- Pulse 8 ounces coarsely chopped country ham or good deli ham in a food processor until finely chopped. Transfer to a large bowl and mix in 4 ounces room-temperature cream cheese, 1/4 cup mayonnaise, 1 tablespoon hot sauce, 2 teaspoons whole grain mustard, and 1/8 teaspoon cayenne pepper (optional). Fold in 1 chopped scallion and 2 tablespoons finely chopped fresh flat-leaf parsley; season with kosher salt and freshly ground black pepper.
SUPER EASY DEVILED HAM RECIPE
Steps:
- Gather the ingredients.
- Put ham or prosciutto, mustard, cornichon, scallions, and Worcestershire sauce into a food processor and pulse to create a thick, chunky paste. Add 1/2 cup of the butter and pulse again. Taste the ham spread and add salt and pepper, to taste.
- Pack 4 (3/4-cup) ramekins or small bowls with the ham mix pressing down firmly, leaving a 1/4-inch space at the top.
- Spoon clarified butter over the ham spread to create a buttery seal. Decorate with a parsley leaf and a sprinkle of black pepper. Pop the ramekins into the refrigerator until the butter is set.

HOMEMADE DEVILED HAM SPREAD
I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

This is a twist on a recipe from a 1961 cookbook and I tailored it to just the deviled eggs, and these are tasty! I will be using Andy's Devilish Ham Spread recipe (on this site) for this here in Thailand, as Andy's is superior to the canned variety.

- Cut eggs in half lengthwise, place whites on a plate, and place the yolks in a bowl.
- To the yolks, add the mayo, onion, mustard, Worcestershire sauce. Mix together. Taste and season with salt and pepper as desired. Mix in ½ of the canned deviled ham. (I am going to use Andy's Devilish Ham Spread, so will add 2 oz / 56 g)
- From the ham still in the can, spoon a little into the bottom of each egg white, using about ½ of the ham that is remaining in the can, (about 1 oz / 28 g if using your own deviled ham)
- Spoon the yolk mixture into the whites using all of the mixture. Make a small depression on the top of the filling in each egg with the tip of a spoon.
- Now use the remaining ham in the can and place a small amount on top of each egg. (1 oz / 28 g is using your own deviled ham.) Sprinkle with paprika for garnish. Cover and place in the fridge for about 1-2 hours to chill before serving.
- Serve and enjoy.
