Steps:

  • To make the brine, mix together the water, 1/2 cup brown sugar, salt, 2 tablespoons ginger, onion, lemon, 5 cloves of garlic, and 1/2 cup teriyaki sauce in a large container. Add the pork tenderloin, cover, and refrigerate for 2 to 8 hours.
  • For the glaze, whisk together 1/2 cup teriyaki sauce, sweet and sour sauce, hoisin sauce, 4 cloves of garlic, 2 tablespoons ginger, brown sugar, and orange juice.
  • Prepare an outdoor grill for high heat.
  • Cook the pork tenderloin on the preheated grill until no longer pink in the center, 7 to 12 minutes per side. Remove the tenderloin from the grill and cover with foil; allow to rest for 10 minutes. To serve, brush with glaze, and cut into thin slices.

3 tablespoons light brown sugar
1 tablespoon peeled and minced fresh ginger
3 teaspoons Asian sesame oil
3 garlic cloves (finely minced)
1/2 teaspoon crushed hot red pepper flakes
2 pork tenderloins (trimmed of excess fat and any thin silver skin)
1 scallion (green onion, white and green parts, thinly sliced for garnish)

Steps:

  • Preheat the oven to 400 degrees. Line a small roasting pan (or use a 9X13-inch baking dish) with foil and lightly oil the foil. This is important because the glaze has a high sugar content and will scorch during roasting.
  • Meanwhile, combine 2 tablespoons soy sauce, 2 tablespoons brown sugar, 1/2 tablespoon ginger, 2 teaspoons sesame oil, 2 minced garlic cloves, and 1/4 teaspoon red pepper in a self-sealing plastic bag and mix to dissolve the sugar. Add the pork tenderloins and close the bag. Toss the meat in the bag to coat it with the marinade. Marinade for at least 30 minutes or up to 3 hours.

Pork tenderloin is my favorite "other white chicken". It's very lean, and can be ready to eat in less than 30 minutes. The marinade is very easy to make, and makes a nice glaze for the tenderloin. You can taste the fresh ginger and garlic, and it's perfectly paired with rice-- and stir-fried Bok Choy (or any vegetable).

6 tablespoons light brown sugar

5 teaspoons Asian sesame oil

1/2 cup rice wine vinegar
1 tablespoon hot chili sauce (recommended: sambal oelek)
1 (1-inch) piece ginger, finely chopped
3 garlic cloves, smashed and finely chopped
1 scallion, both green and white parts, thinly sliced
1 orange, zested
4 pork tenderloins
2 tablespoons coriander seeds, toasted and ground

Steps:

  • In a medium bowl, combine the soy, rice wine vinegar, chili sauce, ginger, garlic, scallions and orange zest. Place the pork in a large container or bowl and pour the marinade over the pork. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.
  • Remove the pork from the container, put the marinade in a small saucepan and bring it to a boil over medium heat. Remove from the heat and reserve it for drizzling over the pork when serving. *WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices.
  • Preheat the grill to medium-high heat.
  • Dust the pork liberally with the ground coriander seed and place on the preheated grill. Brown it on all sides then move it to a cooler part of the grill to cook it to desired doneness, about 10 to 12 minutes.
  • Remove the pork from the grill to a cutting board and let rest for 10 minutes before slicing. Slice the pork on the bias and place on a serving platter. Serve drizzled with the reserved boiled soy marinade.

This recipe is a combination of several recipes I found in a Chinese cookbook for a marinated loin of pork. You can also use pork tenderloin. I sliced a loin of pork roast across, making 4 slabs about 1/2 inch thick. Prep time includes marinating time, which can be anywhere from 1/2 hour to 4 hours.

3 lbs pork loin
1/2 cup soy sauce
1/2 cup apricot jam or 1/2 cup peach jam
1 tablespoon grated ginger, fresh
2 garlic cloves, chopped
1/2-1 teaspoon five-spice powder
2 tablespoons rice wine vinegar
2 tablespoons sherry wine
3 tablespoons hoisin sauce
2 tablespoons brown sugar
1 -2 teaspoon sesame oil
2 tablespoons ketchup (optional)

Steps:

  • Slice pork into 4 slabs and place in a large zip lock bag.
  • Mix the rest of the ingredients and pour half into zip bag with the meat, smoosh around and allow to marinate for 1/2 to 4 hours.
  • Pour the rest of the glaze into a small saucepan and cook until thickened.
  • Sear meat on a grill or in a hot grill pan on the stove about 5 minutes per side.
  • I added the liquid smoke to the glaze, because I cooked mine on the stove top in the grill pan.
  • Brush both sides of meat with glaze and turn, cooking until no pink shows.
  • Continue brushing with glaze until done.
  • In the stovetop grill pan, I poured all the glaze into the pan and turned the meat every couple of minutes to coat completely, and cooked until no pink showed in the meat. This only takes a couple of minutes, since the meat is thin.
  • Serve with fried rice and broccoli.

1 1/4 pounds tenderloin, sliced into 1/4-inch thick strips, about 1-1/2 X 6 inches
1/4 cup avocado oil
1/2 onion, thinly sliced
1 kiwi, peeled and quartered
1 1/2 tablespoon gram flour
1/2 tablespoon poppy seeds
1 tablespoon garlic paste
1 tablespoon ginger paste
1 small serrano green chile pepper
1/4 cup mustard oil
2 tablespoon distilled white vinegar
1/4 cup plain full fat yogurt

Steps:

  • Pound tenderloin strips with a meat mallet until they are very thin; set aside.
  • Heat avocado oil in a frying pan over medium heat. Fry onion in the hot oil until it is a deep brown, about 5 minutes. Strain browned onion into a small bowl using a slotted spoon, and set aside to use later.
  • Peel kiwi, cut into quarters, and set aside in a small bowl for later.
  • Heat a small non-stick skillet over medium heat, and toast gram flour until lightly browned and nutty, 2 to 4 minutes; transfer to a small bowl and set aside. Dry-roast poppy seeds in the same skillet until lightly brown and aromatic, 2 to 4 minutes. Remove to a small bowl; set aside.
  • In the same skillet, dry-roast nutmeg, mace, star anise, and Kashmiri chilies together until fragrant, 2 to 4 minutes. Transfer the whole spices and chilies to a spice grinder, and grind them to a coarse powder.
  • Add browned onions, kiwi, ginger paste, garlic paste, and serrano chile to the bowl of a food processor, and grind to a paste, about 30 seconds. Pour in mustard oil, white vinegar, and yogurt and pulse the food processor until everything is well blended, about 15 seconds.
  • Last of all, add roasted poppy seeds, roasted gram flour, roasted ground whole spices, chili powder, cumin, garam masala, black pepper, and salt to the food processor; process marinade for 1 minute.
  • Spoon marinade into a resealable plastic bag and add tenderized beef strips. Seal bag and squeeze gently to coat beef on all sides with marinade. Refrigerate for at least 6 hours, but ideally overnight.
  • Remove marinated beef from the refrigerator; thread beef strips on sturdy metal skewers, packing them in tightly. Reserve any leftover marinade to baste the kababs with as they cook. This prevents them from drying out.
  • Preheat an outdoor grill to 500 degrees F (260 degrees C) and lightly oil the grate.
  • Grill kababs on the preheated grill, uncovered, for 5 minutes per side.
  • Reduce grill temperature to 350 degrees F (175 degrees C), cover the grill, and cook kababs for 10 minutes. Turn kebabs, brush with marinade, and continue cooking until the internal temperature of the meat reaches 170 degrees F (77 degrees C), about 10 minutes more. If kababs look a bit dry at any point in the cooking process, brush both sides with a little bit of avocado oil.
  • Remove skewers to a serving dish. Discard any uncooked marinade. Enjoy the kababs with naan, sliced red onions, tamarind chutney, and green chutney.

1/3 cup low sodium soy sauce
1 tablespoon sesame oil (can use more)
2 tablespoons Worcestershire sauce
2 1/2 tablespoons brown sugar
1 1/2 tablespoons asian chili paste
1/4-1/2 teaspoon fresh ground black pepper (or to taste)
4 -6 garlic cloves, minced
2 green onions, chopped
crushed red pepper flakes (optional and adjust to suit heat level)
1 pork tenderloin (about 2 pounds)

Steps:

  • In a bowl combine the soy sauce with sesame oil, Worcestershire sauce, brown sugar, chile paste, black pepper and garlic; whisk until well combined, then mix in green onion.
  • Transfer the marinade to a shallow dish; add in the pork then turn to coat in the marinade.
  • Cover and refrigerate for 8-24 hours turning a few times during chilling.
  • Generously grease a baking pan or small roaster pan then line the pan with foil.
  • Transfer the pork and the marinade to the pan.
  • Preheat oven to 400 degrees F.
  • Roast for about 25-30 minutes.
  • Allow to stand for 10 minutes before slicing.

1/2 cup soy sauce
2 oranges, juice of
1 lime, juice of
1/2 cup tamarind paste
1 tablespoon Dijon mustard
1 teaspoon ground ginger
1 garlic clove, crushed
1 tablespoon chopped scallion
1 (12 ounce) pork tenderloin (about 12 ounces)
olive oil, for brushing

Steps:

  • Combine marinade ingredients in measuring cup and stir to combine. Place the pork tenderloin in a plastic, seal able bag. Pour marinade over the tenderloin and seal bag. Marinate overnight in the refrigerator.
  • Preheat an outdoor grill or preheat oven to 350 degrees F.
  • Remove pork tenderloin from marinade and pat dry. Brush olive oil onto grill and over meat for extra flavor. Reserve marinade. Grill tenderloin until cooked through, about 30 minutes to 40 minutes over medium heat. Or roast in oven for 35 to 45 minutes. Allow meat to rest about 10 minutes before cutting into 2-inch serving pieces.
  • While meat is grilling, bring reserved marinade to a boil in a small saucepan, then lower the heat and gently simmer until it is reduced to about 2 tablespoons. Stir occasionally. Drizzle a small amount of marinade over each piece of meat.
