Yield Makes Muffins

Number Of Ingredients 8

300g self raising flour
1 teaspoon baking powder
50g cold unsalted butter cubed
80g caster sugar
150g milk or plain chocolate chips
2 eggs , lightly beaten
225ml milk
1 teaspoon vanilla extract

Steps:

  • preheat the oven to 200 c / 400 f / gas mark . line 12 muffin cases.
  • Mix the flour and baking powder together in a large bowl. Rub in the butter untill the mixture is like breadcrumbs. Stir in the sugar and the chocolate chips.
  • In a separate bowl mix the eggs , milk and vanilla extract together , then pour the mixture all at once into the dry ingredients and mix briefly.
  • Spoon the batter into the muffin cases and bake for 15-20 minutes or until risen , golden and firm to touch. cool in the tin for 10 minutes.
  • after 10 minutes of cooling in the tin , transfer to a cooling rack or serve straight away.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg
¾ cup mini semi-sweet chocolate chips
3 tablespoons white sugar
2 tablespoons brown sugar

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

3/4 cup hot water
3 cups all-purpose flour

4 large eggs, room temperature

Steps:

  • Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Whisk together cocoa and hot water until smooth. In another bowl, whisk together flour, baking soda, baking powder, and salt.
  • Melt butter with sugar in a saucepan over medium-low heat, stirring to combine. Remove from heat, and pour into a mixing bowl. With an electric mixer on medium-low speed, beat until mixture is cooled, 4 to 5 minutes. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Add vanilla, then cocoa mixture, and beat until combined. Reduce speed to low. Add flour mixture in two batches, alternating with the sour cream, and beating until just combined after each.
  • Divide batter evenly among lined cups, filling each three- quarters full. Bake, rotating tins halfway through, until a cake tester inserted in centers comes out clean, about 20 minutes. Transfer tins to wire racks to cool 15 minutes; turn out cupcakes onto racks and let cool completely. Cupcakes can be stored overnight at room temperature, or frozen up to 2 months, in airtight containers.
  • To finish, use a small offset spatula to spread cupcakes with frosting.

6 g baking powder
3 g salt
320 g sugar
340 g buttermilk
100 g whole eggs
120 g vegetable oil
7 g vanilla exract
235 g chocolate chips Guittard 63% chocolate chips

Steps:

  • Combine all of the ingredients in a stand mixer with a paddle attachment and mix until lightly bound.
  • Bring the whole eggs and buttermilk to room temperature before getting started.
  • Combine and sift the all purpose flour, cocoa powder, baking powder and salt.
  • Combine the buttermilk, whole eggs, vegetable oil and vanilla extract.
  • Add the sifted dry ingredients and the sugar to the liquid ingredients in three stages, mixing well with each addition and scraping the bowl thoroughly.
  • Fold in the chocolate chips and mix until just combined.
  • For the best results, rest the muffin batter in the cooler for 8-12hrs.
  • Pipe or scoop the batter into muffin cups/muffin baking mold and top with raw cocoa streusel.
  • Bake at 350F/176C for 20-25min., rotating your baking pan halfway through the baking process.

CHOCOLATE PUMPKIN MUFFINS (ONLY 3 INGREDIENTS!)

1 box Devil's Food cake mix
1 can (15 ounce) unsweetened pumpkin puree
1/3 cup applesauce
Optional: 1/2 cup chocolate chips (I used mini-chocolate chips in the picture)

Steps:

  • *DO NOT follow the instructions or use the ingredients on the back of the cake mix box.
  • Add the cake mix, pumpkin puree, and applesauce to a large bowl. Mix well either by hand or with a hand mixer. When thoroughly blended, fold in chocolate chips (if using). The batter will be pretty dense.
  • Line a cupcake tin with cupcake liners and lightly spray each liner with non-stick cooking spray. Spoon batter into each liner until it is about 3/4 of the way full (I was able to get about 12-14 muffins). The shape of each muffin will be a little irregular because of the density of the batter.
  • Bake according to the directions on the back of the cake mix box (I baked mine at 350 degrees for 18-22 minutes). Stick a toothpick in the middle of muffin to make sure the middles are done.

45g/1½oz cocoa powder
125g/4½oz golden caster sugar
65g/2¼oz soft light brown sugar, any lumps crumbled
1½ tsp baking powder
½ tsp fine salt
2 free-range eggs
150ml/5fl oz buttermilk (or milk plus 1 tbsp lemon juice)
1 tsp vanilla extract
175ml/6fl oz hot water
110g/3¾oz unsalted butter, melted, plus a little extra for greasing
125g/4½oz milk chocolate chips, or try a mixture of milk and white

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Grease a 12-hole muffin tin and line with paper cases.
  • Sift the flour and cocoa into a large mixing bowl. Tip in the sugars, baking powder and salt and mix together. Make a well in the centre.
  • Whisk together the eggs, buttermilk, vanilla extract and hot water. Pour into the well, then quickly use a spatula to blend into the dry ingredients, followed by the melted butter. Fold in most of the chocolate chips. Divide the batter between the paper cases - they should be about three-quarters full. Scatter the rest of the chocolate chips over the top and bake for 18-20 minutes until well risen and cooked.
