CHICKEN PARMESAN
My version of chicken parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C).
- Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
- Beat eggs in a shallow bowl and set aside.
- Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
- Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
- Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
- Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
- Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
- Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

DELICIOUS CHICKEN PARMESAN
I got this recipe a few years ago and everyone that I have made it for absolutely loves it! It's great with pasta on the side.

Steps:
- Preheat oven to 400 degrees.
- Rinse chicken breasts and pat dry.
- Combine bread crumbs and 1/2 of the parmesan cheese into small bowl.
- Mix well.
- Dip chicken breasts into egg and coat.
- Then, dip into bread crumb and cheese mixture.
- Heat oil and fry breaded chicken on both sides for about 5 minutes.
- Pour spaghetti sauce into a 13x9 baking dish.
- Top with chicken.
- Cover with foil.
- Bake for 25 minutes.
- Pull out and top with mozzarella and remaining parmesan cheese.
- Bake uncovered for another 7-10 minutes.
- Serve over cooked spaghetti or pasta of your choice.

FARM LADY'S DELICIOUS CHICKEN PARMESAN
Even the kids love it! Thin chicken breasts are dusted in bread crumbs (seasoned with Parmesan cheese, basil, and oregano), then baked for 10-12 minutes. Top with mozzarella, return to oven for 1 minute. Serve with a favorite organic spaghetti sauce.

- Preheat oven to 450 degrees F (230 degrees C). Pour spaghetti sauce into a saucepan over low heat.
- Whisk egg white and water together in a shallow bowl until evenly combined. Spread the flour out onto a plate. In a shallow bowl, mix the bread crumbs, Parmesan cheese, basil, oregano, salt, and black pepper until thoroughly combined.
- Dip the chicken breasts into the flour, and shake off loose flour; dip them into the egg white, then gently press into the seasoned crumbs. Shake off loose crumbs; spray both side of the chicken breasts with the cooking spray. Lay the chicken breasts onto a nonstick baking sheet.
- Bake the chicken breasts in the preheated oven until golden brown, 10 to 12 minutes. Remove from oven, and sprinkle with the mozzarella cheese; return to oven and bake until the cheese is melted and starting to brown, 1 to 2 more minutes. Serve topped with the hot spaghetti sauce.

THE BEST CHICKEN PARMESAN
Everytime I have made this, it has been extremely popular for both family and company. Given out the recipe many times. My family often requests this recipe and they never order chicken parmesean when we go out to an Italian restaurant because they say that mine is the best! Which is very flattering!

Steps:
- Preheat oven to 400 degrees.
- Cut or pound chicken breasts to 1/2" thin.
- Rinse chicken breasts in water.
- Mix bread crumbs, flour and parmesean cheese in large bowl.
- Coat both sides of chicken thouroughly in bread crumbs, flour, and parmesean cheese mixture.
- Heat oil in skillet over medium heat.
- When oil is hot, carefully place chicken breasts in and turn to brown on both sides.
- Spread a thin layer of the marinara sauce on bottom of baking pan.
- Drain browned chicken and place on baking pan in a single layer.
- Pour remaining sauce over chicken.
- Sprinkle italian spices, then some parmesean cheese on top.
- Bake for 20 minutes or until sauce is bubbly and hot.
- Take casserole out of oven and turn temperature to broil - 500 degrees. Remember to leave the oven door open a little bit when broiling.
- Top entire casserole with the shredded mozzarella to entirely cover so there will be lots of gooey cheese.
- Sprinkle top of mozzarella with oregano.
- Put back into oven and broil just until mozzarella is light gold in some areas and bubbling. Watch very carefully as it melts very quickly and you don't want to burn it!
- Take out and enjoy the aroma!
- It will be extremely hot right out of the oven.
- For each serving I put my chicken parmesean on top of cooked egg noodles and cover it with the sauce, then sprinkle on even more parmesean cheese.
- Serve and get ready for the oohs and ahhs!
EASY CHICKEN PARMESAN
The super thing about this dish is that you get full flavour without having to brown the chicken.

- Heat oven to 375 degrees F (190 degrees C).
- Pour sauce into 13x9-inch baking dish sprayed with cooking spray. Stir in 1/4 cup (4 Tbsp.) Parmesan. Add chicken; turn to evenly coat both sides of each breast with sauce. Cover.
- Bake 30 minutes or until chicken is done (165 degrees F). Meanwhile, cook spaghetti as directed on package, omitting salt.

OH SO EASY, DELICIOUS CHICKEN PARMESAN
When I say easy, I mean easy. This meal takes no time to prepare and taste's great. I love to serve it with spaghetti and a tossed salad.

Steps:
- Wash and dry chicken breasts.
- Place chicken between 2 sheets of wax paper and
- Pound on both sides with a metal tenderizer mallet.
- Lightly flour chicken.
- Dip in egg.
- Then coat with Italian bread crumbs.
- Lightly brown breast's in pre-heated pan of olive oil.
- After lightly browned, cut in the thickest part to make sure they are done.
- After done, take out and place on paper towel to remove extra oil.
- Remove paper towels and place in a big enough pan to fit chicken.
- Using a spoon, spoon sauce over chicken to cover, and then add as much mozzarella and parmesan cheese as you want.
- Repeat one more time.
- Bake in a 350 pre-heated over for about 10 minute.
