewer is poked into the thickest part of the thigh.
  • Leave the chicken to rest in the tin for 15-20 minutes, loosely draped with foil. To serve, first remove the toothpicks, then carve the chicken, spooning some of the soft stuffing onto each serving.
