1 lb ground beef (15% fat)
1 medium onion (finely diced)
1 tsp salt
1/2 tsp ground cumin
1/4 tsp black pepper
2 garlic cloves (minced)
24 oz marinara sauce
1/4 cup water
1 tsp granulated sugar
12 oz spaghetti (to serve)

Steps:

  • Place a pot or dutch oven over medium heat, add 1 lb ground beef and sautee, breaking it up with a spatula until no longer pink (5 minutes).
  • Add chopped onion, 1 tsp salt, 1/2 tsp ground cumin 1/4 tsp pepper and sautee until onions are soft.
  • Add garlic and sautee another 1-2 minutes until fragrant then pour in 1 jar of marinara sauce, 1/4 cup water and 1 tsp sugar. Cover and simmer over low heat 20 minutes.
  • Meanwhile, cook 12 oz of spaghetti in salted water to desired doneness according to package instructions then drain. Serve sauce with cooked pasta.

Olive Oil
Salt and Pepper
1 Diced Onion
1/3 Cup Minced Baby Bella Mushrooms
1/2 Cup Minced Red Bell Pepper
1 Pound Mild Italian Sausage
1/4 Cup Fresh Parsley (chopped (or 2 Tablespoons Dried))
1 Teaspoon Fresh Rosemary (chopped (or 1/2 Teaspoon Dried))
1 Tablespoon Fresh Basil (chopped (or 1 1/2 Teaspoons Dried))
1 Teaspoon Fresh Oregano ((or 1/2 Teaspoon Dried))
1 Can San Marzano Tomatoes (28 oz)
30 ounces Tomato Sauce * ((about 2 cans))
2 Tablespoons Tomato Paste
1 Teaspoon Kosher Salt (plus more to taste)
1 Bay Leaf

Steps:

  • Heat an oven to 400 degrees F and drizzle a little oil on a cookie sheet.
  • Slice the tomatoes in half and toss in the oil on the pan.
  • Add the garlic, in it's skins and toss in the oil.
  • Sprinkle with a little salt and pepper and bake for 20-30 minutes or until the tomatoes are wilted.
  • Press the garlic out of their papers, mince and set everything aside.
  • Heat a dutch oven over medium heat and add a drizzle of oil.
  • Add the onions, bell peppers, mushrooms and garlic and stir with a wooden spoon until the onions begin to turn translucent.
  • Add the Italian sausage and break it up a little.
  • As the meat browns, occasionally go back to the pan every minute or so and continue to break up the meat.
  • Add the herbs and stir again to combine, allowing to cook for 30 seconds.
  • Add the tomatoes, canned tomatoes, tomato sauce, and tomato paste.
  • Stir to combine and sprinkle with kosher salt evenly over the sauce.
  • Add the bay leaf, balsamic vinegar and parmesan rind.
  • Stir to combine and allow to simmer for 3 hours or all day.
  • Before serving, remove the bay leaf.
  • We let the parmesan stay in until we've eaten all of the sauce, even with the leftovers in the fridge.

This is adapted from my mom's spaghetti recipe. It's a family favorite that simmers while you prepare the pasta--great for busy nights. Leftovers make a great lunch. I usually serve this over spaghetti, but sometimes I use linguine, fettucine, or penne. Good with garlicky bread and a salad. You can also make the sauce ahead and freeze it (it freezes quite well); just thaw and heat.

1 lb 95% lean ground beef
1 -2 garlic clove, minced
1 small onion, chopped
2 stalks celery, chopped
1 cup sliced mushrooms (or use 2 small cans sliced mushrooms, drained)
1 (14 1/2 ounce) can diced tomatoes with juice
2 (14 1/2 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 -4 tablespoons mixed Italian herbs
2 dried bay leaves
salt
fresh ground black pepper
1 pinch brown sugar (optional)
2 (12 ounce) packages dry pasta
1/2 cup shredded parmesan cheese

Steps:

  • Brown beef in a saucepot or large, deep skillet over medium heat; drain.
  • Add garlic and saute until just turning white.
  • Add onion, celery, and mushrooms. Saute until tender, about 5-7 minutes.
  • Add tomatoes with juice and tomato sauce. Stir to combine. Add tomato paste and mix together. Stir in herbs and bay leaves. Season to taste with salt and pepper. Add a pinch of brown sugar, if desired.
  • Bring sauce to a simmer; reduce heat and simmer, uncovered, for 15-20 minutes, stirring occasionally. Meanwhile, prepare pasta according to package instructions.
  • Before serving, remove bay leaves and taste; adjust seasoning as desired. Serve over hot pasta, sprinkled with Parmesan cheese.

5 pounds ground beef (I used ground round)
3 tablespoons olive oil
2 large yellow onions, diced
6 cloves garlic, minced
Two 28-ounce cans crushed tomatoes
One 14-ounce can crushed tomatoes
One 6-ounce can tomato paste
1 jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/2 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
8 fresh basil leaves, chopped
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving
Garlic-cheese bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
  • Amen.

12 garlic cloves, peeled
4 (28-ounce) cans whole tomatoes
1/2 teaspoon red pepper flakes
2 dried bay leaves

1/2 teapoon freshly ground pepper
2/3 cup (packed) basil leaves
For the meatballs:
1 cup roughly torn day-old Italian bread
1 cup whole milk
8 ounces ground beef
8 ounces ground pork
8 ounces ground veal
3 large eggs, beaten to blend
4 garlic cloves, finely chopped
1 1/4 cups grated Parmesan, divided
3/4 cup coarsely chopped fresh parsley, divided
1 teaspoon kosher salt, plus more

Steps:

  • Make the tomato sauce:
  • Heat a large, wide pot over medium-low and add oil and garlic. Cook, stirring occasionally, until garlic is golden brown on all sides (if it starts to burn, reduce heat), 8-10 minutes. While garlic cooks, break up tomatoes into smaller pieces with a paring knife or kitchen shears. When garlic is almost ready, add red pepper flakes and cook, stirring occasionally, until toasted and fragrant, about 30 seconds. Add tomatoes, bay leaves, salt, oregano, and pepper and stir, breaking up tomatoes with a wooden spoon, until well combined.
  • Increase heat slightly and gently simmer, stirring occasionally, until sauce has thickened and flavors have concentrated, at least 2 hours and up to 3 hours.
  • Meanwhile, make the meatballs:
  • Place bread in a medium bowl, add milk, and let rest until moistened, about 5 minutes. Squeeze bread with your hands to remove excess milk, discarding milk. Tear bread into smaller, pea-size pieces and return to the medium bowl.
  • Combine beef, pork, veal, eggs, garlic, 1 cup Parmesan, 1/2 cup parsley, 1 tsp. salt, oregano, pepper, fennel, and red pepper flakes in a large bowl. Using your hands, gently mix in bread until ingredients are evenly distributed (do not overmix).
  • Fill a small bowl with cool water. Moisten your hands and roll meat mixture between palms into golf-ball-sized balls, occasionally moistening hands as needed. Place meatballs on a rimmed baking sheet-you should have about 24-and chill until sauce is ready.
  • Finish the sauce and cook the meatballs and pasta:
  • After 2-3 hours of simmering, pluck out bay leaves and add basil. Using an immersion blender (or transfer sauce to a food processor or blender, working in batches, if necessary), purée until slightly chunky but not smooth. Reserve 1 1/2 cups sauce; keep remaining sauce in pot warm over very low heat.
  • Heat a large skillet over medium-high and add oil. Once hot, add meatballs to skillet (without crowding) and work in batches to brown on all sides, turning frequently, about 5 minutes per batch. Return meatballs to baking sheet as you brown them.
  • Once all meatballs are browned, add them to pot with tomato sauce. If your pot is not large enough, divide sauce and meatballs between 2 pots. Increase heat to medium-low, cover, and simmer until meatballs are cooked through, 10-15 minutes.
  • Meanwhile, cook spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid, and return pasta to pot over medium-low heat. Spoon reserved 1 1/2 cups sauce over pasta and toss to coat. Add pasta cooking liquid, 1/4 cup at a time, as needed to loosen sauce and coat pasta.
  • Divide pasta among plates and top with meatballs and remaining sauce. Sprinkle with remaining 1/4 cup Parmesan and 1/4 cup parsley.

  • Sauce can be made, cooled, and refrigerated for up to 5 days or frozen for up to 3 months. Meatballs can be shaped and refrigerated 1 day in advance. Meatballs can be cooked in sauce, cooled, and refrigerated for up to 5 days or frozen for up to 3 months.

6 ounces thick sliced bacon, cut into 1-inch pieces
2 large onions, finely chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 whole cloves
1 whole star anise pod
3 stalks celery, finely chopped
5 cloves garlic, 3 minced and 2 sliced
3 tablespoons olive oil, divided
8 ounces coarsely ground beef chuck
8 ounces coarsely ground pork butt
1 1/4 cups white wine, divided
3/4 cup evaporated milk
3 cups beef broth
1-ounce dried porcini mushrooms, finely chopped
2 (28-ounce) cans diced tomatoes
1 tablespoon dried oregano
2 teaspoons dried basil
2 teaspoons dried marjoram
2 tablespoons tomato paste
1 tablespoon ketchup
1 tablespoon sherry vinegar
1 teaspoon Worcestershire sauce
1/3 cup finely grated Parmesan
1 gallon water
2 tablespoons kosher salt
1/2 pound dry spaghetti

Steps:

  • For the meat sauce:
  • Place an 8-quart Dutch oven over low heat and add the bacon. Cook slowly until the bacon is crispy and has rendered its fat, 25 to 30 minutes. Remove the bacon from the pan for another use. Add the onion, salt, and pepper and stir to combine. Place the clove and star anise into a small spice bag, add to the Dutch oven and stir to combine. Cook, uncovered, over low heat, stirring occasionally, until the onions caramelize, 45 to 60 minutes. Add the celery and the 3 cloves of minced garlic to the pan and continue to cook over low heat until the celery is semi-translucent, approximately 30 minutes. Remove the spice bag from the pot.
  • Meanwhile, place a wide 4-quart saute pan, over high heat. Add 1 tablespoon of the olive oil and once it shimmers, add the beef chuck and the pork butt and cook, stirring frequently, until the meat is well browned, 4 to 5 minutes. Transfer the meat to a colander to drain. Return the pan to high heat, add 1/2 cup of the wine and deglaze the pan, scraping up any browned bits from the bottom of the pot. Transfer these bits and any remaining wine to the Dutch oven along with the meat.
  • Add another 1/2 cup of the wine, evaporated milk, beef broth, and mushrooms to the Dutch oven and stir to combine. Cover and cook over low heat, stirring occasionally, for 3 hours.
  • Once the sauce has been cooking for 1 1/2 hours, place the 4-quart saute pan over medium heat and add 1 tablespoon of olive oil. Once it shimmers, add the 2 cloves of sliced garlic and cook for 30 to 45 seconds or until fragrant. Do not allow the garlic to brown. Add the tomatoes, oregano, basil, and marjoram and cook until most of the liquid has evaporated, approximately 30 minutes. Add the remaining 1/4 cup wine, tomato paste, ketchup, vinegar, and Worcestershire sauce and stir to combine. Decrease the heat to low and simmer for 30 minutes. Increase the heat to medium high; add the remaining 1 tablespoon of olive oil, and cook, stirring constantly, for 2 to 3 minutes.
  • Transfer the tomato mixture to the meat mixture and stir to combine. Simmer the sauce, uncovered, over low heat, stirring occasionally, while preparing the pasta.
  • For the pasta:
  • Bring the water and salt to a boil over high heat. Carefully add the pasta, stirring quickly to separate. Cover and return to a boil, being careful that the water does not boil over. Once boiling again, uncover and continue to cook until slightly less than al dente, 5 to 6 minutes. Drain in a colander.
  • Add the pasta to the meat sauce and cook, over low heat, for another 2 to 3 minutes or until the pasta is al dente. Add the Parmesan cheese and toss to combine. Transfer pasta and sauce to a serving bowl or individual bowls and serve.

2 cups sliced mushrooms
4 Tablespoons Olive Oil
1 Cup Water
2 tsp. minced garlic
1 - 8 oz. can tomato sauce
1 - 16 oz. can petite diced tomatoes
1 - 6 oz. can tomato paste
1/2 - 1 Tablespoon sugar
1 tsp. Oregano
1 tsp. crushed rosemary
1/4 tsp. onion powder
1/8 tsp. red pepper flakes (optional)
1/2 tsp.black pepper
1/2 tsp. salt
2 bay leaves
1 Tablespoon Fresh Basil, chopped; or 1 tsp. dried basil
1 Tablespoon dried parsley; or 1 Tablespoon fresh dried parsley
Fresh Pasta cooked al dente
Parmesan Cheese for garnish

Steps:

  • In a large skillet, over medium heat, add 4 Tablespoons of olive oil and saute garlic for 1-2 minutes.
  • Add 1 pound of ground beef and 2 cups of mushrooms. Cook until beef is brown and mushrooms are soft.
  • Do not drain.
  • Add tomato sauce, petite diced tomatoes, tomato paste, and water. Stir well.
  • Add in sugar, oregano, crushed rosemary, onion powder, red pepper flake, black pepper, salt, bay leaves, basil, and parsley. Mix well.
  • Simmer on low, stirring occasionally, for 4-6 hours, or place every thing in a slow cooker on low for 6 hours, until sauce reduces and becomes thick. Remove bay leaves.
  • Serve on top of your favorite pasta.

  • Brown beef with diced onion and drain.

  • I almost always end up adding more spices while it cooks to get it just right, so the measurements above are a starting point.

Steps:

  • In a large skillet, cook the sausage, beef, onion, celery and garlic in oil over medium heat until meat is no longer pink; drain. In a 4-qt. slow cooker, combine the diced tomatoes, tomato soup, mushrooms, tomato sauce, tomato paste, sugar and seasonings. 1 24oz. jar pasta sauce* ($1.49)

Steps:

  • Use a cheese grater to grate the zucchini and carrots. You'll want about 1.5 cups of each, but the amount is flexible. Dice the onion and mince the garlic.
  • Add the olive oil and ground beef to a large, deep skillet. Cook the ground beef over medium heat until it is fully browned. Add the diced onion and garlic and continue to sauté a few minutes more, or until the onions are soft and translucent.
  • Add the shredded zucchini and carrots to the skillet along with the basil, oregano, salt, freshly cracked pepper, and a pinch of red pepper. Continue to sauté until the vegetables are wilted (about five minutes).
  • Add the pasta sauce to the skillet and stir to combine. Allow the contents of the skillet to come up to a simmer, then turn the heat down to low and simmer the sauce as you prepare the spaghetti. Stir the sauce occasionally as it simmers.
  • Cook the spaghetti according to the package directions, then drain in a colander. Return the drained spaghetti to the pot with the heat turned off. Add one cup of the prepared sauce to the pasta and stir to coat. Divide the pasta into serving bowls and top with additional sauce.

2 (6 ounce) cans tomato paste
5 cups water
1 cup dry red wine
¼ cup sugar ((or start with 2 tablespoons for a less-sweet sauce))
2-3 teaspoons salt
1 tablespoon Italian seasoning
¼ teaspoon cayenne pepper
For serving: cooked spaghetti, Parmesan cheese, chopped fresh parsley or basil

Steps:

  • In a Dutch oven or other heavy-bottomed pot, cook sausage and ground beef over medium heat for 6 minutes, using a wooden spoon to break apart the meat. Add the onion and garlic; cook and stir until the meat is no longer pink, about 4 more minutes. Drain off the fat.
  • Stir in the tomato sauce, tomato paste, water, red wine, sugar, salt, Italian seasoning, and cayenne pepper. Bring to a boil, then reduce the heat to low and simmer, uncovered, for about 2 ½ - 3 hours, stirring occasionally, until the sauce thickens. This recipe for spaghetti sauce is my favorite as it's so easy and tastes so good! I use wine in it instead of water and it gives it a knock-your-socks-off flavor! Good served with french bread and/or specialty breads like Asiago Cheese and Olive bread.

1 c diced onions
2 Tbsp emeril's original seasoning
salt and pepper to taste
1 pkg lawry's spaghetti sauce mix (if no lawry's use whatever your supermarket has)
1 c water or cabernet sauvignon wine
1 29 ounce can tomato sauce
2 14.5 ounce cans of diced tomatoes with basil, garlic, and oregano

Steps:

  • 1. In a large skilled place the ground beef and onions. Top with 2 tablespoons of Emeril's Original Seasong and salt and pepper to taste. Turn the stove to medium heat and brown the ground beef and onions. Once brown, add the package of Lawry's Spaghetti Sauce mix, the water or wine, can of tomato sauce, and the cans of diced tomatoes. Heat through, stirring constantly. Serve over spaghetti.

  • Penne with Pesto, Potatoes, and Green Beans. Potatoes and pasta may seem like an odd pairing, but this is a traditional (and delicious) Italian dish. For years this has been my ritualistic pre-race lunch or dinner (lunch is your better bet for the day-before carbo-loading meal).
  • Pasta with Potatoes and Red Sauce. More potatoes and pasta in the same bowl, so save this Mark Bittman recipe for a pre-long-run or pre-race meal the day before.
  • Rigatoni Pugliese. This hearty recipe is from chef Andrew Carmellini’s great book Urban Italian (unfortunately, the book is not so vegan-adaptable). It’s a pasta dish I feel especially good about eating and serving to my kids, since it includes both chickpeas and broccoli rabe and thus isn’t a total carbo-bomb.

  • Add the tomatoes, broth, bay leaves, and kosher salt. Bring to a simmer then reduce the heat to the lowest setting so it cooks with barely a bubble breaking the surface occasionally. Cook for 2 1/2 to 3 hours until the meat is tender and the sauce has reduced and thickened to become rich and dark in color. Toward the end of cooking, a layer of oil will likely rise to the top. Spoon off the oil or fold back into the sauce as desired. The longer you cook the sauce the better it will become. If the sauce seems to dry out, add 1/4 cup hot water at a time as needed.
