CARIBBEAN RICE RECIPE BY TASTY
Here's what you need: pork shoulder, chorizo, sour orange, garlic, fresh cilantro, red onion, red pepper, rice, black beans, black pepper, salt, water, coconut milk

Steps:
- In a large pan, cook the pork, chorizo, and orange juice. Remove from the pan, leaving the grease behind.
- Take the remaining grease and mix it with garlic, cilantro, onion, and pepper and have it cook for 5 minutes at medium heat.
- Add the pork and chorizo to the mixture, then add the rice and beans.
- Add the salt and pepper to the mix and the water from the beans. Let it cook for 15 minutes until the rice is cooked, adding water if needed.
- Add the can of coconut milk and stir everything for 5 more minutes.
- Serve and eat up!!!

Steps:
- Bring broth and coconut milk to a boil in a medium-size pan over med-high heat; add in rice.
- Cover, decrease heat, and simmer 20 minutes, or until liquid is absorbed; remove from heat and keep warm.
- Heat oil in a nonstick skillet over med-high heat; add in onion; stir/saute 5 minutes.
- Decrease heat to medium; add in squash; cook 8 minutes or until tender, stirring occasionally.
- Stir in thyme and remaining ingredients; cook 3 minutes or until heated through, stirring occasionally.
- Add rice to squash mixture, stirring to combine; serve.
CARIBBEAN RICE AND PEAS
I had never had Basmati rice until I cooked this dish. My sister-in-law told me it had a fragrant flavor. She was right. I loved it and my family enjoyed it as well. I had to look at a grocery store that carried specialty items for some of the ingredients. You can substitute field peas for pigeon peas if you can't find them.

- Saute onion and garlic in hot oil in a Dutch oven over medium-high heat 1 to 2 minutes or until translucent.
- Add rice and next 3 ingredients; bring to a boil. Cover, reduce heat, and simmer 25 minutes or until liquid is absorbed and rice is tender.
- Stir in peas, parsley, lemon rind, and salt. Garnish if desired.

This is a wonderful Latin Kitchen recipe. It looks like there are a lot of ingredients and directions but it's easy, easy, easy!! You can serve this on a platter with slices of fresh tomato and avocado on top. Enjoy!

Steps:
- In a large saucepan, bring water to a boil. When it comes to a boil, remove from heat and set aside.
- Heat oil in large pot over medium-high heat, until a piece of onion sizzles when added. Add garlic, peppers and onions to oil. Stir veggies; turn heat down to medium when onions start to brown around the edges. Add tomatoes, stirring until heated through.
- Add all seasonings and continue to stir over medium heat until veggies are evenly coated. While cooking the vegetables, rinse the rice 3 times, until the water runs clear. Add rinsed rice to veggies, stirring for approximately 1 minute, coating rice with the seasoned veggie mix.
- Pour in hot water and stir well, making sure to scrape any rice off the bottom and sides of the pot.
- Let rice come to a boil and partly dry out. Watch for when holes or pockets appear on rice, lower heat to lowest setting and then cover with lid. Keep covered for 25 minutes - do NOT remove lid.
- Uncover, stir rice and serve.

- Continue cooking and stirring 1 minute longer.
- Add rice, stir to coat.
- Add broth and bring to a boil.

- Simmer 25 to 30 minutes until rice is tender.
- Remove from heat and stir in mango.
- Sprinkle with chives.
