- Divide the pizza dough into 6 even pieces.
- Roll out each piece into a rectangular shape. Spread on the ranch dressing, being sure to leave about an inch on all sides.
- Top off with chicken and bacon.
- Follow by a handful of Mozzarella cheese. Roll it up and place it to rest on an oiled baking sheet.
- Apply a tiny bit of ranch on the outside. Bake it at 415°F for about 17 minutes, remove from the oven and sprinkle on the parmesan cheese. Bake for another 3-5 minutes or until they become golden brown.
- Serve hot while the cheese is melted.

Inspired by Costco's famous chicken bake, we came up with a hand-held version that's easy to make at home. The cheesy bacon-filled pockets taste great hot from the oven, but can also be made in advance and reheated wrapped in foil in a 400 degrees F-oven for 8 to 10 minutes.

- Preheat the oven to 375 degrees F and line a baking sheet with parchment. Combine the mozzarella, provolone and Parmesan in a large bowl and toss to combine. Transfer 1/2 cup of the cheese mixture to a small bowl and reserve.
- Add the chicken, bacon and chives to the large bowl with the cheese. Drizzle with the Caesar dressing and season with several grinds of black pepper. Toss until everything is combined and well coated.
- Divide the pizza dough into 4 equal pieces and rub lightly with olive oil. Roll one piece into a 7-by-9-inch rectangle. With one of the long sides closest to you, arrange a quarter of the filling in a log across the center of the rectangle, leaving an inch of space at each side edge. Fold in the sides, then fold the bottom piece of dough over the filling and roll up to enclose it, trimming away any excess dough. Pinch the seams together to seal well. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining dough and filling, leaving about 2 inches between each on the baking sheet.
- Brush the rolls all over with the melted butter and sprinkle with the reserved cheese mixture. Bake until the rolls are golden and the cheese topping is crusty and browned, 25 to 30 minutes. Let cool 5 minutes before serving.

- Pre-heat oven 450°F. Lightly grease a pizza pan. Cut the pizza dough into 4 equal pieces. Roll each piece into an 11x8-inch rectangle.
- Combine all the filling ingredients, RESERVING 1/2 cup of mozzarella, 1/3 cup of parmesan cheese and 3 Tbsp of Caesars dressing for the topping. Place 1 cup of filling across the center of each piece of dough.
- Fold in the sides and roll jelly-roll style pinching seams.

- Preheat the oven to 400˚F (200˚C). LIne a baking sheet with parchment paper.
- Use a knife or bench scraper to divide the dough into 4 equal pieces (about 4 ounces each). Lightly dust a clean surface with flour, then use a rolling pin to roll one portion of dough out to a roughly 7 x 10-inch rectangle (it doesn't need to be perfect) with a shorter end closest to you.
- Use a spoon to spread about 2 tablespoons of ranch dressing over the center of the dough rectangle, leaving a 2-inch border around the edges. Sprinkle ½ cup of mozzarella over the ranch dressing, followed by ¼ cup of bacon, then ½ cup chicken. Sprinkle another tablespoon of mozzarella and chives on top, if desired.
- Gently lift one of the longer sides of the dough up and over the filling, trying to wrap it as far over the filling as possible. Tuck a short end up and over the filling, as if rolling a burrito, and repeat with the other short end. Lift the other long side of dough up and over the filling as tightly as possible without tearing the dough, then lightly pinch and press the edges of the dough together to seal. Set the chicken bake seam-side down on the prepared baking sheet and repeat with the remaining ingredients to make 3 more chicken bakes.
- Use a pastry brush to generously brush the remaining ranch dressing over the tops of the chicken bakes, then sprinkle each with 1-2 tablespoons of mozzarella.
- Bake the chicken bakes until the tops are golden brown and bubbly and the dough has puffed up, 15-18 minutes. Let cool on the baking sheets for 5-10 minutes before serving.

- Pre-marinate the grilled and sliced chicken breast in a small amount of Caesar dressing prior to assembly.
- Cut pizza dough into a 6 oz.
