SHRIMP BALLS WITH WATER CHESTNUTS AND SPICY SOY DIPPING SAUCE

Yield about 30 to 40 shrimp balls

Steps:
- For the shrimp balls: Preheat the oven to 375 degrees F.
- Combine all the shrimp ball ingredients in a large bowl, except the panko breadcrumbs. Stir to thoroughly combine. Working in 3 batches, pulse the mix in a food processor until it becomes a coarse paste. Transfer each batch to a bowl. Do not overcrowd the processor bowl. When all the shrimp has been pulsed and transferred to a bowl, stir in the panko breadcrumbs until thoroughly combined.
- Working with wet hands, roll the mixture into 1-inch balls. Place the shrimp balls on a sheet tray and bake in the oven for 10 minutes.
- For the dipping sauce: Combine all the ingredients in a bowl and whisk together to combine.
- To serve: Remove the shrimp balls from the oven. Serve warm on toothpicks or skewers with the dipping sauce on the side.

- Blend shrimp and cream cheese, and Old bay until Smooth. Form into ball, Pour Cocktail Sauce over top, and Serve with Crackers or Tortilla Chips.
DREMA'S "SASSY SHRIMP" BALL
Another super appetizer using one of our fave's SHRIMP! Actually great made a couple days before you require! You can usually get two small balls or one large one - whichever you prefer. I have also made a larger batch of this recipe and rolled into separate mini-balls! Use your imagination - anything goes!

Steps:
- In collander rinse frozen shrimp with cold water until thawed. Allow to drain well while preparing the reaminder of ingredients.
- In large mixing bowl combine remaining ingredients and mix well. Add shrimp into mixture and mix well. Shape into ball(s) and roll in parsley flakes.
- Wrap tightly in plastic wrap and refrigerate until ready to serve. Tip: You may adjust the horseradish to your liking. This recipe contains mild amounts - so for my spicy family I add about 2 tab of horseradish! Enjoy with your favorite crackers!
SHRIMP CREAM CHEESE BALL
Steps:
- Add cream cheese, cocktail shrimp, chopped green onion & Worcestershire sauce in a large mixing bowl. Use mixer or food processor to blend.
- Make the cream cheese mixture into a ball, cover and, put in refrigerator for an hour.
- When ready to serve, add cocktail sauce over the cheese ball and serve with crackers.

SASSY SEASONED SHRIMP
I came up with this recipe for the Mixing Pot Challenge of the Zaar World Tour 6. I tried to represent my team "A Seasoned Sailor and his Sassy Sirens" in an Asian marinade that is great for shrimp. Its zesty and sweet, and has a bit of kick, just like our team. I used the marinade for grilled shrimp, I also tried it sauteed and liked the grilling method best. I recommend saving out about 1/4 cup of the marinade as a dipping sauce for the grilled shimp. We served it with fried rice as a side dish, but this would also make a wonderful appetizer! If you like it spicy, use 4 tablespoons of the chili garlic sauce. I used 3 and it was a little spicy but I could have gone hotter. You can also add some crushed red pepper to kick it up. Prep time includes marinating time.

- Mix first eight ingredients in a bowl (or simply put all in a large ziploc and squish to mix). You can reserve 1/4 cup of the marinade as a dipping sauce.
- Put the marinade in a large ziploc bag and add shrimp.
- Marinate in the refrigerator at least 2 hours.
- Take shrimp out of bag and thread onto skewers.
- Grill over medium high heat for about 4 minutes each side, or until shrimp are done.
- Serve with reserved marinade as a dipping sauce.

- Put the shrimp (prawns) into a colander, add the coarse salt, and use your hands to mix together. Rinse under cold running water, then drain. Put the shrimp on a clean dish towel, roll up to cover, and refrigerate for 1 hour.
- Remove the shrimp from the refrigerator and place on a cutting board. Using the back of a meat cleaver or a heavy knife, flatten the shrimp. Chop the shrimp repeatedly with the blunt edge of the knife until a paste is formed. (Alternatively, use a food processor.)
- Combine the paste and egg white in a large bowl. Stir with chopsticks in one direction until the paste is sticky and gluey in consistency. Add the fermented shrimp paste, salt, sugar, white pepper, and cornstarch (cornflour) and mix thoroughly. Using your hands, take handfuls of the paste and slap it against the bowl repeatedly until the texture becomes elastic and gluey. Add the pork fatback and water chestnuts.
- Wet one hand with water, pick up a handful of shrimp, squeeze it through the opening between the thumb and forefinger to form a ping-pong-size ball. Using the other hand, dip a spoon in water and scoop the shrimp ball onto a plate. Repeat with the remaining shrimp mixture. Refrigerate the shrimp balls for at least 1 hour.
