CHERRY AND HAZELNUT COFFEE CAKE

Cherry and Hazelnut Coffee Cake image

Pairs with Pikes Place Roast. A quick-to-prepare coffee cake gets a Pacific Northwest spin with the addition of dried cherries and hazelnuts.

Provided by Food Network Kitchen

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 12

1 stick softened unsalted butter, plus extra for the pan
1 cup all-purpose flour, plus extra for the pan
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon fine salt
1/2 cup granulated sugar
1 large egg
1/2 teaspoon pure vanilla extract
1/2 cup well-shaken buttermilk
1/2 cup dried cherries
1/4 cup blanched and peeled hazelnuts, roughly chopped
2 tablespoons turbinado sugar

Steps:

  • 1. Position a rack in the middle of the oven and preheat to 375 degrees F. Butter and flour an 8-inch cake pan. Line the bottom of the pan with a round of parchment.
  • 2. Sift together the flour, baking powder, baking soda and salt into a mixing bowl. In another large bowl, beat the butter and granulated sugar with an electric hand-held mixer at medium-high speed until pale and fluffy, about 2 minutes. Add the egg and vanilla and beat well. At low speed, mix the flour mixture into the eggs in three batches, alternating with the buttermilk, beginning and ending with the flour, until just combined. Scoop the batter into the cake pan. Smooth out the top and scatter the cherries and hazelnuts evenly over the batter. Sprinkle with the turbinado sugar.
  • 3. Bake the cake until golden brown and a tester inserted into the center comes out clean, 30 to 35 minutes. Cool in the pan 10 minutes, and then turn out onto a rack, remove the parchment, invert and cool completely. Serve.

BROWN BUTTER CHERRY COFFEE CAKE

Brown Butter Cherry Coffee Cake image

This colorful, fruity coffee cake is the perfect treat for a family brunch. You may be surprised to see sour cream in the recipe, but it's one of my favorite baking ingredients for keeping cake extra tender and adding a pleasant tang. This recipe also uses brown butter; when you melt butter until golden brown, it becomes nutty and toasty, deepening the flavor of baked goods. Freeze-dried and roasted cherries counter the cake's richness by offering a burst of tartness with every bite.

Provided by Vallery Lomas

Categories     dessert

Time 2h10m

Yield 8 servings

Number Of Ingredients 18

6 tablespoons unsalted butter (85 grams)
1/2 cup raw almonds
1/4 cup freeze-dried cherries (8 grams)
1/2 cup almond flour (50 grams)
1/3 cup all-purpose flour (40 grams)
1/4 cup granulated sugar (50 grams)
1/2 teaspoon kosher salt
1 pound fresh cherries or thawed frozen sweet cherries, pitted
Nonstick baking spray, for the pan
2 large eggs
1/3 cup sour cream or plain full-fat Greek yogurt (160 grams)
1 teaspoon almond extract
1 cup all-purpose flour (120 grams)
1/3 cup granulated sugar (130 grams)
1/4 cup almond flour (25 grams)
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • For the cherry-almond streusel: Place the butter in a small saucepan over medium heat and cook until the melted butter is golden brown and smells nutty, 3 to 4 minutes. Immediately transfer to a heatproof bowl and place in the freezer to cool and solidify, 10 to 15 minutes.
  • Pulse the almonds and freeze-dried cherries in a food processor fitted with the blade attachment until medium ground (not too fine!). Remove 2 tablespoons of the mixture and set aside for garnish.
  • Add the almond flour, all-purpose flour, sugar and salt to the food processor and pulse again to combine. Spoon in the chilled brown butter and pulse until the mixture forms pea-sized crumbles. Transfer to a bowl and refrigerate until ready to use.
  • For the cherry cake: Place the cherries on the parchment-lined baking sheet and roast just until they soften and begin to release juice, 9 to 10 minutes.
  • Remove the cherries from the oven and lower the temperature to 350 degrees F. Allow the cherries to cool to room temperature. Cut the cherries into 1/2-inch pieces and set aside (about 1 1/2 cups chopped).
  • Spray the bottom and sides of an 8-inch springform pan with baking spray.
  • Whisk together the eggs, sour cream and almond extract in a large bowl until pale yellow and combined.
  • Add the all-purpose flour, sugar, almond flour, baking powder, baking soda and salt. Whisk together until a thick batter forms, 1 to 2 minutes. Place half of the batter into the springform pan. Top with half of the cooled cherries. Top with remaining half of the cake batter, then the remaining cherries and then the Almond-Cherry Streusel.
  • Bake until the streusel begins to brown, the center is set and a toothpick inserted in the center comes out clean, 55 minutes to 1 hour.
  • Allow to cool in the pan on a wire rack for 20 minutes, then remove from the pan and cool for another 20 minutes. Sprinkle with the reserved 2 tablespoons ground cherries and almonds. Slice and serve.

Coffee, Hazelnut and Raspberry Torte image

Categories     Cake     Coffee     Berry     Chocolate     Nut     Dessert     Bake     Raspberry     Fall     Birthday     Hazelnut     Party     Bon Appétit

Yield Serves 8 to 10

Number Of Ingredients 16

Filling
1 cup frozen unsweetened raspberries, thawed, drained
1 cup raspberry jam
Frosting
2 1/2 cups chilled whipping cream
10 ounces good-quality white chocolate (such as Lindt or Bakers), chopped
Cake
1 cup hazelnuts, toasted, husked
1 cup sifted all purpose flour
1 1/4 cups sugar
1 teaspoon instant coffee crystals
1/4 teaspoon salt
6 large eggs, separated
1/4 cup water
1 teaspoon vanilla extract
Fresh raspberries (optional)

Steps:

  • For filling:
  • Press raspberries through fine sieve into small bowl. Press jam through same sieve into raspberry puree; discard seeds. Stir to blend well. Cover and chill overnight.
  • For frosting:
  • Combine 3/4 cup cream, white chocolate and coffee crystals in heavy medium saucepan. Stir over low heat just until chocolate melts, coffee dissolves and mixture is smooth. Remove from heat. Let stand until cool and thick, whisking occasionally, about 1 1/2 hours.
  • Using electric mixer, beat 1 3/4 cups cream in large bowl until firm peaks form. Fold large spoonful of whipped cream into chocolate mixture to lighten. Fold chocolate mixture into whipped cream in 4 additions. Cover and refrigerate frosting until very firm, about 6 hours. (Can be prepared 1 day ahead; keep chilled.)
  • For cake:
  • Preheat oven to 350°F. Line three 9-inch diameter cake pans with 1 1/2-inch-high sides with parchment. Butter and flour parchment. Combine nuts, flour, 1/4 cup sugar, coffee crystals and salt in processor. Blend until nuts are finely ground.
  • Using electric mixer, beat yolks and 1/2 cup sugar in large bowl until very thick, about 5 minutes. Beat in water and vanilla. Stir in flour mixture. Using clean dry beaters, beat egg whites in large bowl until soft peaks form. Gradually add 1/2 cup sugar, beating until stiff but not dry. Fold into yolk mixture in 3 additions.
  • Transfer batter to prepared pans. Bake cakes until tester inserted into center comes out clean, about 18 minutes. Cool cakes in pans on racks. Cut around pan sides to loosen cakes. Turn cakes out; peel off parchment.
  • Place 1 cake on platter and second cake on piece of foil. Spread 1/3 cup filling over each; let stand 20 minutes to set up. Spread 1 cup frosting over each. Lift cake off foil; place atop cake on platter. Top with third cake. Spread remaining frosting over sides and top of torte. (Can be prepared 1 day ahead. Cover with cake dome and refrigerate.)
  • Garnish torte with fresh berries, if desired. Cut into wedges and serve.

CHERRY-NUT COFFEE CAKE

Cherry-Nut Coffee Cake image

This is one of my most favorite cakes that my mom used to make when I was growing up. I make this cake often as I love the almond flavor with cinnamon sugar topping and each slice is so pretty with the red cherries and nuts.

Provided by Caryn

Categories     Breads

Time 1h15m

Yield 1 ten inch (or less) ring cake

Number Of Ingredients 13

1 cup butter
1 box confectioners' sugar
2 teaspoons almond extract
4 eggs
1 cup milk
3 cups flour
2 teaspoons baking powder
1 pinch salt
1 cup maraschino cherry, drained and chopped
1/2 cup nuts, chopped
melted butter
cinnamon
sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, combine flour, baking powder, and salt; set aside.
  • In a large bowl, combine butter and confectioner's sugar; cream well.
  • Add eggs, one at a time, beating well after each addition.
  • Stir in almond extract.
  • Blend in flour mixture alternating with milk.
  • Fold in maraschino cherries and nuts.
  • Spoon batter evenly into a well-greased and floured tube pan (10" will work but better if a little smaller).
  • Bake 55 minutes.
  • Cool for 5 minutes.
  • Brush melted butter on the top of the cake and sprinkle with a cinnamon sugar mixture (amount depends on how thick a cinnamon sugar mixture you'd like. I put a lot of butter on top so that I can get a nice layer of cinnamon sugar).
  • Cool 20 minutes and carefully remove from pan so as not to disturb your cinnamon sugar topping.
  • Cool completely.
