This homemade chocolate liqueur is so creamy, rich and intense that regular hot chocolate will no longer have a place in your life. This recipe doesn't have heavy cream nor milk, therefore this alcoholic chocolate drink is non-perishable and has a long shelf life.

1 1/2 cup cocoa powder
2 sticks vanilla
2 cups 95% alcohol or vodka
4 cups caster sugar
3 cups fresh water

Steps:

  • Cut the vanilla stick in half
  • Scrape the seeds into a jar
  • Cut the pod into small pieces and add into the jar
  • Pour over the alcohol
  • Let the vanilla brew in the alcohol in a sealed jar for 1 month

Use this whenever Godiva Chocolate Liqueur or Creme de Cacao is called for in a recipe. Personally, I would rinse the vanilla bean & add it to the jar of strained liqueur.

Number Of Ingredients 5

1 1/2 cups granulated sugar
3/4 cup water
5 tablespoons unsweetened cocoa powder
3 cups vodka
1 vanilla bean, split

Steps:

  • Mix sugar, water, and cocoa in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low and simmer, stirring occasionally, just until sugar and cocoa are completely dissolved. Remove from heat and cool to room temperature.
  • Pour into a clean 2-quart glass container. Stir in vodka and vanilla bean. Cover tightly; keep in a cool, dark place for 14 days, shaking container thoroughly every 2 days.
  • Strain liqueur through a moist paper coffee filter into a clean glass container. Straining will take a couple of hours as residue is very thick. Change filter halfway through. If residue remains, strain again immediately.
  • Cover tightly; let liqueur age in cool, dark place at least 1 month.

Delicately sweet with a hint of bitterness, a homemade chocolate liqueur made with cacao nibs is like an expensive dark chocolate bar in your drink instead of like a jigger of Nestle Quik.

2/3 cup cacao nibs
1 1/3 cup vodka
1 1/2 cups sugar
1 cup water
2 teaspoons real vanilla extract

Steps:

  • Combine cacao nibs and vodka in a sealable glass jar. Shake and then let steep for 8 days.
  • After initial steeping period, bring sugar and water to a boil. Let syrup cool, then add to jar along with vanilla extract. Let steep for an additional day.
  • Strain out nibs through a sieve and then filter through coffee filter into bottle or jar you'll use for storage.

1 1-liter bottle 151-proof rum
2 vanilla beans, each split lengthwise
1/4 cup cocoa nibs*

Steps:

  • Pour rum into large bottle; add vanilla bean halves and cocoa nibs. Close bottle; set aside for 3 weeks, shaking bottle every day to mix ingredients. Strain liqueur into another bottle.
  • Bits of shell-roasted cocoa beans; available at many specialty foods stores and from chocosphere.com.

This recipe came from Josephina, a dear friend, when we lived in Naples Italy. If you can't find grain alcohol, you could get away with using vodka. You'll want to use it within a few weeks or shake it up every now and again since it tries to settle. Drizzle some on top of fresh fruit in season for a very easy, sophisticated dessert.

750 ml milk
400 g sugar
100 g cocoa
250 ml grain alcohol

Steps:

  • Heat the milk. Add sugar and cocoa, cook, stirring. Let cool a bit then add the alcohol. Let cool in a pan of water. Strain and pour into bottles.
  • I keep mine refrigerated though you don't have to.
